THANK YOU!!! I have been making sugar cookies with royal icing for years now and I never can get my base icing firm enough without adding extra powdered sugar (making it a little too sweet). Turns out, I'm not mixing it long enough. Also, I love how you leave in mistakes and show how to fix them. A small tip for you though, for the stocking, start with red next time. Then do the white with sanding sugar. That way there is no gap between the colors. Also, for the snowman's nose, you can just make a big orange circle and then use a toothpick to pull it out in the direction you want to make the point. :) Love your videos! You're fantastic!
You sound like you know what you are doing.

The best part about royal icing is that you can swirl and blend colors like an artist. I always let people know I need to have at least 1 week to complete my creations. It is very labor intensive. I also use meringue powder, and can refrigerate the frosting to continue the next day. I’m not sure if you can do that with egg whites. Also I use a dehydrator to firm up the frosting on the cookie when I add layers. Great starter & Informative video, John! 🎄
I found that the egg white royal icing survives the fridge much better than the meringue powder. I also found that the egg white icing was smoother.-I use a knife to spread the icing. Not sure this year they’ll be cookies, usually I made a few dozen gingerbread cookies.
How do you keep the cookies in the fridge? Open or in air tight container? Do they sweat?
9:13
the fact that you exist makes me happy
I would like to suggest a tip I learned from Alton Brown. When adding dry ingredients to a mixer of wet ingredients, use a cheap bendable paper plate. It's a lot less messy.
Thank you.
That is an awesome tip, Sandra! So simple - and yet, I never thought of that, haha. Thank you! 🤗🤗
It is endearing the way you forgive your own mistakes, as in " That's OK. that's OK...". ( life lesson?)
I LOVE to cook, but I am the WORST at baking. I can deep fry anything, I can grill anything, but lordt if I try to bake anything-it’s a disaster.
I have tried multiple recipes of yours and they are always a success! Thank you for giving me the inspiration and education to ENJOY baking.
Your videos are the best! No unnecessary long intro that drags out causing lost interest. You show your silly mishaps that shine a light on the true mess of baking!
Thank you times 1 Millon!
I hope this video sheds light on how difficult decorated cookies are. John is a master baker but certainly not a master cookie decorator, that says alot about how much you need to put into it to actually be good at it
John, I have been making sugar cookies with icing since I was seventeen and I am now 41. I used to make such runny icing or I would make vanilla buttercream which is too thick. Watching your royal icing tutorial is great and life changing. I got this Christmas already made up icing for cookies. It was too thick so watching your video I would add a little water and it made the perfect flooding consistency. Thank you John. You are an amazing man.
I remember we had a cake decorating class when I was in girl scouts. That was about 50 years ago. We practiced on graham crackers. The icing was made of crisco, powdered sugar and food coloring. How I thought that was yummy I'll never know. I always thought that was Royal Icing. Thank you for showing how to do it right. 😋
What?!? I was a Girl Scout about 45 yrs ago (I still have my beret though some moths did a slight number on it, lol) but we didn't get to do a cake decorating class 😔 I did learn to bake in my Jr High's Home Economics class though. I had some great recipes but unfortunately I lost them. I had one of thee best sugar cookie recipes I've ever tasted. So sad it's/they're gone but grateful for the memories of both those yrs in my childhood...
@@tammiemartinez6485 Not only cake decorating but Toy Making as well.
@@jackybluj Yeah that's another one we didn't do. We did several outdoor activities. Camping, they took us to one of California's largest Zoo's, went to the beach. One of my fondest memories was the gathering at a huge city park after our yearly cookie selling where all troops from California attended. Again, lots of outdoor activities to participate in as well as learning which troops made the most sales...
@@tammiemartinez6485 There are some chocolate smudges on my nightstand because that's EXACTLY, ingredient per ingredient even the Graham's, what my grandson and I made YESTERDAY! What are the odds!?! How funny! Plus I was a Brownie and Girl Scout in San Diego. We moved to AZ in 81, I was 11, but still keep in touch with my Cali-Crew. I saw the msgs from you and Vicki and felt like I reunited with classmate friends. Millions of UA-cam videos and the world can still seem small. Take care!
@Vicki Jackman what you mean was a buttercream frosting/icing 😅
I love how you do not edit mistakes and show us how to fix it. Love your humor as well. Merry Christmas from our house to yours. 🎄🎁❄☃️
Congrats on your New York best seller. I plan to buy your cookbook for Christmas. Thanks to you I make wonderful no spread sugar cookies. Now I plan to try your Royal Icing. Thank you for allowing me to see your videos and being able to make wonderful treats for everyone

