INGREDIENTS AND METHOD

Vegan! High Protein!
Date Energy Balls
With No Added Sugar!
Put a pan over a low heat
Add...
Cashew Nuts (1 cup or 125 g)
Roast for 2-3 minutes
Pumpkin seeds (1/3 cup or 40 g)
Sunflower seeds (1/3 cup or 44 g)
Roast for 1-2 minutes
Add...
Sesame seeds (1/3 cup or 47 g)
Poppy seeds (1/4 cup or 36 g)
Chia seeds (1/4 cup or 40 g)
Roast for a minute
Desiccated Coconut (1/2 cup or 45 g)
Roast for 30-40 second
Leave to cool down (10-12 minutes)
Grind coarsely
Set aside
Dates (pitted) (1 1/4 cup or 200 g)
Raisins (1/2 cup or 100 g)
Water (2-3 tbsp or as required)
Grind into a smooth paste
Add date and raisin paste in a pan placed over a low heat

Peanut Butter (1/4 cup or 60 g)
Cook together for 2-3 minutes
This is a perfect texture!
Combine well
Shape Energy balls
Makes 28-30 energy balls
