    Savory Japanese pancake made of batter and cabbage topped with okonomi sauce, mayo, katsuobushi, and aonori. Originated from Osaka, Japan.
    Serves: 4
    Ingredients:
    1 cup (120 g) all-purpose flour
    ¼ tsp. salt
    ¼ tsp. sugar
    ¼ tsp. baking powder
    2-3 inch (5-8 cm) Nagaimo/Yamaimo
    ¾ cup (180 ml) dashi, or ¾ cup water with 1 tsp. dashi powder
    1 large cabbage head (8-9 cups, 1.6 lb., 740 g)
    ½ lb. (227 g) sliced pork belly
    4 large eggs
    ½ cup (8 Tbsp.) tempura scraps (Tenkasu/Agedama)
    ¼ cup (4 Tbsp.) pickled red ginger (Kizami Beni Shoga)
    Vegetable oil
    Okonomiyaki Sauce
    1 ½ Tbsp. sugar
    2 Tbsp. oyster sauce
    4 Tbsp. ketchup
    3 ½ Tbsp. Worcestershire sauce
    Toppings
    Okonomiyaki sauce (or homemade recipe)
    Japanese mayonnaise
    Dried bonito flakes (Katsuobushi)
    Dried green seaweed powder (Aonori)
    Green onions/scallions
    Chapters
    0:00 - Mix the okonomiyaki batter w/ Nagaimo/Yagaimo
    1:16 - Make the okonomiyaki sauce
    1:51 - Chop cabbage and pork belly
    2:45 - Add eggs, tenkatsu, pickled red ginger, cabbage to the batter
    3:40 - Fry on a large pan
    4:20 - Add pork belly on top
    4:43 - Flip
    5:10 - Flip again and take off the heat
    5:37 - Apply okonomiyaki sauce and Japanese mayo
    5:52 - Top with katsuobushi, scallions, seaweed
    6:15 - Serve & full recipe

    For those who are wondering: i saw in their website that you can replace the nagaimo with a potato or any starchy vegetable, but i also saw a video where the guy used cornstarch instead to achieve the fluffy texture of the batter, hope this helps 😊💕 happy cooking!

    When my daughter and me lived in Japan this was one of our favorite fast foods from a store nearby. I still remember the delicious flavors and wish I could find it here. We live in Takarazuka between Nishinomiya and Osaka. I miss it very much.

    I just followed this recipe today and it was absolutely great! Only one thing worth mentioning as maybe others wouldn’t realise either but i didn’t realise how thinly the cabbage should really be chopped. It was still quite crunchy and firm, so next time I’m going to make sure i can find a soft variety and shread very fine

      Actually, made this some time ago after visiting Japan, just refreshing my memory :D But the defining ingredients are flour, eggs, baking powder and greens, and the okonomi sauce - which can be simplified to Worcestershire sauce (available worldwide), sugar, soy, and honey. Anything other than that forms the "as you like it" part of okonomiyaki. Which means I can do whatever I want and it's legit 😅 One thing to note is that Japanese style loves this to have very sweet sauces - the okonomi sauce is sweet, and the Japanese mayo is sweeter than Western-style mayo. Apart from that - dig in!!

      A friend online told me the name of the dish translates kinda like "fry anything!" so they said you can use most types of veggies or combo thereof instead of the veggies seen here. I've checked around the 'net and noticed it's true; other recipes use carrot, cabbage, zucchini etc. We made it a week ago with some other veg combo and it was fabulous

    Thank you for this recipe! It reminds me of the japanese immersion school's spring festival in my home town when i was young. The first time i tried this was at the spring festival (i was curious because a savory pancake sounded weird). I made this recently and it is just as delicious as i remember!

    This is an excellent recipe! Thank you for it 😄 my family all loved it so much. I added in bacon bits to the batter (on top of pork belly slices on one side of the okonomiyaki), and a layer of shredder cheddar + mozzarella cheese under the pork belly slices. Oishi! 😋👍🏻🥇

    Thank you i tried and cooked this recipe at home just right after watching this and even though my ingredients are not complete, still and its delicious. Been craving for this since Im planning a trip to Japan and with pandemic no one can go yet so this recipe kinda took me there somehow. :) lol.     I just came back from Osaka where I ate this for the very first time. It was simply amazing. It seemed like the pancake was cooked with just the batter (after the fridge in the video), so it was thinner. Then the fillings were piled on top of one of the pancakes and another pancake placed on top of that. Either way, the flavor was simply amazing. Thanks for the video!

    I'm so happy you did this recipe! I'm really interested in learning about Japanese cuisine and Okonomiyaki is something I've read a lot about and been very curious about. I've tried to make it with... some American modifications since I couldn't find the Nagaimo, following a different recipe, but I'm thinking I'll try to prepare it this way and see what sort of results I get. Previously I stacked things on top of each other, because that's what the recipe said to do, but I think it would work out better if I mixed everything together like you did here. :) I hope you're having fun on your trip!

    I did this with turkey bacon and my husband and I tore it up!! I recommended cutting the bacon into smaller bits so its easier to slice and eat.

    As long as you have cabbage and oyster sauce you can add whatever you like or have and it will taste like okonomiyaki, i've put on shrimp, beef, sausages, pork, mushrooms, grated carrot or zucchini, red pepper, whatever is in my fridge, and i prepare it without flour, the cabbage just mixed with egg, it's so easy to prepare and always delicious

      Omg I first heard about okonomiyaki from Ranma 1/2 too! Ever since then I’ve been dying to make it and I finally went and bought all the ingredients, I’m so excited to make it now lol!
