Wonderful recipe. As a side note. I'm looking at your bracelets. I remember my neighbor wore them when I was young. I also notice other Mediterranean people wear them as well. Really pretty and gold rarely devalues. lol

@@roville225you may find that if your flour it first and your oil is hot before putting it in, it doesn't absorb as you describe - try it! :)

Yes, it does absorb a lot of oil. Sometimes salting the eggplants for about half an hour to an hour, then letting them sweat, they absorb less oil.
