To make our gingerbread version we added 1 tbsp molasses instead of the cocoa powder, and added 1/4 tsp cloves. They turned out more like gingerbread this way!

Diane Greene i tried making a batch of about 3 dozen cookies for thanksgiving, so i saved them in my freezer. I made them 3 weeks before thanksgiving. I ate them all myself within about 4 days. :(
I made 2 batches (so nearly used up 2kgs of flour) and not a single cookie survived the next day... I think next time I should double that amount😍😍! Thank you for this awesome recipe!
For the past 3 years I've made treat bags for my teachers and friends at school before Christmas break. Usually the bags consist of vanilla sugar cookies with royal icing and peppermint bark and everyone loves them. I wasn't sure whether I'd make treat bags this year for Christmas due to the virus and how I am doing online schooling now but I think the treats would make people happy so I'll have to save this recipe. I'll have think about whether i'll have to half the recipe though due to how I'll only be making this for some select close friends and family. Just made these- SERIOUSLY delicious!! Melt in your mouth they really do!! I have made spritz butter cookies many times but this is another level of taste and texture. For this first try, I halved the recipe and only did the butter cookie version (where you use the dough ‘as is’) and piped it with a star tip in the S. They look like something I could sell!! This is such a wonderful recipe, I will use this for probably every cookie I make from now on! I made three tweaks: 1) instead of linzer cookies, I added only the almond extract to the butter cookie base and made thumbprints with cherry preserves 2) I added orange zest and cranberries to the sugar cookies, and 3) I made the whole recipe vegan this time for the recipients by using country crock plant butter (omitted the salt from recipe), and aquafaba for the egg whites
This turned out really well! Thank you, Em! For the folks baking this in a tropical climate, (Asia & the Middle East, etc.) pls be wary of the room temperature which make the butter melt! I had to pop the dough in the freezer ever so often to ensure that it didn't become too runny... 😊

A life saver video if you end up needing to do all your baking in one day, very customizable. My stand mixer was juuuust able to mix it all. I did one batch of the sugar cookies with an orange's zest and they were great. Might add a touch more vanilla for the sugar cookies, and definitely add the icing sugar if you use unsweetened cocoa (maybe 2 tbsp) if you're not filling/dipping them. This is going to be my go-to for next year too!

I made this recipe twice already! The first time it was so amazing (and I'm new to making cookies) that I decided to make it again. I made the vanilla cutout cookies, and chocolate cookies. The first time I forgot to bloom the cocoa, but they turned out amazingly awesome! The second time I decided to do the blooming, but I didn't do it right, so the cocoa didn't dissolve completely in the dough and they looked brown with tiny darker spots, but they all taste wonderful!! And they turned out perfectly shape-wise. I did the 6 mm with the Tupperware rolling pin to make sure it was an even 6mm. Thank you so much for sharing this recipe with us, Emma!!

I made the batter/dough yesterday, divided it and refrigerated all but the "s" cookie dough overnight. The "s" cookies, for me, are harder to pipe evenly than it looks. I made the rest of the cookies today. The dough holds its shape beautifully for the cut out cookies. The base recipe is quite large for my 5qt stand mixer but it turned out beautifully. Another fantastic recipe and tutorial. Thank you Emma. ♥️

This is my third year making this recipe(s) I love them. My family doesn't like gingerbread so instead I do lemon, I use a ton of lemon zest and juice and drizzle a powder sugar lemon juice icing over the top. I give these away and make people very happy. The chocolate is my favorite.

I made these yesterday, they are melt-in-your mouth, dangerously addictive treats! I made some changes, though. I used salted butter because that's what I have on hand. I changed one of the flavors (4th dough) to matcha to make a 'Christmas tree cookie'. My cookies were not as elegant as hers, but they were still pretty! The dough is very rich in butter, you need to work fast else you cool them in the fridge for a few minutes...

Well I made the other half of the recipe Glutenfree. Turned out great like the first half. Instead of making the ginger type, I made the sugar cookie and chocolate ones. I made the sugar cookie batch in the shape of crosses which I will decorate tomorrow with royal icing. The chocolate batch I cut with a Linzer cookie cutter with a hole in the Center. Then I filled with chocolate ganache. They taste devine.

I tripled the amount last year and I wouldn't recommend it. doublebatch should be fine.

Rakhi Khemka no need to whip beforehand, just add it in as you would the egg whites. I used 1/2cup or 120grams to equal the 3 extra large egg whites.

A life saver video if you end up needing to do all your baking in one day, very customizable. My stand mixer was juuuust able to mix it all. I did one batch of the sugar cookies with an orange's zest and they were great. Might add a touch more vanilla for the sugar cookies, and definitely add the icing sugar if you use unsweetened cocoa (maybe 2 tbsp) if you're not filling/dipping them. This is going to be my go-to for next year too!

I made this recipe twice already! The first time it was so amazing (and I'm new to making cookies) that I decided to make it again. I made the vanilla cutout cookies, and chocolate cookies. The first time I forgot to bloom the cocoa, but they turned out amazingly awesome! The second time I decided to do the blooming, but I didn't do it right, so the cocoa didn't dissolve completely in the dough and they looked brown with tiny darker spots, but they all taste wonderful!! And they turned out perfectly shape-wise. I did the 6 mm with the Tupperware rolling pin to make sure it was an even 6mm. Thank you so much for sharing this recipe with us, Emma!!

Emma I've been making these cookies every Christmas for family since you posted this video back in December 2019. I have even followed the same fillings and shapes you've used in the video. In the lead up to Christmas, they all ask me to gift them cookie boxes again and tell me they want these as gifts every Christmas! Honestly, these are wonderful bakery-style cookies. I made the batter/dough yesterday, divided it and refrigerated all but the "s" cookie dough overnight. The "s" cookies, for me, are harder to pipe evenly than it looks. I made the rest of the cookies today. The dough holds its shape beautifully for the cut out cookies. The base recipe is quite large for my 5qt stand mixer but it turned out beautifully. Another fantastic recipe and tutorial. Thank you Emma. ♥️

This is my third year making this recipe(s) I love them. My family doesn't like gingerbread so instead I do lemon, I use a ton of lemon zest and juice and drizzle a powder sugar lemon juice icing over the top. I give these away and make people very happy. The chocolate is my favorite.

Thanks Emma these were perfect and so delicious. I used a lemon drizzle on the spice flavour and also flavoured a batch using half almond and hazelnut meal which I then filled with Nutella soooooooo good. I presented the one giant box at work for a Christmas treat went over so well.❤️

I made some changes, though. I used salted butter because that's what I have on hand. I changed one of the flavors (4th dough) to matcha to make a 'Christmas tree cookie'. My cookies were not as elegant as hers, but they were still pretty! The dough is very rich in butter, you need to work fast else you cool them in the fridge for a few minutes...

Well I made the other half of the recipe Glutenfree. Turned out great like the first half. Instead of making the ginger type, I made the sugar cookie and chocolate ones. I made the sugar cookie batch in the shape of crosses which I will decorate tomorrow with royal icing. The chocolate batch I cut with a Linzer cookie cutter with a hole in the Center. Then I filled with chocolate ganache. They taste devine.
What GF flour did you use please?
