    Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.

    the jalapeno juice/marinade leftover - I have an idea - I would make jalapeno gummies especially good around cold and flu season. the capsicum in the pepper is good for the throat. The sugar makes them edible but still spicy. On cold days and nights that capsicum would warm a body up.

    I used the left over brine to can finely sliced onions! I did them exactly the same way as the Jalapenos and they're soooo good! Great on burgers and sandwiches!

    I’ve seen recipes where the brine gets boiled down until it thickens a bit, before adding it to the jars full of peppers. That might decrease the amount of brine left over. Gives a thicker consistency to the finished product.

    Cowboy candy on burgers, with ketchup and mustard is fabulous. Also, a splash of the syrup in a margarita takes it to a different level..

    Hello there, I made your cowboy candy and I loved it. One thing I did with the leftover syrup was that I reduced it and made a very sticky, thick syrup. I now have used that in other recipes, I tossed brussel sprouts in it and so far that’s my favorite. I’m a huge fan of your page, I myself am from Monroe and don’t live there anymore. It’s nice to watch the two of you, it reminds me of home. ❤️

      I cook it down to a thicker syrup as well. I love to pour a jar of the peppers and syrup over a block of cream cheese and watch it just pour so nicely since it's thick!!

      So, you guys don’t discard the remaining brine? I canned mine and then read somewhere that it shouldn’t be saved that way 😢

    I love cowboy candy! I can up the extra syrup to use for cooking, etc. It’s such good stuff! I agree with you about gas stoves and canning instead of freezing; we have a gas stove for that same reason. Last summer after a bad thunderstorm knocked out our power, I was still able to can spaghetti sauce from my tomatoes.

    Used 14 lbs of mixed hot and sweet peppers that were gifted to me to make cowboy candy today. Ended up with lots of syrup left over. I canned that up to so when my garden peppers are harvested I can make some more!

    Oh I will definitely be doing this to add to my other jalapeno canning projects I do every year! I didn't weigh one of the batches of jalapenos I bought but it was a 5 gal bucketful & that was only 1 bunch amongst others. I will grow my own hopefully next year but I'm only just back to my hometown just recently where I own my home here in SW Louisiana, so I did start a fall garden but not the quantity I need.
    I'm just finding y'all channel & I'm absolutely loving it. So binge watching it is. I do lots of canning, dehydrating, preserving lots for my food storage & nothing goes to waste.

    How we use Cowboy Candied Jalapenos in our cooking:
    Add to burger mix, put on tacos, fajitas, add to chili, toss in slaw mix for a spicy slaw, pizza toppings, add to quiches and scrambled eggs, mix into cornbread, these are just a few ways we regularly use it

    Thank you for this video. I'm in my 50s and getting back into canning.. I haven't canned since sometime in my 20s. Today I made a small batch of cowboy candy. And used the extra juice over baked chicken thighs.. over rice. Yum! The actual cowboy candy will be too hot for me. But my kids will love it. Im so glad I found your channel.

    We love cowboy candy! We do slices and use it everywhere from salad to stakes and everything in between! I need to make some more for we are down to the last jar. Here is the recipe I follow and it’s delicious! I also add other peppers like my cajun peppers or whatever grows in the garden at the time. I use red and green for color. Hey, we eat with our eyes first 😂. 3 lbs jalapenos, fresh and firm
    2 cups cider vinegar
    6 cups granulated sugar
    1/2 teaspoon turmeric
    1⁄2 teaspoon celery seed
    3 teaspoons granulated garlic
    1 teaspoon ground cayenne pepper
    1 Tablespoon Mustard Seed
    Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
    Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
    In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
    Add the pepper slices and simmer for exactly 4 minutes.
    Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
    Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
    Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
    *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It’s wonderful brushed on meat on the grill or added to potato salad or, or, or… In short, don’t toss it out!
    Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
    When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
    Allow to mellow for at least two weeks, but preferably a month before eating. Or don’t.

    I made my first batch of cowboy candy last season, 2020. I sliced mine kinda thin on a mandolin. Held them by then stem end and sliced till I got close to the stem so I wouldn't have to double handle them. The did shrivel up but that's what I like about them! They aren't real thick and I pile em high on burgers and other sandwiches. I used red and green jalapenos and they're so good!

    i am 61 this year and just fell in love with peppers. I like this recipe. I mix peppers in with home canned beans, fresh shredded cabbage and carrots, sometimes cooled brown rice with a dressing made with homemade fermented mayo, vinegar, and oregano

    I made this today but I didn’t have enough jalapeños so I added banana peppers. I used the left over “syrup” to make cornbread. It’s absolutely delicious.

