Man, the way they chop those carrots so easily makes me envious. It takes me like 20 minutes just to mince two carrots. It just goes to show that confidence can only really take you so far if your knife sucks.
For sure! I am slow at chopping too, because I am clumsy. Confidence with knives is so important. I have a smaller version of that knife and I really like it, but I think I will go to the market and get a larger one! I also had no idea there was so much oil used.

This skill takes years and years of effort, and hard work. But you could probably make something very similar, because skill isn’t a measure of how good the end result is, it’s how fast it takes. Anyone can write a good novel, but for most it would take over 5 years to get the same result as an amazing writers book that took them 1 year. For the most part anyway, you do need the knowledge either way there. But putting it into action is where skill comes in

@@akshitbansal1839 he did this so the white and the yoke don't mix completely. So you can taste the white and the yoke. The white is almost deep fried and it will form a brown crust. This will keep the egg's texture and depth. Otherwise you would just mix the eggs before cooking it to save the effort. If you want it scrambled that is.
I love chilies but that was a stupid amount, like Forrest Gump stupid. You wouldn’t even be able to taste the chicken, plus the way they smothered it in sauce, all that crunch gone just soggy
@@cactusfacemcgillicuddy to be fair, that is a common asian thing in general. china, japan, korea all have fried foods that are then covered in sauce. the point isnt a traditional fried texture but a unique kind of gummy fried thing. its supposed to be slightly soggy but it is still a bit crunchy in parts as well.

From my experience in Asian cuisine, to get that crispy chicken coating, use potatoe starch instesd of flour. It's better flavor and provides a longer lasting crispy such as reheating it goes. That white liquid I think is milk. It's looks...stretchy so I guess that's how potatoes starch and milk look combined. I've only mixed potatoe starch and water. I'll try milk to see if it looks like this.
This video has made me realize that I'm an adult and I can buy a wok now 😅😅. I've always wanted to learn how to make fried rice from scratch too I have enough culinary experience to at least understand the basics of it. Time to get to work then!

Mensa, You probably didn't put in enough grease. I'm serious, fried rice requires lots of grease, especially when using medium grain/sushi rice, which is what this chef is using.
It’s currently midnight here and I just saw this a while ago. In all honesty, it was a delicious failure. I tried making this with 50.00 grams of cooking oil, 3 eggs, and 2 scoops of 🍙 - and the finished product is an oily fried rice! I can’t deny that I’m disappointed, but I ate the whole thing anyways. This was a valuable experience and I’m certain that this will cease to happen again!
See how many times they toss and smoosh the rice and eggs? Gotta be to absorb any leftover oil, right? I use butter with eggs and add it in at the end while I move the fried rice to the other side of the pan, slowly incorporating the scrambled eggs to the rice. Good luck next time!

The end result is those almost threadlike egg bits a good fried rice should always have imo.

GREAT video! There was a Korean food place in a public market/mall where I owned a shop, and pretty much every second day I'd go to them a get a huge takeout bowl of egg fried rice very much like this, except without the godawful (to me) seafood added into it. It was soooooo tasty I never got sick of it in the 3 years I ran my store there. Ate it behind the counter with soy sauce as the only thing it was missing. (To my western palate anyway.) Hey, I was the boss, who was gonna tell me no? LOL. I miss that place. It's great to see the process of making it, thank you for this.

Soy fanático por el arroz con huevos fritos encima, pero esta comida coreana fue lo máximo en esa preparación de algo tan simple como un huevo, llevado a su máxima expresión por ese cocinero. ¡Yo creo que debe quedar extraordinario, divino, bárbaro!
Yo he experimentado mucho con el arroz (es mi comida favorita) y la forma en la que lo trato lo dejo completamente partido, la textura a la hora de cocinar arroz es lo mas importante y aplastar arroz pre-cocido hace que los granos se desmenusen
que exagerado.......

GREAT video! There was a Korean food place in a public market/mall where I owned a shop, and pretty much every second day I'd go to them a get a huge takeout bowl of egg fried rice very much like this, except without the godawful (to me) seafood added into it. It was soooooo tasty I never got sick of it in the 3 years I ran my store there. Ate it behind the counter with soy sauce as the only thing it was missing. (To my western palate anyway.) Hey, I was the boss, who was gonna tell me no? LOL. I miss that place. It's great to see the process of making it, thank you for this.

Ese medio litro de aceite lo absorbieron el arroz y los huevos (huevos de alto contenido graso en las yemas) Comiendo esa porquería no llegas a los 45 años sin un infarto o cáncer.

They probably do it for practicality as a business that has to make stuff fast and in large quantities, but it’s really up to the taste and stuff of the person making it, considering it’s just for them , not for a whole restaurant. Ppl can dislike that much oil, it’s not that big a deal, or criticism/disrespect to the cook necessarily, really. Just a preference.

It's likely ... after the corn starch which is sooo delicious and makes for the best crispy-ness ... an egg/starch batter! Looks like the rich dipping sauce is oyster and/or definitely soy sauce. Yum yum!!
