  • well trying to properly score bread with my new toy - a BREAD LAME!!
    always room for improvement and I cannot wait to have another go. Really loved the addition of Rosemary to the bread. More flavours planned, because I am dying to practice with my new bread lame.

    Rosemary & Olive Oil Artisan Bread Ingredients
    500g strong white bread flour (plus extra for dusting)
    1 tsp salt
    1 tsp black pepper
    7g dried yeast
    2 tbsp fresh Rosemary, roughly chopped
    2 tbsp Olive oil
    Tip flour, dried yeast, salt, pepper & chopped rosemary into a large bowl - mix to combine.
    Boil kettle and pour 100ml into a jug, add 200ml cold water (water should be perfect temp) add olive oil to the jug.
    Make a well in the centre of the flour and pour all the water into the bowl. Mix until roughly combined.
    Dust surface and scrape out the dough onto the floured surface. It will be rough and sticky.
    Oil bowl and set aside.
    Dust dough and start kneading, push away fold over, turn and repeat. You will find your own technique. Knead for 5/10 mins and pop into oiled bowl, cover and pop in a warm place for a few hours.
    The dough should have doubled in size, scrape out onto a floured surface and knock back (gets rid of air bubbles) shape into an oval shape and cut in the middle (if making 2 loaves) shape each into a round (or play with shapes if you wish)
    Pop onto a floured crisper plate or baking tray (also floured) and leave to rise for 30 mins/1 hour.
    Once it's risen, dust with flour and score with a sharp knife or blade. Let your bread creativity take over!
    Ninja Dual: BAKE setting, 200c/390f 15mins, turn over for 3 mins to finish bottom off
    COSORI oven: BAKE setting 200c/390f *18/20+ mins, add a few mins to do the bottom if you think it needs it
    *for a thicker crust 25mins should be good
    other AFs: same settings/temp as above and similar timings - just check 5 mins before end just in case and you may need to add mins
    Leave to cool completely before slicing and ENJOY!

    They both looked great. You can't beat the taste of home made bread. I always used to make my own but I am the only one who eats bread and that's only very occasionally, even though I love bread. Ten out of ten.

    I understand dried active yeast must be bloomed in water or milk. Easy bake or the many fast acting yeasts go straight into the flour.

    You’ll have to make your own butter to go with the bread. John kirkwood has a couple of butter recipes that I’ve been making for a few years. Lovely salted butter. I then buy nordpak from Aldi to use on mashed potatoes etc.

      I've seen that butter recipe on John Kirkwoods channel 😀👍👍amazing! He uses a stand mixer, I've only a handheld mixer (need a stand mixer lol) not sure if it would work with my little handheld one. Birthday has been and gone, but I'll start dropping hints for xmas 😄👍

    Jack the Baker says to make your cuts with your blade on the diagonal and not to cut straight down. He has a video on it.

    Don't panic about your scoring it'll come good with practise?for crunchier crusts spritze the loafs with water just before you shut the door/drawer to cook?they still looked lovely?from BIGMICK IN HULL

    I make bread buns in my Ninja and do 15 minutes on the top and 5 minutes on the bottom. I always put the yeast in the warm water with a tablespoon of sugar and leave for 15 minutes before making the dough.

    Both bread designs look great as well as texture. Slash out word Val for Valerie..the other one slash US.fir your family.😂. Seriously, with your artistic art work, im excited to see other slashings. Love that your window sill and the netting allowed for a nice rise. Oh, you look great in the plum colored top 😉.

    Looks gorgeous. Amazing bread- looks delicious and such an easy recipe too.     Very well done Kerry ! I have a couple of small sourdough loaves in the ninja as I write and I scraunched the top of them with an old , old blade . You have persuaded me to get anew lame from Amazon! Your loaves look lovely, I think you did really well.

    I use my oven with the light on to proof my bread.I seldom preheat the oven, just turn it on with raw bread inside. I remove bread from pan and finish cooking bread on the oven rack to ensure underside is done.Sometimes I have a pan of boiling water in oven while bread is baking. Your bread looks amazing!

    Costa coffee or whatever coffee shop you prefer wood stirrer and a sharp razor blade. A lot cheaper than a lame. Plus refrigerate your dough 20 mins before scoring and you'll get better results

    Digital thermometer probe ..less than 15 £ ish.. bread is done at 87c. Eases the tension . ..

    Looks delicious! I bet you save a fortune baking your own. I was with a friend in M&S and she picked up a teeny tiny sour dough loaf and it was £4.00!! My Dada always shaved with Wilkinson Sword razor blades. Not sure if they still make them. Its all safety razors today

    It all comes down to practise. One or two scores without being too heavy handed is usually fine and don’t go too deep.

    Evening Kerry, wow, those loaves didn't half fairly rise. I can just imagine the smell from your kitchen when they were cooking 😋😋. I need to find a suitable ww bread recipe. I've got wholemeal bread flour. I just need to work out if it's better for me to make my own 🫣. Practice makes perfect with the designs. Oh, clover is my favourite, not that I eat it now, lol. Would you belive that's the recipe I've got saved, going to make it this weekend.     Kerry your bread looks amazing and you will get better with the scoring to love the tool you used think it would also work with a knife to but the bread did look so soft and fluffy to bet it tasted has good has it looked

    Well that blade was sharp, boy you would not like your fingers around thst would you. Hehe but the bread looked delicious. Thanks for sharing worth a go , but for me without that blade hehe first attempt looked great. I think sun dried peppers would be nice just a little added .

    Great video as usual, liking the way you break down the costs, easy to follow instructions, even for someone like myself, 😁, wondering if you've done a marmite loaf yet, as every time I walk past Winnie's bakery in Weston, my mouth drools at that lovely marmite marbling inside the loaf, bit too expensive to have regularly.     I’ve got one which I ordered from John Kirkwood online shop but not sure the correct way to pronounce it I’ve heard it pronounced Lamé or Lame 😊 either way the bread looks delicious 😋😋😋

    Most double edge razor blades get four and a half stars on amazon but the most popular that I've know over the years was always Gillette or Wilkinson Sword,the loaves look brilliant Kerry and your cuts are great,practice makes perfect,another great video Xx

    Looks really gòod Am I being a bit lame 😂 I cant see recipe or the lame listing? I test my bread internal temp when done 93 deg cel. 200 f, well worth buying a thermometer ,takes the doubt out of my baking in air fryer ,for loads of things .

      @@budgetcookinguk Thankyou fir recipe ,I love experimenting with my ninja ,it has a steam option ,that is good for bead,my only problem is top burning a bit ,have to place a tin on top halfway through . Love your channel, thanks for your really informative demonstrations.Have you tried the bread over night version its virtually no needing ,all the magic happens while we sleep.

      Hi Kerry, I was thinking of making the dough in the evening, then leaving in the fridge overnight, this would be after the first proove.
