Airfryer Heavenly Lemony Pie

- Jack has been working really hard these last few weeks (more exams to come after half term!) so I thought it would be nice to make something a bit special that wasn't a cake. I found an interesting recipe online that appealed to me in that it looked fairly easy and it was - the filling was absolutely delicious. It had an american crust so not knowing what that was, I got a homemade shortcrust pastry recipe from bbc goodfood website (all links below) first time making and I was pleasantly surprised. It cost 10p less than the ready rolled version in Lidl but I probably could have got a lot more pie cases out of it, if I had rolled it a bit thinner - rookie mistake!
The finished pies cost 68p each, not bad at all budgetwise when something similar in a bakery may cost between £2 to £3 each.
Hope you enjoy and thanks for watching...

Love lemon meringue pie but these look 😋😋😋❤❤❤
Ooh my mouth is watering 😃
These little lemon pies look very tasty, anything lemon tastes good to me,thankyou for sharing your time and recipes!❤
Aw that's lovely, thank you Denise 😀💕
Love this recipe Kerry. Just to let you know the closest thing to graham crackers over here is digestive biscuits xx
Ahh must be a brand name I suppose, thanks for that Traci😀👍💕
Hi Kerry; when I asked you what you work at I hope you don’t think I was being nosy, I think you work so hard for your family I can’t imagine how you can manage a job as well. Great admiration for you 😊
Aww not all all Margaret🥰🥰🥰 thank you so much as well!
Just love “taste test time”. Delicious 😋
Me too Hazel😄😋😋
Love all your videos. Thank you for great air fryer recipes ❤
Oh thanks Maria💕💕💕
Looks good and congratulation on the 7K
Thanks Steve😊👍👍
Yummy 😋😋xx
Nearest equivalet for us is Digestive biscuits, so a biscuit crumb and butter base just like cheesecake idea. But you went further and made your own shortcrust pastry, which although more effort is better for a filling like that. Just a few tips for the pastry, it was hard to roll out because you had left in fridge 3 hours I thik you said. Always rest and chill the pastry for about 30 - 60 minutes. If notusing right away (and you can use day or do after or even freeze), just tak eout the fridge and leave for a little while till softer but still chilled and firmer than when you originally put in the fridge. This and also flattening the dough to a thinner disc, makes rolling out much easier. For making several pies, you could also instead of a disc, made rectangular shape and roll out in a rough rectangle from that. Making it easier to cut out all the 7 in one or 2 goes. The pastry then needs to chill and relax again because of the rolling out, and 'dock' the base with a fork, making holes all over th ebottom then put in the fridge for 30 minutes. This helps with them not puffing up as much, shrinking, and less 'soggy bottoms;. Then do your blind baking like you did. Fill the rice up right to the top of the pastry case to avoid more shrinkage too. And you can freeze that left-over pastry like you said. Just wrap in pape ror cling film and place in food bag and label it. Then you can add to it over time and have enough for one big pie. Never tried the condensed milk version myself, need to try that.
Thank you very much Caroline, that was my 1st attempt ☺️ your comment was so huge I had to take 2 screenshots😄 great advice thanks again 💕💕💕
Love plot 25
Thank you Jenny 💕💕🥰
Yummy, I love lemon and make lemon tarts quite often. Chilling the pastry again for about 10 minutes before blind baking lets the pastry relax and they don't shrink as much. My late brother was a master baker, he taught me to brush the bottoms with egg white when they've finished blind baking and give them a couple of minutes in the residual heat. This forms a seal which stops very moist fillings making the bottoms soggy if you're not going to eat them all on the same day. Not much chance of that in your house with two hungry lads to feed!
Thanks so much Mary, this is so useful I've screenshot your comment for next time I make the pastry, will def try again 😀👍💕
Can't wait to try this Kery x
It really was delish Janis😋😋💕
Thanks Kerry another great recipe.
Thank you Debs!💕
Would be nice to bake your left over mixture without pastry Some people can't eat pastry x
waving from southeast Georgia
Hi Tonia in Southeast Georgia 👋😀💕
It’s like a cracker we would have with cheese, that they crush up and mix with butter for the base, I think you could use digestive biscuits instead of those.
Oh really? Thanks Sandra😀👍Bit like a cheesecake base, it did look a little like that in the pic
Kerry could let me know where you got your pie dishes from I have tried everywhere can’t. Seem to find any thank you love Dian
@@diancox8342 Hi Dian, these are links to the pie dishes I used (2 types), these are affiliate links which means amazon pay me a small amount if someone buys it (no extra cost to buyer!) No worries if not quite what you're looking for😀👍💕

