Do I did this with a bit of a twist. I added crushed pineapple, about a 40 % jalapeños to 60% pineapple and I call it cowgirl pineapple. Cook down until thick and over cream cheese 😆 so good with veggie flavored crackers. Loosing weight is a huge bonus! Guess i killed it with the pineapple.

I recently saw a video on cowboy candy where she used green jalapeños and red jalapeños(they turn red if left on vine longer) the finished product was a vibrant red/green color - perfect for Christmas gifts!
I love to throw in a mix of heats and colors.
I always give canned goodies to my friends. After they get done with it, they send the jar back filled with chocolate goodies for me. They know my weskness.

One thing I learned about jalapeños is that the more of those little brown marks on the outer skin, the more heat! So if you have ones with smooth shiny skin vs the ones that look to have little "stretch marks" the smooth ones will be less hot than the others! Pretty cool if you're looking for a certain heat level. We dehydrate LOTS of jalapeños in our house... Throw crumbled dehydrated ones into eggs or omelets, grind them into powder & throw that into just about anything!

This is so true. I made a couple of batches after a 6 week stretch without rain. Those jalapenos were stressed and had tons of those marks. I pull out that candied fire and lay wait for the reaction as attitudes change when anyone comments jalapeños aren't hot.😂
I take the seeds out and pulse them in the food processor so it’s similar to a relish. Less heat to handle on cheese and crackers

I love spicy food but oh my I met my match the other day! My husband bought a new pepper for the garden, I think he called it extra hot cayenne. We got the first of them the other day. I broke one open and went to take a bite. It touched my lip and I yelled oh! Wtf?! The actual words lol. He was confused and I tried to get him to try it after I told him. We agreed that they will go on the dehydrator to powder. I was really surprised because I've eaten habeneros and other really hot peppers. I only need a few more jalapeños to try this out. I have been making Candied Jalapeños for years. My recipe is slightly different from yours. I'll be using yours this time. I have about 6 pounds of frozen Jalapeños and very thankful you shared this video using frozen peppers. I was afraid they wouldn't can up well.
Loving my Forjars lids, especially with so many of my ball lids having failures 😕. We buy roasted local green chile by the case every year and I’m going to try the cowboy candy brine on some of it instead of jalapeños this year.

I put small cut up onions and bell peppers in the extra juice...I use both in scrambled eggs!
I make mine as a dice. They spread almost like a jelly!

I slice jalapeños lengthwise and pickle them. They stay on a sandwich MUCH better that way, and we love them on paninis. I probably would like them candied, but Hubs won't eat them because he's T2 diabetic and doesn't eat sugar, so we just don't have anything but sugar-free sweets, and then only rarely.
My family thinks this is the absolute best!

I am stocked up on ForJars lids!! I recently purchased a steam canner. Have not used it yet but planning to soon. Thank you answering a question I had during your video. I wasn’t sure if I could process jams for 45 minutes. So glad you mentioned nothing past 40 minutes when using a steam canner. My elevation is 4,852 feet. What would my processing time be? Again, thank you for sharing. Looking forward to canning this amazing recipe.
The time would be the same, but watch your guage and the canner instructions for the right level
I tried this recipe and added some pineapple to the bottom of the jars too. Unfortunately, my jalapeno peppers froze in the produce drawer after a flex drawer setting got changed, but I adjusted the setting, and then they thawed before I got them prepped, so they were a little weird, and some were too waterlogged to consider using. Some were still partially frozen. Anyway, it wasn't the best start. I got them prepped and steam canned them though. All of my jars sealed. I left them set for a few weeks, and during that time the liquid dropped below some of the peppers at the top of the jar so I got concerned about whether they were safe to eat. I sampled some without incident, but I never felt completely comfortable with it, so then I'd check the pH every time I had some. It was fine, right around 4.5. The flavor was great! I liked to just snack on it. I'll be happy when I'm a more confident canner, and I can expedite the process a bit. I agonize about every little thing. I almost tossed my peppers because they weren't completely frozen anymore, but since I knew when they thawed out, and it was less than 24 hours I went ahead and used them.

