- Homemade BACON recipe. You'll forget about store-bought bacon forever when you try to cook at home. Great taste that the whole family will love.
Anyone can cook such a meat delicacy, everything is very simple.
The thermometer must be purchased. Nothing without him. Nitrite salt is also needed. I have nitrite salt 0.6%.
By adding nitrite salt you can do the following:
• pleasant and appetizing color of the product;
• increases shelf life;
• prevents the development of bacteria and infections in the meat;
• Meat fibers become softer and more tender.
Cook for 2.5-3 hours and you will succeed. After cooking, I let the brisket cool and sent it in the fridge. The bacon tasted even better the next day. If you don't know what to cook from brisket, then check out my recipe. The main thing is to cook with joy.
Recipe and ingredients:
Brisket - 1kg 500g.
Salt - 30 g (2% of brisket weight).
Nitrite salt - 15g (1% of brisket weight).
Sugar - 15g (1% of brisket weight).
Ground black pepper - 2 tsp
Dry adjika - 3 tsp
Ground nutmeg - 0.5 tsp
Dry thyme (thyme) ground - 1 tsp
Bay leaf - 3 pcs.
Garlic - 3 cloves.
Put in the fridge for 4 days.
Turn the brisket to the other side each day
Set the minimum temperature in the oven, no more than 100 ° C.
Bake until the internal temperature reaches 80°C.
Cook for 2.5-3 hours.
Let cool completely and put in the fridge.