I've been searching for this recipe on your channel but couldn't find then here you are. God is good.
John your channel has always been my go to. 😍😍😍 🇰🇪
I loveee how he shows that he makes a few mistakes along the way!! Makes me so much more confident and i know it's okay to do a few things wrong. I Loveeee your videos and I've used so many of them so many times ❤️
I LOOOOVE How Happy Smiley and Giggley you ALWAYS are! It’s such a breath of fresh air.
HEY JON I OPENED UP A BAKERY BECAUSE OF YOU
Good for you
It’s amazing how the people that teach really make a difference.
Stay safe everybody :)
Wow 😳😲 awesome
Awesome CONGRATS 🎉
Wow!
I love how it’s not like any other baking videos
How they just show ingredients
But
John shows the amount and everything
It’s just
AMAZING 🤩
This recipe saved my day. I made sugar cookies for an upcoming recipe video. I could not find the icing pouch I usually buy to frost my cookies at the store. I had to frost my cookies for the video. I looked for recipes online and this one seemed so perfect. I made it and VOILÀ! Perfectly frosted sugar cookies!!!! I will not buy icing pouches anymore. I just love everything you make. It is always so beautifully presented.
This guy is totally positive vibes and so relatable.
Thank you, thank you, THANK YOU!!! Finally a recipe that works! I’ve tried everything in the past and can never get the right consistency until now! I’ve been using your recipe for 3 days now for all of my Christmas cookies and it’s PERFECT! My cookies look professional and beautiful. Merry Christmas!!!
I would LOVE to see you make a gingerbread house that's edible but of course stays together.
THANK YOU!! I had a terrible experience years ago with royal icing. I came across your video a year ago, it took me a year to have enough courage to make it! I definitely overcame my fears of royal icing. Was a Perfect no! Will I it again absolutely! Thank you for the confidence that you have given me.
Hey Thankyou !!! I made this recipe and changed it up with whatever I had in my cupboard.
Instead of corn syrup I used golden syrup 🇬🇧
And for the essence I used Rose essence!
It’s turned out perfect!! 🤍🤍
John, you're my actual hero!! Your videos bring me life!! I started watching your videos, and I was so intrigued, it motivated me to start baking and now I own my own business! Love you🥺❤
Wow! That’s so cool, do you by chance have a website? I’d love to check out your stuff 😊
Wow, congrats on your business!!!
WOW!! Congrats
I’m guessing you just bake and sell out of your home? Lol
@@hollydaugherty2620What's so funny? Even if she does, she still has a business. Even big bakers have said you don't need to actually open up your own public bakery to have made it. Whether original poster sells from home or not, she still has a business & is following her dreams. That is amazing and something to be proud of.
You're so much fun to watch! One thing: I'm a teacher. That's scraping the bowl down. Tamping is applying pressure and compacting something, which I believe is not what is wanted when mixing, particularly using egg whites.
When I was a kid my mother made cut out cookies, dozens of them. However when we frosted them we used just powdered sugar and milk frosting and frosted the cookies on the bottom side. They were much easier to frost and ended up being very neat. 😃
I still use that icing for my Christmas cookies!
Plz share recipe
Could you share the recipe please?
Hi! I love to bake and really like your idea of just easily made frosting on the bottom of the 🍪...alot quicker for sure! Happy Holidays everyone!
@@youtubetarwa8316 I don't have an actual recipe, I always just added enough milk to it the right consistency. You can always add more milk.
I was watching the video and suddenly I started hearing the Brazilian anthem, when you started decorating the cookies. I thought it was something on my phone and I watched it again, and it really is our anthem.
Congratulations on the videos, always wonderful.

