Yes vary sad, who'd have thought making food with a lot of fat and cream making you morbidly obese would be bad for your health? Oh and the french traditionally thicken their sauces, especially chicken stock or white sauces, with a beurre marnier not bloody egg and potatoes.

My mom gave me a cook book several years ago from the early 40's I didn't know why until I started going through it, all the recipes I remember my grandmother cooking years ago were in it. I come close to copying but not quite.
With that ‘ Magic Recipe Box.,’ he could open a separate diner ... ‘Momma Jacks Diner ‘ and use 7 recipes for a week, then 7 different the next week, then start again and mix up the cards and Bammmmm 💰💰💰💵💵💵

My grandmother in law who didn't remember anything recent and usually thought she was 40 never had the opportunity to play the piano for years until at a family reunion there was a piano in the room and she played a bunch of songs from memory, it was the happiest I had ever seen her. I wished we had gotten her a keyboard for her room to be able to play I think she would have loved it. My grandpa also enjoyed listening to music pretty well all day, he wasn't as bad off but couldn't remember anything recent. Anyways if you look into music and it's effects on people with Alzheimer's there is some cool videos and info out there, maybe it could help your father even just a bit. God Bless

I remember when I first heard of Jack's passing, this was the first video I thought of because the little homage he said about his mom towards the end was so fitting of how I think all of us feel about Jack. Just like the cards help preserve the memory of her, these videos do the same for Jack. And I love him showing a master chef's best trick at 14:20. Full understanding of the word optional ;)

Funny how in French (Quebec and France) we call it "Poulet à la Reine" which translates to "Chicken à la Queen". Go figure! Btw I love your wholesome, oldschool cuisine style, Chef.
Aksel Hanssen it is actually a smaller knife. It’s a 6” instead of the traditional 8” chefs knife. The 6” is a work horse and is very common in a professional kitchen.
@@mikeyb4704 I only used two knifes, filleting knife and 10 inch kitchen knife, victorinox sharpen up very nicely. That being said, we had quite large chopping boards, i imaging a smaller knife would make more sense when your board is that small

"Mother sauce" is a cooking term that refers to sauces that can then be made into other sauces. They are the base sauce that can be doctored into other sauces. It doesn't refer to our moms ;) They were defined in the 19th Century.

This dish was really popular back in the 70's and 80's in New Orleans but now has fallen by the wayside..Thank you for showing this amazing recipe..You're an amazing cook and really know the classics..
Chicken Ala King is one of my all time favorite meals... ...poured over pasta, teamed with toast, relaxing on rice, mixed with mashed, basting upon biscuits, dolloped on dumplings, found on floor lol...seriously though, over some thick garlic toast is my favorite. Good video as always.

My grandad was a company Sargent major in 1rar infantry and tought me the value of family who fight and die for each other. I love my family, family and food keeps us all moving forward. "Mother sauce" is a cooking term that refers to sauces that can then be made into other sauces. They are the base sauce that can be doctored into other sauces. It doesn't refer to our moms ;) They were defined in the 19th Century.

Chicken Ala King is one of my all time favorite meals...
...poured over pasta, teamed with toast, relaxing on rice, mixed with mashed, basting upon biscuits, dolloped on dumplings, found on floor lol...seriously though, over some thick garlic toast is my favorite.