    Alright, alright, alright!! After years of hearing about this stuff, I decided I needed to fig out what the big deal is so made a batch. I used a mix of jalapenos and cajun belle peppers from my garden just to change things up a bit. I got 5 half pints candy and 5 half pints of leftover brine. The taste of that brine is AMAZING - I couldn't keep my spoon out of it!! I will use it for something - can't wait to try the candy! Oh my!! Thanks for great video!!

    Canning up some of these right now. These are a favorite in our house and we can never seem to have enough. They make great gifts too! Since most of our friends and family can't handle spicy food, I use Nadapenos. We leave out the cayenne and the pepper flakes too. Even the kiddos can eat these! They have the flavor of Jalapenos with NO HEAT. Happy canning!

    And wow I need that Kitchen Aide attachment 👍I live in Michigan as well and I know about needing a gas stove. We installed one this year as well ,2 gas heaters. We have a generator hooked up to the house as well last year. So we now can roll it to the house and hook it up. I want to build a box for it so it stays Permanent in its spot , rather than hauling it each time. Especially. During the snow season. Thank You so much enjoyed this Allot****👍

    Definitely canning this year!!!!.... It is absolutely horrible to loose your garden and what you've canned, under any circumstances. In August of '21 my husband's and my homestead got flash flooded and was covered in 7ft of water. I was growing enough to can many items for a year. It was just awful. We lost our home as well, and are living in a camper now, but I found the space to to start my seeds! Have actually been suffering from depression on and off, and the last few days have been binging your channel...getting inspired, and finding comfort watching you! ❤️❤️

    I've been making this stuff for years. How Cowboy Candy isn't a condiment in every household I have no idea. It's great on burgers, hot dogs, crackers with cream cheese, especially good on pizza. And that juice is liquid gold as a marinade...great for steaks, pork chops, chicken, fish...oh, marinate some prawns in that stuff and grill up some skewers. 😋
    I'm with you on the size thing. I used to do slices, and they're fine, but I prefer the smaller chunks. Since I grow lots of peppers I like to change it up from jalapeño once in a while. Serrano makes for excellent cowboy candy. I've also done it using a combination of sweet peppers & habaneros...super tasty.

    I made this yesterday, with alternate sweetener (stevia/erythritol blend) and it turned out *so good*!! I added some sweet red peppers for color.
    Today, when I returned home from church, I realized my house still smells strongly of jalapeños!! ♥️♥️♥️

    This is the best condiment, grew 5kg chillis outside this year, 1st time we have made Cowgirl Candy, its brilliant. We live in Somerset UK have been canning for approx.15 years and use jars with lug lids as are unable, until recently to get proper canning jars, also vv expensive here. Started dehydrating (Excalibur) 3 years ago, now waiting for delivery of a medium sized Harvest Right, thanks for a great channel. K & T

    Trying this tomorrow! Pectin, some mint and a small amount of the jalapenos would work great to make some jalapeno mint jelly out of the leftover liquid too!

    Two old birds and one young one in our house...LOL Mom, Dad and adult son. My son LOVES hot spicy food. Thanks for your video. HIs birthday is in September...I'm going to try to find Jalepenos to make him some for his birthday this year. We don't usually purchase anything for birthdays that isn't usable things so this will be a great way to give him something that is only for him!

    This is my favorite recipe to can. When you put all that liquid in the pot, then added all those chopped peppers, I thought, no way, but you did it!

    I finally got around to making cowboy candy. I went ahead and chopped my peppers. Wow, the vinegar was strong and I was coughing up a storm. Can't wait to try it. Thanks for sharing.

    😁 I knew I smelt that! I wish we had an awesome farmers market like that up here. We have small ones, nothing like that. I’m always amazed by it when you film there. I’m on the lookout for jalapeños I’m sure I’ll have to go to more than one place. Friends and family have already been asking for cowboy candy. There’s no way my plants will produce enough that’s for sure. They aren’t doing very well at all 😣.

    I just made my first batch last night! Wish I had your video. Mine came out well but I used a can of pineapple blended up. Next time I'll follow your method. I think we are going to love this stuff❤
