    I would have rehydrate the skins in a seasoned liquid, like bullion, vegetable stock or liquid aminos. Great job, it looked delicious!

      i'd love it if she were but i don't really have a problem that she isn't. i love that she explores essentially vegan food though. everyone can eat, "vegan" food, so it's all good.

    The moment my mom saw the sugar cane, she smiled so widely. She was named after a place known for producing and exporting quality sugar cane in my country and grew up drinking fresh sugar cane juice every day. I love tofu skin so I’m already happy from the start of the video. Cant wait to try this recipe on the weekend, will be cooking it for my mom! Thanks for introducing it to me, Emmy!

    So fun! I grew up, in Alabama, eating sugar cane. My Pawpaw grew it out back. He had a mill to grind it. MawMaw always had a cold pitcher of sugar cane juice in the fridge. She also boiled it down and made syrup. As a child I didn't care for it but now I love cane syrup. Drumsticks?! Wish Pawapaw were still here so I could show him this!

    My mother used to make this, but didn’t shape the tofu skins into drumstick shapes. They’d be rolled and layered, and then cut into strips. We called it “vegan duck”. And then there’s a stuffed version that has shredded veggies and mushrooms inside that we called “vegan goose”.

      Same. I’m not a vegetarian, but I do like meat substitutes and I am very interested in trying to make some. I’ve made seitan before, but I want to try some like this. I also love that Emmy has content that everyone can enjoy, even if they don’t eat meat. She’s so inclusive. 😊 Now I am craving a veggie burger!

      @@tarabooartarmy3654 exactly! I don’t eat a lot of meat and it’s likely because there are so many scrummy vegetarian options out there? If someone isn’t a vegetarian there’s literally no reason to skip trying vegetarian and vegan foods, sometimes they’re much much better!
      At this Thai restaurant by our house you choose your protein and I always pick tofu over beef, pork and chicken and I KNOW friends have thought it was odd, but they haven’t tried it and they don’t know how amazing it tastes :)

    There's a vegetarian/vegan restaurant in my area that makes those very drumsticks. I guess it's the seasoning, because theirs do taste like chicken. So good! Well done, Ms Emmy.

      You can absolutely find some vegan chicken bouillon and use that, or use a powdered mushroom seasoning for that umami kick.

    I have that same air fryer! I absolutely love it. Just fyi Emmy, there's a piece of cardboard inside the cooking area that you have to remove. You can see it in the video. I myself did not find it until after several uses when I kept noticing a weird smell, lol

    I feel like cutting the yuba into quarters and then rolling the thin corner against the sugarcane bone and letting the wide side build up the fat part of the drumstick would make forming them way faster, plus you could brush the seasonings on so you'd have good layers of it rather than concentrated pockets in between the ruffles of the tofu strips. Just a thought maybe 😊

      Also, maybe a hybrid version. Use the wheat gluten recipe to form the bulk of the drumstick, but wrap a layer of the tofu skin just around the outside to mimic the chicken skin. So you get more of a meat texture on the inside. Just a thought.

    This basically called chaap in india..cooked with different species and in hot angithi ( tandoor) served with lemon and raw red onions... it's all vegan and loved my many north Indian !

      @@GamingKittie786 l wish l bought an instant pot instead of a 20ltr (it’s not that big actually) silver oven-style which is just taking over too much kitchen space. I bet a lot of people around the globe have been duped into thinking they can’t live without owning one! Great marketing hey!! To add to that l also made the mistake & purchased a black egg-shaped one, heaps smaller in size, sitting in my tiny kitchen, but once again both were things that l could have done without because they have taken over my countertop! Time to get rid of them on EBay & clear out the electrical junk that l was convinced l really needed, taking over my kitchen area, & look into the instant pot you suggested. Thank you very much for your fab advice!

    IF I were to ever make these, I'd consider adding: liquid smoke, woostershire sauce, oyster sauce & possibly some toasted sesame oil to the basting mixture, along with both some garlic + onion powders.

    As someone who hasn't been able to digest many types of meat for several years now, I'm always looking for different ways to make "meat" more interesting. My son has helped a bunch by finding recipes and replacing the ground beef with ground turkey so I can enjoy dinner. I'm soooooo grateful I taught him to cook! A man who can cook well never go hungry!

