Yeah I mean I'm veggie, not vegan, but it's been 12, almost 13, years, I'm not gonna pretend I remember exactly what various meats taste like. And being occasionally lactose intolerant (chronic health issues) I can tell you, many if not most vegans have definitely forgotten what dairy really tastes like. I struggle to find vegan cheese that's anyway close, at least in Ireland. Tesco own brand is the best I've tried but even that had a very strong sour yeasty aftertaste. But I've had vegan friends swear blind violife is spot on for cheddar, and it's just not.

I've got to agree. I appreciate it as a culinary experiment, but it's a LOT of work for something as ubiquitous as an egg. Counting in the shipping for the black salt, how it's processed (doesn't seem very carbon neutral burning salt with charcoal), and everything else required to source the ingredients... not sure what problem it solves really. It's not even going to provide you with much protein I believe.
Anyway, keep the odd recipes coming Emmy!

My advice is to just...stop eating mock-foods. It will never be better than a well rounded meal completely based on plants. It’s okay for a craving once and awhile, but 9/10 real, whole, veggie based meals will ALWAYS be better tasting and way better for your body.
I hope people don’t see this and think this is what vegans are eating on a regular basis, desperately trying to replace the animal products they cut out. That couldn’t be further from the truth.

After many years and several dashed hopes, I've learned to instantly doubt any vegan recipe that claims "it tastes JUST LIKE ____", especially when it comes to eggs. Eggs are probably the most difficult thing to replace because of how differently they react to various cooking methods. In my experience, egg substitutes are either an underwhelming pale shade of what I know real eggs taste like, taste good but nothing like the real thing, or just bad, with too many weird flavors. This one actually looked (and apparently tasted) quite good so that's impressive.
Imho vegan cooking would be better off trying to create things that are delicious in their own right rather than emulate non-vegan foods. That being said, however, I will be first in line if/when science ever figures out how to synthesize an egg without animals, cause god damn I miss eggs Benedict.
Thanks for trying this recipe Emmy, unique and creative use of the egg fruit.

You can make a tastier fried egg substitute by frying thin slices of tofu and sprinkling them with black salt. Your yolk substitute sounds as good as any I've heard, and you can cook it better by using a large injector or icing piper to pipe it into the center of the tofu slices before frying - they just need to be thick enough in the middle.
I recommend frying them in a pan with a blend of olive oil and vegan butter, or use the same pan you used to make vegan bacon or sausage for extra flavor.

    Love it! Some ideas:
I would add turmeric to the yolk part to further the deeper orange color closer to a yolk. It’ll blend well with the Black Salt flavor. Really well.
Also, I use Baking Soda often to neutralize or blockout the taste of coconut oil. You don’t need much, it helps neutralize the acidity of the coconut and this eliminates the almost soap like flavor you get. Not sure if this would work here with the milk... but thought I’d share just in case!

With this one, kind of thinking of keeping the coconut milk out if it, but might want to cook it in coconut oil. Also split the black salt into a one third, to third combination with a third going into the whites. Also with the dollop of yellow (yolk), you want to put a bit of white over it and turn it over to make an over easy egg. Love to see you try those suggestions and guidelines. Also fresh egg fruit would lend hand I suspect.

2:30 - Natural gas is actually odorless, or at least it should be since any natural odor comes from hydrogen sulfide which is toxic. The smell comes from an odorant, usually containing sulfur, which is added to help keep people's houses from blowing up. Kala namak has Iron sulfide which gives it the sulfurous flavor. Btw, Kosher salt is just salt with fewer impurities and larger, pointier grains. If you dissolve table salt in water the solution is cloudy because of the impurities, but Kosher salt dissolved in water is clear.

Regarding the yolk mixture, possibly mixing the corn starch to the same amount of warm water before blending into yolk mixture. Top yoke mixture on the egg white immediately and let them cook together, covered. I think that would allow the yolk to set up some.
