  • I used to can diced tomatoes every fall until I discovered that if I made a flavourful pasta sauce and canned that, I really didn't need to can diced tomatoes. Making pasta sauce is really easy and you really do not need a lot of fancy ingredients. Sugar, salt, pepper and balsamic vinegar for flavorings, basil, parsley and oregano for the herbs, and then bottled lemon juice to add to each pint to make sure that the sauce has enough acidity to ensure that it is shelf stable.
In this video, I use a KitchenAid mixer with the fruit/vegetable strainer attachment to skin and core my tomatoes. If you want to see how to prepare tomatoes for making sauce by blanching and then shocking with ice water be sure to check out this video • How to easily use a Ki...

Hello. I've seen this, and your other video about the two methods of seeding the tomatoes. I didn't know that the KA food grinder is part of the strainer attachment. I already have the grinder, so I'll see about getting the add-on parts. The last time I made chili sauce, I did it the old way. I was so annoyed when I was finished. I had been chopping the tomatoes by hand (making a mess), and then I noticed my KA food 12-cup food processor over at the end of the countertop. I wish I had thought of using it! Thanks for showing this.

I am glad you found the video informative! The KA food processor is amazing for processing tomatoes.

love your videos! i wanted to make sauce to eat right away with dinner with meatballs. i was going to dry the meatballs on each side and then cook it in the sauce for an hour. do you have any recs on if i should first simmer the sauce for 75 min first AND THEN cook the meatballs in it for an hour? or would you recommend me simmering the sauce WITH the meatballs from the start so its 2 birds/one stone? thank you!

Thank you for watching! If you are making the sauce to eat right away, I would make the sauce as the recipe states. I brown meatballs in the oven first and then add to the sauce and simmer for 20 minutes.

hi! was wondering what’s the sign that your jars have actually sealed?

If you are around when they seal, you sometimes will hear a popping sound. Otherwise, if you look closely, there is a bit of a button area in the centre of the lid. It should be indented when sealed.
