How to make and can "Tomato Soup with Fresh Herbs and Lemon" | Get tips on water bath processing

  • I love growing tomatoes, celery, carrots, onions and basil, and so, it is fitting that I process and can a lot of this tomato soup for the winter. If you don't grow these vegetables in your own garden, you can find them readily available at the farmers market in late August or early September.
    It is worth canning these fruits and vegetables into soup when they are at their peak flavour. This soup does take at least half a day to make and can, because of all the cooking time, but in the middle of winter you will be happy to have that "taste of summer" in a jar.

    I plan to make tomato soup but I find it such a waste to put it through a food mill when you can just stick blend or use a blender to blend it all up that way there is no waste at all to put in the composter. It just seems like such a waste of the good vegetables you used to make the soup just to mill them all out. I understand you do you and I'll do me I just wonder if you have ever thought of doing it that way?? I will try this soup but I will blend all of it and make all of it into a soup. It will be nice and condensed and when I open a jar to make the soup I would add a little cream to it and of course a grilled cheese sandwich. Thanks for sharing your recipe and instructions how to make it, it looks soooooooo yummyyyyyyyyyyyyyyyyyyyyy!!

I aways make my canned tomato soup this way because when prepared according to these directions ( cansanity.com/?page_id=3154 ), it results in a shelf stable home-canned soup.

      @@cansanity Thank you for your explanation of why you do it the way you do much appreciated. I am going to give it a go but I will blend it all together so not to waste any of it and it will be shelf stable because I can pasta sauce and chili sauce as well as Salsa and they use some of the same ingredients and they stay shelf stable so can't see why the soup wouldn't.       @@cansanity I canned this soup doing it the method I explained by just stick blending everything all together and not milling it out etc and it turned out DELICIOUS and the texture is great!! I first just took the tomatoes and mixed them all in my Ninja blender and made them all into a liquid, skins, seeds and all. I did core the tomatos taking that hard end off. Then I also blended down all the other veggies in my Ninja blender so they were all nice and small. I did Not add olive oil to cook them in as you're not supposed to add oil to canning so I added a bit of water instead and I also didn't add the butter I figure I can add butter when I cook it to eat it as you're not supposed to add butter when canning either according to health and safety guidelines here in Canada. I also used bottled lemon juice and figured out the ratio that I needed. I then cooked it all down and then stick blended it and put it in sterilized jars and then water bathed it for 40 minutes as that's what the chart for my area said I should water bath it for. I actually doubled your recipe as I had 22 lbs of tomatoes. I ended up wiith 14 - 500 ml jars. Once again your recipe makes a delicious tomato soup and is going to taste great on one of our cold Canadian winter days to warm our tummies and add a grilled cheese sandwich it will be a nice comforting meal.     Are those quart jars? This looks like a good recipe. Curious if you have tried it with citric acid instead of lemon juice?

      No those are pints (500 ml). I have only ever used lemon juice.
