It's not too hard TBH. You can practice on something dry, like Raw rice or beans. Wok is the best, but any bowl-shaped pan with a rounded base would do. The movement you want to do is not up-down, but rather forward-back rapidly. If you want to have a steady, constant flipping, you can also flip by making the move in an horizontal-ovular manner. But most important thing is to not overload the pan, else flipping would be hard.
Lovely. I love the taste and look of eggs. Unfortunately my body tells me they are poison and makes me projectile vomit if I were 5o eat them. I just have to watch others cooking and enjoying them!

That pot of running water is there to help control the temperature of the stove (something along the lines of that) and during business hours, because of the high amount of orders coming in, they need to keep it running to make sure there is enough water for cooking or cleaning. If the water isn’t running, water that is in that pot will boil in a few mins and the pot will eventually burn since it is so close to the hot stove. In most south Asian restaurants, cooks will get their pay deducted or fired if they don’t keep the water running.

A panela é funda por isso parece ter mais óleo e outra o arroz deve ter sido cozido só na água daí ao misturar tudo você nem percebe o óleo que ficará sendo o suficiente 😋
