    Sweet and spicy just go together. Turn your jalapenos and/or hot peppers into something special with this quick and easy recipe. You won't be able to keep them in your pantry. Perfect for topping sandwiches, pizza, any Mexican dish or enjoy them straight from the jar.

    Update:
    In this video I stated you could use the leftover brine for another batch (I always have leftover brine with this recipe). I did NOT know this at the time but it is not considered safe to do so. I stand corrected. Leftover brine may be jarred and canned as I stated or stored in the fridge for marinades, dressings and refrigerator pickles but cannot be reused for canning a new batch of pickles. My apologies for the confusion.
    3 cups vinegar (ACV or white)
    2 tsp salt
    4 cups sugar
    6 cloves garlic, sliced
    2 tsp. turmeric
    ½ tsp cayenne powder
    2 tsp. mustard seeds
    4 pounds jalapenos, sliced into ¼ inch rings
    Ladle hot pepper rings into hot pint or smaller jars, leaving ½-inch headspace. Ladle hot brine over peppers maintaining 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    In 2022 I made my very first batch of cowboy candy. I was not really big on jalapenos so I gave away all but 1 jar in gift baskets for Christmas. Everyone loved it and asked if I had more. I opened the one jar I had left in May for some sheet pan nachos I was making for friends. I tried the cowboy candy and could not get enough of it! It was so good! When my garden started coming in I had a couple of jalapeno plants and was going to make more but could not find the recipe. I do believe this video is the recipe I followed. I have 12 plants that are absolutely loaded with jalapenos so I am going to use this recipe and make as much as I can, thanks for sharing!!!!!!

    Finally!!! A recipe with salt and love that she specifies "pickling salt"! So many had no salt so I blew by those ones. Do not trust recipes without a dash of salt at least.

    Several have asked how these are eaten. My family’s favorite way is to spoon them onto a block of cream cheese and eat with a good cracker. My family always requests this for our Christmas appetizer gathering.

    I used your recipe and it was a huge hit at hunting camp. I did add a pinch of Nigerian pepper seasoning, just for a little extra heat. Thank you from all of the guys down at the hunting camp. My husband said I have to make extra this year

    I have so much trouble finding red hot peppers or waiting for the Jalapeño to turn red, so I make long slices of red bell pepper for the color. It does look so nice, and you're right, everyone loves this and asks for a jar.

    These look beautiful! You should consider adding New Mexico Hatch green chile and throughout the year may be found in supermarkets as an "Anaheim" chile (similar to the light green chile pepper that you added in the video). Hatch green chile can be mild, medium, and hot, so you may add it according to your personal taste.

    Carol, I just have to tell you that I love to curl up on the couch and watch recipes on UA-cam and Pinterest. BUT I actually make almost all of the recipes you post! Right now I’m processing the candied jalapeños with a combination of peppers😊. There is a pint of tasty brine left and I’m deciding what to do with it.
    Thanks so much for the research and time you put in to produce such awesome videos!
    BTW, the steam canner you have, I bought it and it’s WONDERFUL! So much faster than water bath canning!

      Hi, I couldn't have said that better but I'm more new to canning. Also I have always used dried hot pepper flakes in place of cayenne, any thought on that? Have either one of you used pickle brine to "brine your chicken" for frying? I have tried this once for thin little chicken cutlets using breast. Five or six diagonal slices per breast / and then about 6 to 8 hours brine / flour - egg - panko / pan fry with olive oil just to a nice golden color / 180* on cookie sheet in the oven for 1 hour. Now I loved this as a novel idea, but my guy did not "love it". So most are using whole chicken pieces and just any pickle brine. Other than that I LOVE using the leftovers of this kind of brine in deviled eggs! Thanks again Carol!

    I can't wait for my peppers to be ready in my garden, so I can make more cowboy candy. I have my pressure canner running right now, canning navy beans and ham. Taking a little breather before summer garden is ready, because then, I have 0 time for anything but canning lol. Thanks for all of your recipes. I've used a few. You are my favorite channel ❤

    Someone suggested using the left over brine or juice, to marinate thin slices of beef for beef jerky made in dehydrator. I thought that sounded good

    I didn't know what Cowboy candy was but we called it plain ole canned hot pepper. It sure was good. Yes we used sugar and stuff in ours.

    I have to make this again, like the colored peppers, I about killed myself with the batch I made last year, never knew this but when it is dry and hot the peppers get hotter, could not eat them.

    Carol, I have the same steam canner. Did your canner come with an additional flat bottom rack along with the drop down handled rack. I just received the drop down rack with mine.

      No, you flip the rack over and tuck the handles under so your jars sit on the bottom of the wire rack 😊

      Not Carol's input here but.....We love Hatch chilies and they come in varying degrees of heat. The grocery where we bought ours had them labeled hot & mild. They actually were set up and roasting them outside, it smelled delicious from several blocks away.

    I just made this, but miss read the measure for the cayenne powder and mustard seed. Yes, I put in 2 teaspoons of cayenne powder. No one will be complaining cause it’s not hot enough.

    Hi Carol! Another question. : ) I'm about to make this recipe - so, if I have leftover brine, I can can it and add it to a fresh batch next season and can that, or would I just add peppers to it, cook it, and then just place that jar in the fridge? I can't seem to find much info regarding recanning items that have already been canned. Again, thanks SO much. I can't tell you how much I appreciate your commitment to safe canning practices. Love that I can trust your info!

      After I posted this video it was pointed out to me that you cannot reuse brine if you’ve simmered vegetables in it. So either make refrigerator pickles or save it for marinades or salad dressing. I’m sorry… I did leave updated information in the description box

    I grew what I thought were banana peppers this year, they turned out to be cowhorn peppers (essentially long skinny bell peppers). Do you think I can add these along with jalapeno to tame the heat?

    Carol, I steam canned this recipe with the same steam canner that you have. My steam vent temperature never went over 200 degrees after a 10 minute full boil and stayed that temp through the entire process. I am at close to 6800 ft above sea level so I processed for 15-20 minutes longer. Should the jar contents be boiling upon removal from canner? My contents were not boiling. All jars did ping and seal.

      Hmmm… I can’t imagine why unless your gauge isn’t working properly. If the water in the bottom was boiling it had to be at the correct temperature. And I’ve not paid that much attention to the jars when I removed them so idk if they would appear to be boiling I’m sorry

      It is common that contents are still boiling hot when removed from the canner. This is why they need to be allowed to cool slowly.

    How long will these stay crisp? It's Sept 16th 2022. Thinking of doing these for Xmas gifts. I've made dill pickles and had to throw them out after few months they turned VERY mushy.

      Use them as a condiment on burgers or hotdogs, on nachos or other Mexican food, on sloppy joes, on a charcuterie board or sandwiches or straight from the jar

    When you say “steam canner” do you mean a pressure cook canner?

    Carol... If you Are Not PRESSURE CANNING, in other words you ARE WATER BATH CANNING your product, you are SUPPOSE TO STERILIZE YOUR JARS/LIDS/BANDS. When you Pressure Can your stuff the Canner brings your jars & product up to 240 degrees and that steralizes and kills off any bacteria you may have. Water bath canning only brings water up to 212 degrees! Either way, wash your jars/ lids/bands/all equipment to rid of any bacteria, even if your stuff is NEW out of box because roaches/ bugs LOVE Cardboard!

      They must have just changed the rules like they did with the lids. They recommend that you do exactly what i said. So although i may be incorrect now. I wasn't before they changed the rules. If you had canned for as long as i have, you'd know this. Not saying anything other than what i stated use to be the guidelines and i thought they were still valid
