    herb tip: I have recently started buying fresh herbs. As soon as I get groceries home, I chop up the herbs, throw them into a ziplock bag or container, and put it in the freezer. Perfect every time!

      I do the same with seasonal vegetables (cheap). Half cook them and freeze them🙂
      Edit: freeze them flat and then shake it up, easy to use only the amount you want in your meal.

      Where I live you can buy frozen herbs, it’s actually cheaper then the fresh ones, but it is just what you described.

      I do this, I also freeze chillis 🌶 and then you can slice them frozen and you don't get the burny burn on your fingers

    Hi Bea! As a mediterranean myself I can tell you did a pretty good job. But we do eat meat, just not processed. The main focus is mainly cooking from scratch, using olive oil and plenty of veggies as you said. However, France is not mediterranean by any means 🤣 they are heavy butter lovers (aside from other things that arent mediterranean at all). If anything, this is not a diet but a lifestyle, we also take time to cook, eat and rest instead of eating processed foods and eating them in our cars or the work desk.

    Hi Bea! I wanted to say thank you for introducing me to Green Chef. I've been struggling all summer with my mental health and binge eating, and Green Chef has reintroduced the structure in my eating that I needed.     Herb tip: I hold the bundle like a bouquet, cut off the bottom inch of the stems and place the bouquet in a cup with about 1/2 or 1" of water in it. I just keep this bouquet out on my counter (or in the fridge, if I have room in there). Every few days I dump out the water, rinse off the stems, and trim another inch or so off the bottom of the stems. They last about a week this way!

      @@MsYanochka88 ummm... I suppose some things were similar but none of them felt like "ah yes I grew up eating that!" The Mediterranean is a large region though and these are supposed to just be the general rules of what most people eat over the whole region (the healthiest parts of their diets anyway).

      @@MsYanochka88 it is similar, yes. I would say Cypriots eat a lot of barbecue here - meat, simple seasoning with just salt and pepper in a pita with salad. Besides that, there are a lot of tasty vegetables and salads in the cuisine.

    My therapist was talking to me about the Mediterranean diet. She was saying that certain foods help with cortisol levels which can help with overall mood for anxiety and depression. I was interesting in trying the diet cause I’m always so anxious.

      I'm mediterranean and eat a mediterranean diet. Still anxious. What foods help with cortisol? That sounds too simplistic to me.

      I have anxiety but I go through phases where I clean up my diet and I do notice that anxiety is less when I eat more "clean" when I don't eat processed foods and added sugar, candy, cookies etc.

    Beatrice I have a gift idea for your mom: a meat thermometer. We use it regularly and it really increases my comfort level with cooking meat. My mom also overcooked everything and barely seasoned our food. This meant nights out at restaurants became my favourite food memories. Definately learning to cook has helped so much.

    Love your videos. Just one thing I found out when I cut out basically ALL salt was I created an electrolyte imbalance and was having heart flutters. Once I reincorporated some sodium into my diet, I felt better. Salt can be tricky but moderation is key, elimination is dangerous.

      Definitely! I had the same problem. About 4 weeks in, I couldn't figure out what was wrong and I grabbed a sports drink one day and felt SO MUCH better, so now I'm more careful about the salt levels etc :)

      Salt is a really important nutrient. Just make sure you get quality salt like Redmond salt, or a himalayan. Sea salt is okay but i've heard there can be micoplastics in them.

    Your video about trying out the Mediterranean diet came up in my recommendations, and your candid humor about everything is so refreshing. So many want to look or sound a certain way on social media of any kind. You, otoh, gave us your experience in a delightful, down-to-earth and relatable fashion. This is what this planet needs more of, IMO. And your canine companion is just adorable as anything, adding even more relatability.
    You have a knack for taking what might seem complicated at first, and breaking it down into more mentally digestible bits. I know that I have a tendency to make myself overwhelmed with a list of things I have to do in order to get healthy in an X, Y and Z way. (Seriously, I need a kitchen magnet that says "Wait! I need to overthink this!")
    Watching your video helped me feel like, "okay, I can achieve my list of healthier habits." 😁

    I like that you are really transparent and honest about how these foods actually taste. I love eating plant-based, but that doesn’t change the fact that some of the foods aren’t always “amazing” and sometimes you have to do a little more work to make them taste well. Some influencers make everything seems like it tastes like steak even though it’s a piece of kale lol.