Thanks for this ❤
I remember my grandmother teaching me the tricks in cake decorating. I was in 6th grade then, no piping bags - just filling the small tip every time you run out...it was worth every effort. 🥰
2023 you are always my go to for your Christmas cookies and Royal Icing. Thank you for all your tips and patience explaining everything 😊❤
It worked so well, everything turned out perfectly. I loved the final result and I couldn't be happier with my decorated gingerbreads
Just made this for the first time yesterday. It is a trust the process situation, but it worked! The icing tastes great and dried super shiny. You have seriously upped my cookie game.
*me anytime I need any recipe* checks preppy kitchen.. and you never let me down. Thank you for all your wonderful videos- I use them constantly!! Also appreciate that you show your mistakes and how to fix them!! You’re the best and we so appreciate all your videos!!!
Hi John I love watching you. I am 67 years old and have time to learn how to cook and you are my favorite !!!!
Hi John I get so intimidated using royal icing... U are jus so authentic and u jus gave me a confidence boost seeing u and your struggles in this video. Thank you sooo much.
i justt tried this today and i was able to make my very first royal icing. the recipe worked so well. i am extremely happy with the outcome. THANK YOU SO MUCH FOR THIS EASY TUTORIAL 🥰🥰
They look so adorable!! I'm so near my due date I'm not sure I'm going to be baking this year. I usually make a big batch and decorate them with my step son. They make great presents from a child to aunts, uncles, and grandparents. Last year he asked to give some of them to his friends! I found it adorable. I'll try to make at least a few, so he doesn't already feel our traditions are gone now that little sister is on the way.
Thanks for the video!!!
I love how when you messed up, you showed us and just took it off! That makes me happy because now I will know what to do when I mess up! Thank you as always!!
The background music at 10:24 is actually Brazil’s national anthem 😂 And I love how somehow it sounded very christmas-y and went with the video
Yeah! I was thinking that I'm crazy hahaha but I could also hear
I just noticed for the first time! lol I was like why do I know this
You made it look so easy! But was very helpful. My cookies never looked this clean & neat when my kids and I made. Now I have grandsons to try this with. Hopefully will be much better this time! Thank you for the helpful tips!
Perfect timing! My kids and I are doing cookie ornaments (non-edible gingerbread) and decorating with 3D paint. We will be making edible ones soon and the ornament decorating is perfect practice for royal icing.

Bellissima questa ricetta, la glassa sui biscotti è eccezionale, ottimo lavoro!!! Grazie per aver condiviso, nuovo amico qui🥰
I just tried this recipe for my gingerbread house gifts this year. It is a great consistency and held together really quickly. I will be switching to using this recipe from now on, thanks for the recipe!
I'm a culinary student and this really clears things up for me. Thank you!!!
The snowman was my favorite! And Brian stealing a bite...and then putting it back, made my day! lol
Last year I made your sugar cookies and they were PERFECT, everyone loved it, but I really messed up the decorating, the icing turned out toooo hard to work with and they all looked kinda weird, so thank you for this video, it was really helpfull
I think this all starts with your perfectly baked cookies. The shapes are so clean. I want to get your recipe and start baking these wonderful treats.
Thank you,John for your easy to follow instructions for royal icing...and how to pasteurized the eggs if one is squeamish about raw eggs!! Very good suggestion.
Aww, you resemble my younger brother so much!! You look like his long lost twin 🙂 even your demeanor and your calm mannerisms. I love watching you and love your recipes I’m about to make your snickerdoodle recipe and excited about it!!
I've never made Royal Icing successfully....until now!! Thanks so much for the clear and easy to follow directions. Have a great holiday!!
Thank you! I can’t find meringue powder where I live so I needed something “old school”, and this delivered! My kids are very happy with being able to frost their own gingerbread houses this year during a very boring lockdown! ❤️
You can buy it at Walmart in the craft section.
I'm not scared of royal icing any more. Thanks John. I used my oven on 50 degrees C to dry out the icing in 15 minutes. Turn the oven off as soon as you put the wet cookies in the oven though! Leave in the oven for 15 minutes and hey! They are perfect!
Thank you for showing all the great techniques. I've always wondered how people got cookies decorated so perfectly. Awesome job!
Omg I have tried to do this so many times! I can never get t consistency right and when I use pre made stuff my hands shake so bad! These tips will help so much. Thank you so much!!!
Sometimes I just use white on all my cookies. After they set, I add gel food color to a color pallet and use a high proof alcohol to "paint" on what I want. It leaves no alcohol flavor. It also looks very similar to a water color painting if your inro that. I find it much easier to decorate with the kids that way.
I love baking cookies, not really good at it though but it helps me to stress out. I've been searching for a royal icing recipe and yours it just perfect, thank you so much for sharing it. Greetings from Monte Plata, Dominican Republic🧡
Wow! John, thanks so much for explaining about the royal icing ... I could never get the right consistency and now I know why...you are my hero!!! Greetings from Roatan, Honduras!!!🌴🌻
I made icing last year that ran, they still turned out so cute. I loved them. I've been wanting to learn more so I'm glad I found this video.