Hiya Kerry.....they look yummy.....lemon is my favourite x
Thank you Sharon💕Lemon is the absolute best 😋😋
Yes they do look delicious I’m going to have a go
Thank you Chris! They really were, will def make again😋😋😋
Hi Kerry, the nearest thing we have over here to a Graham cracker is either a Digestive or Malted milk biscuits use them the same way you would use them for a cheese cake break them up mix with melted butter and line your cake tin with them, looks delicious 😋😋😋
Will have to try that next time thanks Malcolm, will make again as the filling was so easy and really delish😀👍
Kerry they look delicious
Thank you Lois😀💕
Wow they looked yummy. Fab video x
Thank you Jane!😀💕💕
Google says the best alternative here for Graham crackers would be digestives. We do use crushed digestives for a cheesecake base so I bet that would be lovely in this recipe. I'm going to try that! I love anything lemon 😁. I suppose you could also pipe meringue, made from the leftover egg whites, on top and blast with a flame gun thing to brown the top?
If you can make your own pastry, it's a lot cheaper than buying it and the more you make the easier it gets.
Homemade was 10p cheaper Diane, but I think the homemade one goes further as well😀👍
Yum
Yum yum yum yum 😊
ooooow Kerry ...x
It was delish Gail😋😋 will def make again
Just become a new subscriber enjoy your videos ❤
Aww that's great Linda, thank you💕💕
Fantastic Kerry will be trying these out without a doubt. I made scones the other day in the airfryer and they turned put very good for my first attempt. Keep up the good work xxx
Oh that's fab Jacqueline, it's great doing Airfryer 'firsts' bet your scones were delish😋💕
They really were, I was very impressed with only using 3 ingredients. It brought back great memories as the smell reminded me of my grans house as she baked scones daily for one event or the next xxx 💕
Hi Kerry, they look scrumptious. I like lemony things especially a lemon meringue pie. Could you possibly make one
Aww thanks Sandra💕 I will def give it a go, love lemon meringue pie😋👍💕
Kerry thank you so much for sending me details of where to buy the pie dishes also your pie filling looks delish. Did you do a vlog on your pie filling would love to have it. Love dian
Hi Dian, the making of the pie lemon filling is in that vlog👍👍 ingredients listed at the beginning and end of the vlog. Lemon filling was incredible😀😋😋😋
Another yummy sweet treat. Tried making pasty once done it several times and still ended up looking like a patchwork quilt. I use condensed milk when making caramel shortbread. It's very sweet. Hope some of your produce from your allotment will soon feature Kerry.
Thank you Julie, I didnt think to allow pastry to get to room temp🤦♀️😂 oh yes, def hope the veg grown at the allotment gets used on the channel👍👍
The lemon pie looks delicious
What are the egg shells for?
Good girl kerry, well done for attempting your first shortcrust pastry infront of us all,BRAVE GIRL❤. Piercing the bottoms with a fork will help the pastry remain flat. Also try using ginger nut biscuits with melted butter to form a crust.🥰👍👏
Aww thanks Trish💕, a few rookie mistakes but I will def try again💪😄
Graham Crackers replace with digestive biscuits cheesecake base great video thanks
Thanks Steve😀👍👍
oh my a great pie ,cant wait to try it, its favourite for sunday lunch. oh by the way ,graham crackers are rich tea biscuits, and i sometimes use digestives. well done again

