  • My Jim asked if I could try and make airfryer doughnuts (donuts or doughnuts depends where you are from! :D) so I said yes come and help but noooo Jim doesn't want to be on camera. Fair enough, so I made them anyway and boy what a sticky mess I nearly got myself into.
Would I make them again? you'll have to watch and find out.
Have you made them with better results? if so please let me know the recipe!

    Thanks for watching
see you on the next one....

Proving in the fridge is a slow proof, that is why they say it's better overnight. it's said to give a better proof but a lot slower. proving outside (warm) is best for a 'quick' rise

Hi Kerry, I've made doughnuts from John Kirkwood video on YT, his recipe calls for an
no knead and strong white flour also to shallow fry in oil, I'm going to make again his recipe but coat in a little oil and airfryer in my Cosori Dual, yours did look nice though x

When my mom used to make doughnuts, she would put the sugar in a plain brown paper bag. As soon as the doughnuts were cooked, they were placed in the bag and shaken up. Maybe that works better than a plate?

i make the dough in the bread maker. then just do the 2nd rise in the microwave (using it as a proofing chamber) then cook in either the ninja multi or the halogen oven)

When you have sugar, egg, and butter in a yeast dough, I've found it never rises as much as a regular bread dough.

Another 'tip' I meant to say is, if you give the doughnuts a quick spritz with oil (I guess you could lightly brush oil on them too) then air bake them. still never going to be the same as deep fried but does give a closer taste. helps with browning too ;)

Maybe some seedless raspberry jam slightly warmed in a microwave spread over the top and then dipped in sugar may give them more of an authentic doughnut taste, and inject the ‘holes’ with the jam. I love your have a go attitude to things too. Take care. Gill X

      @@budgetcookinguk Choux Pastry
      Ingredients:
      80 grams / 1/2 cup bread flour
      14 grams / 1 tablespoon superfine/caster sugar
      130 millilitres / 1/2 cup + 1 teaspoon cold water
      50 grams / 1.75 ounces butter, cubed
      2 eggs mid, lightly beaten
      Chocolate sauce;
      80 millilitres
      / 1/3 cup double cream
50 grams / 1.75 ounces dark chocolate, finely chopped
      1 teaspoon honey
Cream filling 120 millilitres / 1/2 cup whipped cream
      1 tablespoon confectioner’s/icing sugar
      Directions:
Preheat the oven to 200ºC/390F and lightly grease a baking tray, pouring water over the top and taping to remove excess (you want water beads on the tray to create a steamy atmosphere during baking).
Sift the flour into a small bowl and add the sugar. Set aside. Place the water and butter in a saucepan over medium heat until the butter has melted and the mixture has begun simmering. Remove from the heat and pour the sifted flour and sugar into the mixture, stirring swiftly with a wooden spoon to combine until the dough no longer sticks to the side of the saucepan. Add in 1/4 of the beaten eggs and beat the dough until smooth, continue adding the eggs in the same manner until all have been combined. Take half a tablespoonful amount of the dough and shape into a ball with an opposing tablespoon and place onto the prepared baking tray, continue with the remaining dough and allowing 1 inch between the dough. Place in the oven and bake for 10 minutes. Increase the heat to 220ºC/430F, turn the tray around and bake for a further 10-15 minutes or until the pastries are lightly golden. Remove from the heat and place on a cooling rack, allowing to cool fully.
Combine the whipped cream and sugar together and fold together until smooth. Slice a choux pastry open slightly near the base and carefully spoon a tablespoon of whipped cream into the center until all have cream therein.
To make the chocolate sauce, place the double cream in a small bowl and heat over a double boiler or microwave until it’s smooth and hot, stir in the chocolate and honey until it is smooth. Drizzle the chocolate sauce over the tops of the cream puffs. Serve.