Thank you for being so real with these! I've never used royal icing before so this is very encouraging. I'm going to practice Christmas cookies now so that it's not brand new and scary around Christmas. 🎄
Hi Chef, thanks so much for your excellent tutorial. I needed to brush up on my royal icing skills, and your super step by step process is fabulous to follow. Awesome. It's great that you mentioned the " drying out" , what a pro. Xx

Not gonna lie, I gave up decorating cookies because the Virgo in me got stupid depressed and sad everytime I flopped it. Aaaaaand then... I tried out your way of doing it and thank you so much, I made a ton for the family. Thank you so much.
I have been wanting to try my hand at making royal icing forever and still haven't. I have no clue why it scares me, and I have made the dreaded macarons! 😂 These look so cute. I shall be working on this for Christmas.
The toughest thing about royal icing is working with it before it dries. But when the right consistency, you can actually just smooth it on with a knife.
Did you try it this year?
@@MargaritaOnTheRox I haven't gotten the chance to as yet because I've been working at building my channel. But trust, I sure will because this is something I've always wanted to learn for my self because I just love seeing those fancy cookie designs! 😍 Thanks for the tip. Very good. There is also something called a scribe tool with a sharp point for decorating and smoothing out fine details.
Hi john! Let me just tell you , you are awesome and your videos is relaxing and not overwhelming. Thank you ❤
Exactly!
I just love watching your videos, always so funny😄 Here in Peru it's actually not very traditional to make Christmas cookies, or even bake something, so people here in Cusco don't own oven. Everything we want to bake, we bring to wood oven and pay for the service. I made my cookies in the pan and it worked great (just had to flip them like pancakes😂). Thanks for the recipe, I will try to decor my pan-cookies now😅
I love your videos. I already tried your sugar cookies recipe and it was so good didn't spread and taste good as well. I want to try decorating cookies with royal icing but my shaky hands is saying no to me HAHAHA But whatever I'll still try to make it 😂
He is so charming and those cookies are beautiful!
John, I love them all but I think the snowman is my favorite too. Great job you did. They are so perfect.
The apron!!!! Fabulous! Great video.
What a sweet human! Ready for Christmas cookies!
How come every time I’m looking for a recipe you have one that is literally perfect. Like, EVERY TIME! Thank you for being wonderful ❤️

This long video on royal icing is a little intimidating...but I really enjoy your teaching style. 😊🙏🏼
I just love you!! Thank you for sharing all these tips and ways to fix occasional errors.
I've tired to make royal icing many, many years ago but it only came out once. I was also taught to use meringue powder.
I've made your easier royal icing with corn syrup twice last year and I loved it.
I've got leftover egg whites in my fridge from your German Chocolate frosting that I've been saving.

Hi , how much sugar did you add in this recipe?
@@kitchenart7412 for the sugar cookie icing or German Chocolate frosting?
I tried making this! The lining worked well but I had to add a lot more water for flooding...maybe I whipped the first mixture too long. It worked out though! Thanks for the fun.
okay, found your comment while whipping the egg whites and sugar and i feel it's taking long already and it's still not stiff. how long before you reach the consistency for lining?
I love your videos so much , John! But recently I’ve had so much school work so I don’t have time to bake in the kitchen🥺 But I’m so excited for winter break when I can finally make your recipes🥰

You've taken away my fear of cutout cookies!! Thank you for being so REAL and encouraging!
I don't know if anyone noticed or said this, but the background music that starts at 9m58 is the national anthem of Brazil, my country. I thought I was mistaken, but as I paid closer attention, I saw it really is the Brazilian anthem.
