    How long do you let your product ferment during the 2nd fermentation?

      It really just depends on the strength of the yeast and sugar. Generally speaking, it takes 3-4x longer than the first fermentation phase. I have an entire ebook and course on it here: atraditionallife.thrivecart.com/fruit-vinegar-master-course/

      I'm not sure what you mean? Crystallized honey takes a very long time to whip into creamed honey (20-30 minutes). So I prefer to use liquid honey, because it whips up in just a few minutes. We like to use creamed honey as a spread for toast, waffles, etc.

      You can do it at a lower temp, but I prefer to do mine around the 300F mark, so it doesn't take forever. :)

    I like to decant a lot of the 'tomato water' as they're thawing in the stock pot. Less water to have to evaporate later.

      That's a great tip! There is a lot of water you can pour off if you thaw them first.

      I've never tried with an immersion blender. I imagine it would take a while to puree everything, but let me know how it goes if you try! :)

    Thanks for this video. This is my first time wanting to store my onions long term. I made the mistake of pulling them out if the ground and pulling off the green stems right away. Did I ruin them for storage?

      If you exposed the flesh of the onion bulb, they probably won't keep very long. However if the peel is still intact around the onion bulb, just spread them out to dry in a sinle layer and keep an eye on the areas you removed stems from. If they start showing signs of mold, rot or slime, you'll want to dice and freeze them immediately.

      I've added a lot in the comments as an update. Biggest things would be putting down weed tarp. Even on the north side of our home, the dandelions have found their way through the gravel! :)

    It also helps if you go a little more than finger tight on used lids. I use them over in the pressure canner. I have less failures on pressure canned items.

    When you out a lid on do you seal it with a mason jar vacuum sealer or do you just tightly screw the lid on by hand?

      I just add a lid, tightly or loosely! :) Honey doesn't go bad, so it really doesn't matter either way.

    After 5 minutes of mixing, it remains a bit gritty. Any suggestions? Maybe smaller batches?

      Did you use raw honey? And had it crystallized? It sounds like it needs to be whipped for longer.

    does it grow a mother? Have you had experience in adding the mother from another vinegar?

      Sometimes it grows a mother, sometimes not. And yes, I've added mother cultures to my vinegar, along with some ACV, but I didnt really find that it made a difference. So I dont really do that anymore. :)

      I did it on the low setting for 3-4? hours, but this might vary depending on your dehydrator type.

    Thank you for sharing this idea! I love the open concept of being able to put multiple sizes on the shelf, rather than being confined to 1-2" slots. Nice, clear, closeup shots in the video were very helpful as well. It would have been nice to have seen the actual build, but thank you for showing the end result anyway.     I love making homemade vinegars. I use vinegar for everything from cleaning to fabric softener. I use it in cooking. I use it in anything I can use it in, because it is so cheap and easy to make ❤ We certainly use a different 'recipe' though.

    This is a very helpful video. If you put in the gravel and weed barrier as a base, as you’ve suggested in other comments, do you think it would be stable enough to put patio furniture on it? We have loads of river rock in our yard, so I’m trying to find a creative way to use it. One idea has been to put a patio in our side yard. Just don’t want to do all the work and discover it’s not quite stable enough. 😅

      The round rock doesn't make for a very flat surface, so I actually think slate rock would be better to put down if you're going to put patio furniture on it.

    I want to make this whipped honey but I want to add fruit & maybe even plain yogurt, any tips or tricks??

      We often add honey to yogurt and fruit. But in that case, you don't need to whip your honey beforehand. Just add liquid honey directly to your food and mix it in. Liquid honey will incorporate better than whipped honey, because whipped honey is stiffer.

    Small gardener here. Husband not a tomato lover but does like things made with sauce. So I froze some of last years harvest and have been adding into jarred sauce I purchase. I recently got roasting recipe from a friend and asked about frozen. She said no, did not think they would work. Not sure why. So I just googled and here you are telling me I can use them. Thanks, simple down to the matter and I can use frozen!! Just subscribed to you too!!

      Yes ma'am! So glad you found me. Freezing tomatoes always saves my tomato harvest. I dont have to worry about getting to them immediately, and instead of wasting them, the good old freezer keeps them for me, until I can get to them! :)

    Does heating up the elderberry reduce its immune properties? Just curious if the heat cancles out any health benefits of the elderberry or honey?

      Elderberries need to be cooked before eating on account of cyanide in the seeds. Its immune boosting properties are still present. And yes, you do lose some of the health benefits when you heat raw honey.

      Ok, I said elderberries but meant elderberry *juice*.. not sure if the form of elderberry makes a difference when heating. Sounds like elderberry *juice* simmered in this recipe won't take away its beneficial immune properties, if I'm understanding you correctly. I agree about the honey, too - still better than refined sugar.

    Wait. Your honey is white? I’ve never seen that before. Ours is a deep, dark golden color when it’s raw down here. I guess it depends on what the bees gather?

      No, the honey is a golden red. :) But when you whip it, it turns white!

    I love the video, great idea. I might do this. You could always fill those cracks with Epoxy. Food safe and problem solved, permanently.

      I didn't want to use Epoxy because I didn't want a high gloss finish. It's really bad for shooting photos on the kitchen counter. But the Varathane has worn down enough that I think we will have to just deal with the gloss. :)
