Peach Jalapeno Jam ~ Canning Jam

    Sweet and spicy collide in this beautiful and tasty jam. Use it to glaze meat, add to salad dressing or BBQ sauce, or pour over a brick of cream cheese and serve with crackers for a yummy appetizer.
    3 cups crushed peaches (pitted and peeled)
    (about 2 lbs, or 4 large peaches)
    1/2 cup jalapeno peppers (or other hot pepper), finely chopped (about 1/4 pound, or 4-5 peppers)
    1 cup water
    3/4 cup cider vinegar
    3/4 cup lemon juice
    1 - 1 3/4 oz. package powdered pectin
    4 cups sugar
    Ladle hot jam into a half pint jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
    Over 6,000ft process for 15 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    Just made this jam and it's a delicious sweet peach flavor with a little heat! I put 2 red cayenne peppers in with the jalapeños. It's just right. 😋 I was going to make hot pepper jelly with my jalapeños, but since I made this jam, I may make cowboy candy with the rest of my jalapeños, instead.
    FYI: I followed the instructions on the link you provided, and the process time differs from what you posted. For my altitude of 4000 ft, total time is 10 minutes. The NCHFP site recipe for peach jam is also total 10 minutes for my altitude. I cooked it longer because it did not set on the cold saucer... After lading all the jam, what was left in the pan set really nice. I wonder if altitude impacts this.

      Hmmmm, that’s a good question. I guess I’ve never noticed bc my altitude is under 1,000 so I never have to adjust. The chart I added is standard adjustments for water bath canning and I just include it with all of my WB canning videos. So you’re saying cooking it the longer time made it set better? That’s interesting

    Question - there's peach jalapeño jam and strawberry jalapeño jam. I'm envisioning apple jalapeño jam, pear jalapeño jam, mango jalapeño jam - endless opportunities here. Tell me what the drawbacks are please. 😊

      @@carol-thriftychichousewife6231 I had seen that one. I'm guessing that the "flex" refers to size of the batch you're making so you can adjust the pectin for making a batch and a half as opposed to two? I've got some on order now. Thank you Carol! You rock!!

      It’s usually not recommended to double batches of jam so I never have. I do not have a recipe for Apple Pie Jam but I’m going to put it on my video list for fall 💕
