Same thoughts here, in Philippines ! But I know why I won't ever do it... Not because of lack of customers, not because of lack of meats... But because of unreliable employees and corrupt administrations... Most of my expat friends who opened something here, ended up broke or in depression... 😢

You can use the area of the barn for a bar when the barbecue barn finished. Just called it Pitmaster BBQ barn & bar 😁

Meat from the Iberico Pig, is the best tasting meat ever, even the loin, which usually doesn't have a great amount of flavour is superb. Am so envious of the availability of this meat to you.

Iberico is not a region, it is actually a breed of pigs we have here in Spain. And that is not technically a ham, it is the front leg called "paleta" Iberico Ham is made out of the cured rear legs. Interesting job since we do not eat fresh iberico hams here in Spain, it is mainly cured... Best regards!

Euh he smoked an iberico paleta which is the same cut as a boston butt...they are both porc shoulders

Wow that looks good - we have a get together (street party) planned for August bank holiday to celebrate hopefully covid lockdown eased off in a big way so will do this then. Last time I did ribs and Home made sausage for VE day street party a couple of months ago but all had to keep our distance. So I have a question - please can you tell me how many hours till it was ready when you wrapped it.?