I am a spice wuss extraordinaire. I've bought seed for a heatless jalapeño I want to grow next yr. In your opinion, having tasted this, wld a heatless pepper still give a good result?
I also LOVE my steam canner. I bought the other version, the big stock pot with the glass lid that had the temp gauge. It. Is. Amazing. I need a more solid rack to go in it for actual steam canning so the jars don't tilt but I adore adore adore it even with that flaw. The clear lid and multi-use does it for me. I like to see it processing. 😊

Does anyone know how long it will be shelf stable for once opened and placed in a fridge ?Only have pint jars atm. Also one of my jars is only three quarters full but topped up with the liquid ,does that still store for long term ? So many questions .. 😂 Looks and smells amazing ,thank you for all that you do !

YOU REBEL YOU! This is will be another rebel canning I will try. I did beans last wk. I usually follow the guidelines but I trust you whole hearted. Pretty new to canning. Do I process 10 minutes in a water bath canner??? I dont own a steamer.

I've cut up a bunch of jalapenos before for cowboy candy without wearing gloves and then had to soak my hands in milk to get rid of the pain. I'm never doing that again.
Two of my friends & I made this with green, red yellow & orange jalapeños out of our garden, it sure is pretty as well as YUMMY.

I've wanted one of those steam canners for so long. The weight of the water bath canner is becoming an issue for my hands and my glass top stove. I couldn't find the one you use with a flat bottom but I did find another one that will work. Time to retire the big blue pot of boiling water I think. Before a catastrophy happens.

Wow! I learned something new today! I had no idea jalapeños could be frozen! To think of all those jalapeños I threw away 🙁. I never knew what a jalapeño was until I moved to Texas in the early 80’s. I was at a Mexican restaurant, saw it on the menu and asked what a “gel-ap-pino “ was 🤷♀️. When I left upstate NY in 1981, I never heard of Mexican food. I have a good friend from Louisiana that loves very spicy foods, but she is diabetic. Can you substitute swerve or monk fruit or some other type of sugar substitute for the sugar? And one last thing….I’m thinking the leftover liquid could be used to make cornbread? 🤔

That recipe looks very similar to the Easy Jalapeno Jelly recipe on p126 of the Ball Complete Book of Home Preserving. They use pectin but you do not have to set the jelly

Cowboy Candy
Makes about 4 (16 oz) pint jars
These pickled jalapenos, also known as candied jalapenos, deliver a real punch of sweet heat! Outstanding on sandwiches, nachos, in tacos and topping chili. These will become a pantry staple!
Ingredients
3 cups vinegar (ACV or white)
2 tsp salt
4 cups sugar
6 cloves garlic, sliced
2 tsp. turmeric
½ tsp cayenne powder
2 tsp. mustard seeds
4 pounds jalapenos, sliced into ¼ inch rings
Directions
Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands.
Combine all ingredients except jalapenos in a large saucepan and bring to a boil over high heat, stirring to dissolve sugar.
Add jalapenos slices, lower heat to medium and simmer for 15 minutes, until jalapenos are dark green and have begun to absorb some of the brine.
Ladle hot jalapenos into a hot jar leaving a ½ inch headspace. Pour hot brine over jalapenos, maintaining a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
Process jars 15 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.
QUESTION: Do steam canners need to be recalibrated or checked like the pressure canners do? Thank you!
In the instruction book for my steam canner, it had me do a test right off the bat and mark on the gauge how high my temperature could get. It says to use that mark instead of solely the green mark on the dial to start timing. it says to retest it at the start of each canning season, and also if I move the canner from one elevation to another.

I'm making my first batch ever in this steamer (using it for the first time as well) and I can't get it up to high enough heat to get to my dark green zone appropriate for my elevation. I've got it on our glass top stove on the hottest burner. I saw someone on the amazon review say they had to weigh theirs down to get into the proper zone. Help 😒
