I started cooking when I was very young. I just stumbled upon his videos now and am going to share them with my father who is 65 and taught me everything tomorrow. Another winner Jack, I saw another Vesuvio recipe from a place in LA called Mama Cozzas where the guy used the same ingredients you did but added an Italian sausage cut up and a side dish of fettuccine alfredo
Just made this one tonight with some chicken legs that needed cooked. It was fantastic. The Red bell pepper really made it for me. I also added a handful of baby carrots for extra color. One day I'll remember the green onion!
I just happened upon this channel this morning, never heard of him. The other video I watched was of him mom's chicken ala king, and I thought how weird that there is a restaurant in CT named Daddy Jack's and thought how could it be that Dallas had a restaurant of the same name. I thought it was odd that the interior while them sitting at the bar looked similar to the Dallas location, so I looked him up. Low and behold, the same guy. In '93 I moved to the M-Street area off Lower Greenville Avenue in Big D where Daddy Jacks was located. I had heard of the restaurant for years and decided to give it a try. It was fabulous, i was really sad when the restaurant closed.
This man has soul. Don't be fooled by the seeming "simplicity", watch and listen closely, great advice about how to cook and run a kitchen. On my list.

The knife hole controls how much you use so you don't over pour, good olive oil isn't cheap especially in the amounts restaurants use it in, Jack is very smart and frugal with his money which is part of why he's stayed in business all these years
I miss Jack and his humor. I came across him and I watched as many as I could. He loved cooking and you could tell he loved people. I Retired from Law Enforcement in 2002 and wanted to go to cooking school. Couldn’t believe the tuition fees. It was a slap in the gut when I learned this gracious, humble, and heart of a giant had passed away. He always talked about his girls. They were right, the restaurant wouldn’t have been the same without his presence. RIP Jack.
The next time you come back to Chicago, ask someone how Chicken Vesuvio is made, or better yet order it in a restaurant. What you just did here is closer to Giambotta than Chicken Vesuvio, but it's really neither one. Where's the garlic and lots of it, including roasted whole cloves? They are the basic taste of the dish. What are bell peppers doing in it? I've never seen them in Chicago and they would drastically alter the taste. Peas are a good garnish, not green onions. Lemon wedges or halves, roasted, are missing. The potatoes should be wedges not cubes but I'll give you a one-time pass there. Try Tufano's Vernon Park Tap in the old neighborhood on the Near West Side for starters.
I just found out today on Jack's passing. I really feel terrible about hearing this. My condolences go out to all of his friends and family. I really enjoyed watching his cooking videos.

The knife hole controls how much you use so you don't over pour, good olive oil isn't cheap especially in the amounts restaurants use it in, Jack is very smart and frugal with his money which is part of why he's stayed in business all these years

I miss Jack and his humor. I came across him and I watched as many as I could. He loved cooking and you could tell he loved people. I Retired from Law Enforcement in 2002 and wanted to go to cooking school. Couldn’t believe the tuition fees.
It was a slap in the gut when I learned this gracious, humble, and heart of a giant had passed away. He always talked about his girls. They were right, the restaurant wouldn’t have been the same without his presence. RIP Jack.

The next time you come back to Chicago, ask someone how Chicken Vesuvio is made, or better yet order it in a restaurant. What you just did here is closer to Giambotta than Chicken Vesuvio, but it's really neither one. Where's the garlic and lots of it, including roasted whole cloves? They are the basic taste of the dish. What are bell peppers doing in it? I've never seen them in Chicago and they would drastically alter the taste. Peas are a good garnish, not green onions. Lemon wedges or halves, roasted, are missing. The potatoes should be wedges not cubes but I'll give you a one-time pass there. Try Tufano's Vernon Park Tap in the old neighborhood on the Near West Side for starters.
I just found out today on Jack's passing. I really feel terrible about hearing this. My condolences go out to all of his friends and family. I really enjoyed watching his cooking videos.