    The key to a good muesli is adding stuff! I didn’t know it wasn’t a thing in the U.S.! During fall and winter I like having mine with 1/2 diced apple, 1 diced orange, cinnamon, almonds, oats (obviously), some semi sweet chocolate chips and either chia seeds or flax seeds. It is sweet enough for me but you could totally add some kind of sweetener. 😊

    Hi Bea! I just wanted to say that you are my absolute favourite person to watch on this platform. I am on the same journey as you and you and you are the only person I know who shares a realistic updates. I come from the south of Spain, so the Mediterranean diet is all that we know. You did such a good job! We do eat meat but not the processed kind, and also not as often as you guys do. I guess you could sum it up with "heavily plant based, but all with moderation" - salt, sugar, meat, alcohol... Ps. ABSOLUTELY love the cooking bits of your videos. I was watching with pen and paper!

    Hey, Bea! I love to cook with fresh herbs too and here is how I keep it waaaaay longer from going bad. I usually wash it, put it in a glass with water and cover with a plastic bag to capture any moisture. And keep it in the fridge for week or so for sure, sometimes even longer.
    You also can try to keep it in a damp towel in the fridge, but first option works better for me for sure.
    Or you can manage to buy some in bulk, you totally can freeze it chopped, not chives, but parsley, dill, cilantro for sure. And then just take as much as you need out from the freezer and put directly to you cooking meal or salad. A spoon of chopped and frozen herbs will be defrosting in few minutes.

    I worked for a Greek family-owned business for a while and they definitely ate really healthy meals. The owner was 76 but looked 52 and could lift, jump, and run without ever strenuously exercising. He always took a 15 min walk after a meal and encouraged all of us to do the same, he always had a bottle of wine with his wife for dinner. I wanted to mention that for the herbs, if they've got a thick stem like rosemary or thyme, you can keep them longer in a damp paper towel, the softer ones you can place root-end down in a glass of water for a few more days. Or you can preserve them in olive oil in the freezer, you can also dry them into your own blend for pastas, seasonings, and potatoes.

    Yesss Buddha bowls are delicious! My go to is a lemony mustardy dilly tahini sauce for the middle of winter. So bright and refreshing, thanks for all of the meal ideas from this video 💙🦕

I make sauces without a recipe and literally just add stuff to a bowl and mix it, but trying to visualize when I made it last, I'd say probably around 2 tbsp of tahini, 1.5 tbsp of mustard, 1 tbsp of lemon juice to 8 tbsp of mayo (or yogurt or sour cream). All depends on your taste and you can adjust however you want, but hope that helps!

    Your skin looks fantastic! I'm a chef- it's never, ever burnt. It's caramelized....😸 And as far as fresh herbs- what we do in the kitchen is chop up the herbs, put them in a small container, and barely cover them with olive oil. Those are for cooking, just get a bit every time you need. The olive oil will also be super flavorful. To extend the life of whole fresh herbs, you can treat them like cut flowers- store them upright in water in the fridge- or you can wrap them in damp paper towels and store in the fridge.

    Hey Bea, if you like the yoghurt and eggs combo, try a Turkish dish called Cilbir. It is incredible. Very similar to what you've described but instead of lemon zest and herbs, you heat up some butter in a small pan and put Aleppo pepper flakes in it with a splash of olive oil, then drizzle that over the yoghurt and poached eggs 🤌

    Hey! Just a little tip when you buy sourdough bread: Make sure that it's actual real sourdough bread that is made with a sourdough starter. Oftentimes, stores will call something sourdough but they just add vinegar (acetic acid) so that it tastes sour but it doesn't have any of the benefits. Also, stores will sometimes add sourdough starter but not let the dough rise for several hours like you're supposed to, but they just add regular yeast to save time and then it's basically just normal bread without the benefits...I know, they're sneaky and mean! You can always make your own sourdough bread. I have a really easy recipe if you are interested and it's way better than the store stuff

      @@gothichippielovechild3198 I'd highly recommend Foodgeek for learning how to make sourdough bread, or maybe the Bread Code. Also, a tip to make sure that the bread is truly sourdough is if there is an ingredient list, you should only see flour, water and salt. No yeast, because sourdough is just flour and water that were fermented by wild yeast that's present in the environment/flour.

      I can't make sourdough easily here in FL due to the heat and humidity, but in case someone is in a state where they have Publix, their sourdough bread is legit and it's delicious. Don't get their sunflower bread, though. It's so tough I finally just gave up and made croutons out of it.

    Wahooooo! I'm so happy this is good for you! I've been doing this since May (because my cholesterol got scary and the Dr wanted to put me on meds. I asked if I could PLEASE try something natural first, so she gave me 3.5 months to try). My levels are better than they were even 2 years ago before she got worried at all!!. I hope you continue to love it. I got most of my info from the heart and stroke foundation and other reputable resources too.

