For those who can't get Dashi, you CAN westernize it by using 1/4 of a chicken bullion cube with a bit of Thai Fish Sauce. Not the same flavor, but it's fishy enough for a similar effect. Don't stress if you can't find the dashi, sometimes it's just not available... and perhaps you jumped the gun and bought octopus hoping to come up with a sub. This works perfectly fine.
I adore takoyaki, but I've never tried making it myself. I can't wait make it myself. For pescatarians, I'm thinking smoked salmon might be interesting. For vegetarians, I would use shiitake "bacon." You make shiitake "bacon" by slicing the mushrooms and seasoning it with a generous amount of olive oil and salt and pepper. Lay the shiitake on a baking tray, taking care not to let them overlap. Bake at 350 for about 30 minutes, but you have to rotate the tray every 5 minutes. The finished shiitake should be golden and somewhat crisp and should reduce in size. The best thing is it tastes surprisingly like bacon. The shiitake "bacon" is a recipe from chef Chloe Coscarelli.

Just One Cookbook I followed this recipe today and I found that my Takoyaki had a strong egg flavour (like an omelette). Am I doing something wrong? If not are there any suitable substitutes for egg?
I just made this today and it turned out great! :D Because I didn't have a takoyaki pan, I just used a mini muffin tray and it worked very well! Will make this again soon. :D :D

Here in the Philippines some stalls who sell takoyaki they put cheese and crab sticks inside instead of octopus. But my favorite one, is with baby octo + they sweet takoyaki. I hope before I die I can visit Japan and buy and eat takoyaki there.

I honestly haven't had this first so long since I graduated high school I only had it a couple of times when I was in Kyushu and that was for my savings for a whole year I only went with two of my friends that were transfer classmates and I honestly enjoyed my time over there now I know how to make this now I can enjoy it at home thank you so much brings me back good memories
I used to eat these on Fridays with friends after school, which is one thing I certainly miss about Japan. I lived just outside of Osaka, but here, street food is a lot harder to find.
i tried takoyaki for the first time last month and i love it! i want to try and make it with your recipe. i have also followed your recipe and bought the pan for the taiyaki before and it was delicious!!
As a vegetarian I used shiitake instead of octopus and switched the dashi stock with vegetable stock. When cooking for my fiancé I just followed the normal recipe since he likes octopus. :)
Love this recipe. We also tried adding some finely chopped cabbage into some of ours along with the seafood and it reminded us of okonomiyaki! It also made the batter last a lot longer so we made a ton of takoyaki. Thank you for this recipe!!!

I made it and the octopus I got was pre-boiled and tuf so I used little smokies sausages and cut them into mini octopus shapes and put them in boiling water just long enouf for them to curl :)
I like using octopus, but I commonly use precooked frozen shrimp in mine. It's very fast to thaw a few and cut them to make a quick Takoyaki lunch! I call it 海老焼き, even tho that really means "grilled shrimp".
It's hard for me to get octopus in my small town in south Alabama, so I got from Walmart a "mixed" bag of seafood, which also had octopus pieces mixed in with shrimp, scallops, and imitation crab.

I love cooking and that's why i subscribed to your account. i"ve been using the electric griddle pan but its the ceramic one, now im using the metal (the heavy one) stove top grilling pan but its hard to control the heat, I will send the video of my takoyaki next time and hoping to have that grilling pan someday