Graham crackers are digestive biscuits
Just seen this first video of hours first time tonlghf....what where your egg shells for.😘😘😘😘😘😘
Did u fork the pastry it stops it shrinking Kerry xx❤ they look delicious x
😄I didn't know to do that Lisa but thanks for that, I will fork next time😀👍💕
Yes darling prick the pastry all over and the sides with a fork. Xx❤
You enjoy 😉 19:05
Oh I did Keith 😂👍👍
@Budget Cooking UK well that second bite did say it all. Keep up the fantastic work you do and keep them videos coming 👍 👏 😀
Graham crackers , are a bit like a digestive biscuit , so that’s the English equivalent, we had them when we went to florida , well the daughter had s’mores round a bonfire , and they use these Graham crackers with the hot marshmallow inside , ohhhh there addictive but sickly lol . My hubby would love that pie
@MrAbletospeak do you not have digestive biscuits in wales
@MrAbletospeak then use mcvities digestive , or shop brand make
Someone said US people pronounce it 'gram' rather than 'gray em' 😄funny ol world
@@budgetcookinguk yeah it’s gram crackers lol .
Is there no end to your talents lovely lady love all your videos. ❤
Aww thank you Susan☺️☺️💕💕💕
Oh these look fantastic Kerry must try them. However as everyone has mentioned digestive biscuits as a replacement for Graham crackers there is a distinct lack of own brand digestives in the shops . Mcvities are now £3.00 for a twin pack it's ridiculous and I am staging a one woman boycott lol. I have trawled every store locally and have been unable to find any at a fair price.
Thank you Karen😀💕 that's really interesting re mcvities double pack: 3 quid!!! Shocker. I read your comment earlier and whilst in lidl thought I'd check how much digestives (own brand) cost - 55p, they used to be 32p back before CoL crisis. Branded foods has always been expensive but now it's off the charts🥴
Graham cracker is just our digestive biscuits hope that helps
It does thank you😀👍
@@budgetcookinguk your welcome
Thanks poor boy's and I suppose poor old Al will be forced to eat one when he gets home from work lol 😆 😜 😅 you just hit Maureen's soft spot anything lemony 🍋 😉 I suppose I'll have to teach her how to make it now 😉 lol 😆 😉 😜 I laughed when you said how hard it was to roll the pastry you just got it out the fridge and it had butter in it I thought that'll teach ya to let it get to room temperature 🌡 😄 but then the BOSS said no that's how she does it 😄 😉 😜 anyway absolutely brilliant video again and looking forward to the next one 👍 😄 😉 😀
Oh Jim I tried to tell the boys and Al that the pies were awful, they didn't believe me😂 haha I didn't realise you're meant to let it get to room temp, rookie mistake no999 lol😂😂😂
Oh and thank you Jim for your superthanks!!!💕💕💕💕
@budgetcookinguk I did try to do the super thanks on the other channel plot 2
5 but couldn't find the super thanks .

Evening Kerry
👋😀💕
Hi Kerry was wondering where do you work?
Cannot say Margaret re safeguarding, plus they won't like it👍👍its over lunchtime so is ideal for youtube commitments
Just a tip, you’re not supposed to handle the shortcrust pastry so much.
Thank you Susan, first time trying - will remember that next time😄👍👍
If you're saving those eggshells for your pot plants, don't wash them because the remnants of egg white provide valuable plant nutrients. Store them in a sandwich bag to keep the smells in, and scrunch them up to save space.
Whole eggs that have gone bad can be used in the same way. No need to break them open, just put them in a bowl of water. - Good eggs sink, bad ones float.
BTW: Where did you get your grabby things, Kerry, and have you got a link for them please?
Oh thanks Nigel, top tips there😀👍
I got it from aliexpress, significantly cheaper than Amazon inc cheap postage, just have to wait 3/4 weeks for delivery. Fast becoming my most used & favourite Airfryer accessory 😃👍
www.aliexpress.com/item/1005004334145924.html
Graham Biscuits are our Cream Crackers which we eat with slices of cheese!
Ahh thanks Joanna😀👍💕
It's a funny thing although the crackers are spelt Graham all Americans no matter where they're from even including regional accents pronounce them as Gram 😇
Oh that's really interesting Bill and quite funny too, maybe we are saying "gray em" wrong😂
I guess stein mybutter Kerry
Hi Kerry are you allowed to say what type of work you do?IE field xx 😘
In an educational setting, over lunch time Patricia 😀👍
I always make my own shortcrust, little tip, try using 3oz butter and 1 oz lard makes it very short. Also if your pastry had only been in the fridge for half an hour it would have rolled out easier. If it's in a few hours leave it a short while out of the fridge before you roll it😊
Ooo great tip, I have lard so will try that next time! Thanks Janet😀👍💕 yea rookie mistake with the pastry re cold etc😄love the comments section for learning👍👍💕
Plus when you get you pastry to a ball just use your hand to flatten it a bit, that forms a disc and when you remove it from the fridge because it is already thinner it will be a tad easier to roll! XxX
yummy. Mid week decadence lol
Definitely Beth! 😄😋😋💕
