      I started cooking when I was very young. I just stumbled upon his videos now and am going to share them with my father who is 65 and taught me everything tomorrow. I did not know he passed away as I am new here but I will say, wonderful energy and I appreciate all that he is teaching me. Much love and RIP Daddy Jack!

    I love his no BS approach! No fanfare, no beautiful kitchens with scripted processes and carry on. He makes cooking look really easy with easy to find ingredients. Those pans must be like his children. An extremely likable character. RIP paisano! ✝

      Ich komme aus Deutschland und habe ihn Abonniert weil er einfach sehr sympathisch ist. Habe das einfach mal angeschaut und dachte mir schaust mal die Kommentare durch. Wirklich sehr schade sehr traurig. Hätte ich das Geld gehabt währe ich in die USA geflogen nur um einmal dort essen zu gehen.

    I am the guy from Chicago who called him and suggested to him to make chicken vesuvio a few months before he sadly passed. he was a very nice man. he made my chicken France better. I miss his videos. he had a lot more videos he wanted to make. I wish I could of tasted . it looks good. thanks chef.. Tony c.

      Hi Toni I’m from Chicago as well & i love any type of vesuvio. Yes Daddy Jack was the best I watch his videos all the time. I have a great place for vesuvio it’s on 24th & Oakley maybe you e been there, Baccinalias 2417 S. Oakley. I miss Jack so much just like all his fans. Love ya Daddy Jack RIP! I bet any money you have a golden stove, golden skillet, and everything the Good Lord promises us & you deserve it God bless Daddy Jack!!

    I feel like I'm entering a 1960's Italian American East Coast story whenever I watch these episodes. It's like Jack is caught in a time loop where he's just repeatedly making delicious food whilst his buddy records him and they wait for 'Paula' to arrive.

      @@DavidRomero-cv7nx Probably a Sauvignon Blanc since it's dry. You can get dry cooking wine but it's not as effective as actual dry white.

    I made this dish the other night and it was delicious. I just discovered Daddy Jack a few weeks ago and can’t get enough of his videos. He is clearly such an expert at his craft and you can tell the love and passion he puts into it. It's so calming to watch him cook and I love the way these videos are shot. It's real stuff. I was sad to hear that he had passed on. Much love to his family and friends. Thank you Daddy Jack. I’ll be cooking up your recipes for years to come!

      Prayers for you!!! I too am going through chemo treatment. Having a rough night on Super Bowl eve.
      I also watch Daddy Jack videos to help me deal with my treatment on many sleepless nights.
      Don’t need to tell you that loss of appetite has been an issue. Sometimes his cooking inspires me to try some of his dishes.

      @@randymiller3949 I live in the hills at 2,200 feet. North Georgia. The hillbillies eat groundhog or bear meat before chemo. A lot of it. Don't know why it works but I know it does. Come out of chemo like nothing. And yes, Deliverance was filmed here. LOL!!! People live off the land here!! I always had until I became crippled.

    I like how he uses a short chef knife as his do all. It mimics a small deboning knife at times and he's able to use it for everything. No posturing. Form follows function as it were.

    I find this channel so whoelsome, just to see a man doing what he love in the place he built from scratch, and with style.     Just made this one tonight with some chicken legs that needed cooked. It was fantastic. The Red bell pepper really made it for me. I also added a handful of baby carrots for extra color. One day I'll remember the green onion!

    Daddy cross contamination is more like it. I've never seen such a good chef be so haphazard about cleanliness. Same dirty rag for everything. Hands, counters, never washed once in any episode. Great cook.

    I just recently lost my brother (57 years old) who lived his life always enjoying food and the many different ways in which he would meld together ingredients. Watching you reminds me of him- which is a good thing! Thank you for your passion around food.food is the key to into someone’s heart and soul.

    I just happened upon this channel this morning, never heard of him. The other video I watched was of him mom's chicken ala king, and I thought how weird that there is a restaurant in CT named Daddy Jack's and thought how could it be that Dallas had a restaurant of the same name. I thought it was odd that the interior while them sitting at the bar looked similar to the Dallas location, so I looked him up. Low and behold, the same guy. In '93 I moved to the M-Street area off Lower Greenville Avenue in Big D where Daddy Jacks was located. I had heard of the restaurant for years and decided to give it a try. It was fabulous, i was really sad when the restaurant closed.

    I'm noticing a marked improvement in the video quality and shooting in general. Liked the "ballet" as we get to see another view of the kitchen. More of that footwork, please! Great job all around.

    Second time making this dish, and it just gets better and better... I'll continue to cook Daddy Jacks recipes because he was such a gift to us in many ways, but by leaving these recipes, they'll always be a part of my cooking repertoire. Thanks, Jack R.I.P.

    I'm not an expert, but I think Chef Chaplin has a better feel for the dishes he's cooking and with the sauces than anyone I've ever seen. Makes it look easy but it's not.

      some people can sight read music... but some can hear the notes on the sheets before it's even played. Capt Jack can taste the flavors in his minds eye. Not the healthiest... but his recipes are sure delicious!

      The knife hole controls how much you use so you don't over pour, good olive oil isn't cheap especially in the amounts restaurants use it in, Jack is very smart and frugal with his money which is part of why he's stayed in business all these years
