Not a vegan but after having almost nothing but positive experiences with vegan alternatives these last six months I decided to search for vegan christmas cookie recipes since holidays are on the way, and omg this video included I don't know where to start! All look so yummie and I just know I'll fall asleep tonight with my tablet on and playing vegan bakery vids lol :D
I decided to make this for a harvest festival bake sale. I didn't have all the right ingredients and was sceptical at first because my batter was VERY soft like icing almost so was nervous it wasn't going to work. I left it in the fridge for two hours and it solidified to some extent. Once I started kneading flour into it.. i knew it would all work out. They're the best soft gingerbread cookies I've ever had. OMG! Mine too! But I think i did not add the second full cup of flour (distracted by Hallmark movies) so is sifted in one cup! Spelt flour is different too! They turned out nice and chewy!

the cookies were amazing ! I tried making my icing with just a whisk and it seized up and got really hard, and turned into the consistency of a dough. I think a hand mixer might be best way to do that lol xx
I made these today and they came out beautifully! I used miyoko's vegan butter. While working with the batter, there were multiple points where I thought it was going to be a flop, but they came out really well! So if the dough is doing anything unusual, just keep persevering heheh

I know this is SO late but the holidays are coming soo you can use frozen coconut oil just be sure to measure it before freezing and you can use rice flour :)

I was wondering... you use vegan butter in a lot of recipes, but I can't get that where I live (pretty rural area in the Netherlands); do you think vegetable margarine would be a decent substitute?
Vegetable margarine usually has whey protein in it just like probiotics. i'm allergic to animal milk. SO caution for that. Lauren should help us make vegan butter;) for the Netherlands. can't they deliver? look up Earth Balance, or Melt organic buttery sticks. yes i know it has palm oil but some people can't eat soy. like me. Melt ingredients: water, coconut oil, organic palm fruit oil, hi- oleic sunflower oil, sea salt, sunflower lecithin? natural flavour?HUMMMM? TOCOPHERIOS? annatto extract colour. no artificial flavours. fair trade rain forest alliance prosperity organic foods inc. Boise, ID 83702 MADE IN THE USA. +Madelope we have some gluten free recipes, we just don't often advertise the GF part. BUT baking is hard to sub flours... I urge you to experiment but I can't guarantee the outcome of these with coconut flour.

You should really add aquafaba to your icing or egg replacer, not water alone to make it more stable and last longer. Also, this type of consistency is called 15 second icing which means it takes that long for the icing to smooth out after running the back of your spoon through the bowl. You do not need to thin out your icing after piping on a border, just fill it in with the same 15 second icing or else your cookies will be too runny and never dry completely. Your icing was never stiff enough to begin with to be adding more water to it.
I finally made them! i used light spelt flour made by the Canadian Mennonites! And wanted to use up this massive bag of coconut sugar! Even though I have a Kitchen aid mixer, I cheated! I decided to be a hero and do my arm work out whipping this up! Plus the ladder was in the freezing garage and there is no way I was gonna reach it! The cookies turned out Amazing! Now that the snow storm is over... I'm going to Dollarama to get the piping bottles and sugar! Well maybe at food basics I'll get the non-GMO sugar! xxoxoxoxoxoxoxo Thanks guys! PLANTS RULE!

You can make vegan chocolate rum balls. Just a 250g packet of vegan biscuits, a cup of coconut, 1/2 cup icing sugar, 3tbsp vegan chocolate powder and a little bit of non dairy milk (I use almond milk). Just blend the biscuits and combine it all together. Add enough milk until they're sticky, roll them into balls and coat in coconut. So easy but soo good!

Just blend the biscuits and combine it all together. Add enough milk until they're sticky, roll them into balls and coat in coconut. So easy but soo good!

I would love to see an episode on dressing and sauces. the hardest thing to avoid or not stare and drool over is mayo and ranch and buffalo ranch and all these things I used to love to dip and spread on things.... it's my only struggle within the vegan lifestyle the vegan substitutes sold in stores are so gross in texture or taste to me. please share your wisdom.

The best way to find out is emailing the company. Sugar as a final product is always vegan but sometimes the process they do to make it isn’t. Just email them to find out what they do :)
