You’ve made an innovative stuffed paratha, which I’m sure is delicious. I love the addition of lemon zest! I usually stuff mine with a spiced potato mixture, tomatoes and onions, or mixed vegetables with tame chilies. I think you can put any stuffing inside that you like and it will be tasty. But I cannot roll mine out as perfectly as you can. Mine may taste good, but they aren’t exactly pretty. I was distracted by the cutest, most perfect baby red onion I’ve ever seen. I would still be able to eat it, but darn, it was adorable. Tut, Loki, and Thor say hi to Lancy. He looks very comfy and cozy in his napping place.

I suggest to substitute wheat plain flour for wheat gluten free flour if you would like it to be gluten free, it should work fine. I have not tried to make it with rice flour and I think it will not work very well, as for the oat flour I also have not tried it but it might work well. It’s actually a western take on Indian stuffed bread called paratha. They are delicious and can be made with potato, spinach, peas, and mixed vegetables, to name a few. They are delicious!

Would it work with just chickpea flour rather than plain flour and chickpea flour? I'm trying to avoid gluten. Thanks.

I suggest to substitute wheat plain flour for wheat gluten free flour if you would like it to be gluten free, it should work fine. I have not tried to make it with rice flour and I think it will not work very well, as for the oat flour I also have not tried it but it might work well. It’s actually a western take on Indian stuffed bread called paratha. They are delicious and can be made with potato, spinach, peas, and mixed vegetables, to name a few. They are delicious!