      Check out recipes from other cultures, especially religious ones. If you want to avoid pork, check out middle eastern dishes. Don't do well on beef? Go Hindu. Have issues with vegetables? The Inuit got you covered.

      I've seen other folks suggest it, and I don't see why not. A vegetable or mushroom broth would work too. Just make sure its not a meat bullion of course 😅 sounds like a mistake id make while making this.

    These are sold in india at every dairy shops and it's called chaap , we make a curry with it and it can be used as a delicious chicken substitutes in chicken dishes .....I love it
    Ps:it's not wrapped around sugarcane sticks but some wooden sticks here......that's new

      I think its a little different than chaap. Chaap is made with the whole soybean. Yuba its like an extract of soy bean made during tofu making. It has a very meaty texture to it. It floats on top of the tofu.

      Completely different thing. Chaap is ground up soybeans that are then mixed with flour to create a dough, tofu skin is literally as the name suggests a type of "skin" or layer that forms on the surface when making tofu.

    What if you added the spices to the soy sauce first, then tossed the softened tofu strips in the seasoning soy sauce mixture, then wrapped it on the sugar cane then air fried them? Maybe get more flavor through out the “meat”?

      @@emmymade i had that same one before i dropped it and broke it. the plastic-y smell is from those little rubber stoppers on the side of the tray that you place the food on. People online said you can remove them and it doesnt impact the use of the air fryer at all. I removed mine and it worked just fine and never smelled anymore plastic

    Sugar cane is soooo good. When I was a kid in Brasil, I used to go to my uncle's farm and he has a really small sugar cane plantation, just for us to chew on it. I miss it so much now living in Portugal, I don't even remember the last time I had it when I was still in Brasil, but now that I'm far away I keep thinking about it 😂

    In Mexico we use fresh sugar cane for christmas "ponche" it's made with winter fruits (one called tejocote that doesn't taste like much and everyone hates it) and it's like a cute garnish that resembles a straw, some people, like me, do chew on it.

    I'm from a small town named Pahokee. We grow about 75% of sugarcane used in Florida Crystals. My father worked for one of the mills and her would bring whole stocks of cane. My entire family and I would sit on our porch and chew and talk for hours.

      I live in southeast tampa bay area. We used to grow a patch of sugar cane & it was a yummy snack when I was a kid. We would go out & pick fresh tomatoes off the vine & stand in the middle of the farm eating them. Anyway, one day my sister's horses got out & ate the sugar cane to the ground. And it never grew back lol.

    Thanks for sharing this recipe and for the extra tips. If I ever try this, I will use the suggestions that you gave. When I was a kid, we used to snack on sugar cane almost every day. It grew wild in the mountains where I grew up, so i had access to an abundance of it. Sugar cane cleans the teeth. I had the whitest teeth and never had cavities as a kid. It's ironic how sugar cane in its natural form is excellent for your teeth, but in its granulated form destroys the teeth and causes serious diseases.

    I’ve tried these at a grocery store deli in Hawaii called Down to Earth. I’m sooo excited to make these myself!! The texture weirdly reminded me of pulled pork. Delicious, but doesn’t taste like meat. So unique and worth trying!

    I felt like a half portion of bouillion and seasoning was too stingy. I would have added it all. Looks good. But it looks like a bit too much work. Emmy is always willing to put the work in for us.

    Seeing sugar cane reminds me of my childhood. We had laotion neighbors who had a huge garden with the best sweet corn ever, peppers, and sugar cane. They would cut a stalk of it for my sister and me and we would chew on it. It was wonderful!

    I can’t wait to try this recipe out. I have vegan chicken stock that I will use to flavor the tofu skin. Also I own the same air fryer. I recommend removing the plastic stoppers from the insert because no matter how many times I used it, it smelt like plastic until I removed the stoppers. Also the air fryer automatically preheats when using. So no need to preheat it manually. Thanks for showing this recipe!

The only difference was that when you bite into it even the inside has coloring and flavor. Do you think if adding a bullion to the water when hydrating it would help flavor it better?     I’m from Louisiana and when I was growing up there were sugar cane fields all around us. Almost every day during the growing season we would grab a stalk of sugar cane, cut it up, peel it, and suck the sugar out. It was such a treat.

      My ex loved pudding skin, so when we first got married in 1990, I used to make homemade cooked pudding and pour it in thin amounts into multiple pie plates so he could have pudding skins for dessert.