      Funny a similar story started my entire weight loss journey. My blood pressure was above average and I asked my doctor to let me try to lose some weight before putting me on meds. I ultimately lost 100 lbs and my blood pressure would be normal on one test, above average the next (I got a cuff to test at home). Turned out it was genetic and I got on meds.
      Oddly enough, I lost an additional 20 lbs (now at 120 lbs lost) and that did it for me. I started getting light-headed a lot because my med was causing my pressure to drop too much so my doctor took me off and asked me to keep testing my BP. It's been fine ever since! Apparently, 154 lbs and below is my sweet spot. If I get above that my body doesn't like it.

      @@heather7897 I asked my doctor if I could try the Mediterranean diet coupled with frequent gym visits, and switching to red wine only when I wanted a drink. So I've been following that and my liver and cholesterol numbers went to better levels than even 2 years earlier, before she was even worried. I hope you don't have to go on statins! I will if I have to in the future, but for now, these methods have held that off (with the added bonus of dropping 17 lbs and feeling better than I have in years hahah)

    I’d love an update on this after some time, especially since 2 weeks is definitely not long enough to tell the true effects, it takes 2+ weeks for your body to get used to something new. I’m glad you found something that works for you though. 🥰

    Bea.. I too suffered with anxiety and panic attacks for many years. After going onto a mainly Mediterranean diet about 5 years ago I noticed that I hardly ever have these problems anymore. I have found that sugar is a major factor in my anxiety.
    I have been following your journey (somewhat sporadically as I am not a huge social media fan) and wish you all the best for your journey to a healthier you. 🤗💕

    OMG! You work so hard at finding answers to your health and wellness. In this video you look better, more present, and I am so happy for you that there is a significant change in your weight that is making you feel better. I am going to look into the Mediterranean diet because I'm a diabetic that is struggling with health issues and diet. The food looks and sounds delicious!

    Thanks for the tips about fresh herbs. I was getting dressed before breakfast while watching this and you made me realize that I have herbs in my herb garden that I rarely think to use, especially for breakfast when I'm generally too hungry to think creatively. The garlic, chives, basil and cheese were awesome with my eggs, even along with my favorite food group of mustard.
    Don't give up on the herb garden because they are so much more economical and handy to have growing at one's own home.

    Hey, Bea! Not sure if I missed this episode, but if you haven’t already I would encourage you to get some labs done. I’ve had a lot of the same issues for the last few months and turns out I’m ✨severely Vitamin D and Iron deficient✨
    Incorporating more fish like you have been should help, though. Thank you for sharing your journey!

      Oh, ya, this is so true I know someone who's vit D and B12 levels were in the basement and they were depressed, moody, and full of anxiety. When they got their levels back to normal (prescrip D and B12 shots) Things changed 180 degrees and are happy and energetic now.

      Yep I was the same, I lost most of my hair and now feeling much better, started taking vitamin D in June 2021 and iron in July 2022

      a similar thing happened to me! I was trying new medication and the side effects were so much stronger than they usually are for most people. When I looked at my blood test results and saw I had an iron defficiency, I started taking an iron supplement and the side effects of the medication were milder. I guess my body was already weak, and adding the side effects of a new medication didnt help

    Lots of good ideas in there, wanted to eat even more plant based myself since I had watched a video on gut health and depression. Not sure if I would call Muesli mediterranean as such, but it is pretty nice - I like it better with plain white yoghurt than milk, also a pretty popular combination here and in Switzerland. Gnocchi and sourdough bread are a definite yes at any time of the day!!

    Spaniard here, cheese is in no way eaten in small amounts. You can't eat cheese in small amounts. What I've found is that we cook less with it (as well as with milk). For us cheese is more a side dish (like in a charcuterie board) or a tapa (small amounts of food with a beer before the big meal of the day).

    For the Müsli or Muesli you did it right. It's like an alternative to sweet cornflakes. Some people eat it with yogurt or skyr (a thicker kind of yogurt) or milk which can be cold or warm. I love to put some fresh fruit in it like bananas, fresh berries in the summertime and so on. :)

      I eat Müsli every morning with fresh fruit,
      nuts, cinnamon, hulled hemp seeds, ground flaxseed, cia, soy and oatmilk.

    So I’ve been on the vegetarian diet for 7 days now and am BLOWN AWAY with how I don’t snack anymore. I really get what you mean about these foods being sooooo filling. I’ve learned you can do a lot with beans! 😅

    Bea, I literally replace nonfat unflavored greek yogurt for sour cream and I personally don't notice a difference in the need for creaminess. I also make my almost calorie free ranch dressing with it. Soooooo good!
