how to make rhubarb syrup (and rhubarb soda!)

- Have extra rhubarb? Make syrup! It's great on ice cream, yogurt, pancakes, and in salad dressings and fruit salads. It also makes a delicious soda.
Recipe:
1 cup sugar
1 cup water
4 cups chopped rhubarb
bring to a simmer in a pot, stirring to dissolve the sugar. simmer (uncovered) for 20 minutes. strain and chill for up to 4 weeks in the fridge.
(*you can boil down the syrup once it's strained and make it thicker, if you want. it will last much longer in the fridge and take up less space this way. you can also can it if you have a lot of rhubarb to process.)
