How to Can Spaghetti Sauce

  • It’s sauce time! This is a Midwest version of marinara sauce. Originally from local church cookbooks, the flavors are homey with a little zip. I’ve changed up and added to the recipe to make it even better. Personally, I use this for pasta, pizza, and some soups.

    Ingredients:
    - 25 lbs tomatoes, weighed then cored and seeded
    - 8 cups finely chopped onion
    - 4 cups finely chopped fennel bulb
    - 2 cups loosely packed basil leaves, finely chopped
    - 1 cup loosely packed parsley leaves, finely chopped
    - 10 sage leaves, finely chopped
    - 2 sprigs oregano, leaves stripped and chopped
    - 1 sprig rosemary
    - 3 sprigs thyme
    - 5 bay leaves
    - 1 tsp fennel seed
    - 1 tsp anise seed
    - 4 tbsp kosher salt
    - 12 oz tomato paste
    - 1/2 cup bottled lemon juice or citric acid (recommended by the USDA canning guide)
    Instructions:
    - Make a tomato juice by running the tomatoes through a tomato strainer, juicer attachment, or by peeling them and blending them.
    - Add the tomato purée to an extra-large heavy-bottomed kettle.
    - Stir in the prepared onion, herbs, fennel, spices, and salt. Bring to a boil, reduce to a low boil, and cook until reduced at least 1/4 or until thick like a sauce, about 2-4 hours.
    - Add tomato paste, if using, and cook an additional 5 minutes, ensuring the paste is worked into the sauce.
    - Add the bottled lemon juice (or citric acid) and stir to combine.
    - Pour prepared sauce into sterilized jars. Fit with lid and ring and process in a water bath. For quarts: 40 minutes, pints: 30 minutes, and 8 ounces: 25 minutes. Adjust for altitude according to the USDA canning guide.
    - Remove from the canner and allow to rest for 12 hours.
    - Store sealed jars in a dark area.
    Yield: 9 quarts
    Optional: this recipe can be halved for less output

    Iowa here too. Love your recipes. My mom never had a garden or cooked a lot of homemade stuff (only in the winter). I try to cook homemade for my kids and I have a beautiful garden. You make it so easy to do everything and I love your recipes.

    We live in Florida now, but lived in Muscatine and Dubuque originally. Iowa is the bread basket of the world for a reason!! My wife grew up on a farm just north of Dubuque. Dairy and seed corn. Her parents still have it, though are retired. It is a magical place.

    You can use a food mill and that’s what I just got. And his recipe sounds wonderful! I like the additional spices because I know that different herbs and spices can really make something taste great! And his personality and the way he explains everything is so refreshing!!     Fresh herbs- so good and easy to grow! I canned tomato sauce last summer, I was surprised how much it cooked down, much better than store bought. And no chemicals, just good food! ❤😊

    We have a tomato press and we send the skins though twice then dehydrate the skins and use them later.

    I just happened to stumble onto your UA-cam channel while searching for a rhubarb crumble and had to let know how much I love it. I’ve been “binge “ watching you tonight lol. I’m liking your canning. It reminds me of my mother who canned everything! We lived in the city but my parents originally lived on the farm. Growing up we ate from our garden nightly.
    My mother made mustard beans. Have you ever made these? If so, please record your recipe.

    This is great!! We have something similar called a Squeezo. You can use it inside, or outside on the patio. Which makes it super easy to just hose down the patio! We love all of your videos!

    I made spaghetti sauce yesterday from all my tomatoes from my garden. I add roasted bell peppers, onions, bell peppers, celery, fresh oregano, salt, garlic, cilantro and tomato paste and a touch of sugar. I add lemon juice then pour my cooked sauce in jars and water bath.

    I’m a first time canner and made this sauce using a food mill because the Kitchen Aid attachment is out of stock everywhere so I bought a food mill. Lol, it needed more elbow grease but I didn’t mind it. The sauce smelled wonderful, can’t wait to use it with your recipe for Eggplant Parmesan. Of course the eggplants are from my garden.

    Canning tomato 🍅 sauce or just tomatoes 🍅 themselves are so delicious! Tomatoes that are home grown from ur own garden is so delicious. There's nothing like them. Store bought is okay but not as good as they are when u do the hard work yourself at home. I watched my grandparents can 4 years! So delicious. We would have Tomatoes and macaroni soup 🍲 so delicious 😋!! My granny always added lemon 🍋 juice to her can tomatoes b4 cleaning the jar top rim itself but you are making sauce. She would can just garden beef steak tomatoes. I believe that's what they are called. 😆 Excuse me if I'm not correct but you get my point. Great job and recipe!

    i also add a bit of balsamic vinegar as well to give a bit more depth to the flavor profile when can spaghetti sauce.

    Just found your channel. Making the cranberry cheese log today for Christmas. And can’t wait to do the fig onion pastry…my daughter and I used to get a fig onion pizza every year when she would climb the Space needle to support Fred Hutch. (Seattle speak-lol). Can’t wait to do rhubarb jam. I already have a recipe for rhubarb custard pie. Love your stuff!

    For years I used to cook my sauce for 2-3 hours and endured many burns as sauce popped up while stirring. Then one day I decided to try my instant pot and I haven't gone back. I sauté my onions, then add my crushed tomatoes, and seasonings. I set it for 28 minutes at high pressure and that's it. I usually make a bunch and end up freezing it in containers. Jarring it seems like a good idea but a lot more work than I can handle these days.

    I need that attachment!!! Both me and my daughter LOVE spaghetti sauce 😋 but HATE the bigg chunks of tomatoes!!! Also my daughter's super picky about other veggies in the sauce like onions. With this attachment I can sneak onions into the sauce 😋

    I really appreciate this video! There aren't many canning recipes that start with milled tomatoes that I've been able to find. It's my preferred method of storing my tomatoes until I'm ready for them. I grow too many to bother with the blanch and peel method. I also never thought to use fennel, so I'm definitely going to do a test batch. Thanks for a great vid! Oh, one question, I know sage can go bitter when canning. Have you ever noticed that in your sauce?

    I'm thinking about making some homemade sauce. I normally buy Ragu Tomato garlic and onion sauce but your recipe looks like it would taste so much better than store bought sauce.     Nice! I'll have to grow more herbs next year! I always thought sugar was to cut acidity of the tomatoes, but I can see where the paste would do the job. Is your scanners All-Clad?
