WATERMELON RIND PRESERVES

    This Recipe Makes about 2 pints or 4 half pints
    Ingredients:
    7-8 cups cut up rind
    3 to 4 1/2 cups sugar
    1 lemon deserved, peeled, chopped
    Or 2 t. Lemon juice
    1 t. Cinnamon
    Remove Green rind, cut up watermelon into 1/2" pieces
    Cover and coat with sugar, let sit for 20-30 mins
    Stir and let boil for 2 hours on low to Med-low until reduced down (see video)
    Mix in the lemon juice and cinnamon, stir and cook for 10-15 mins
    Ladle into jars, wipe rims, lids and rings to finger tip tight
    Hot water bath, covering with 1-2" of water above jars, for 15 minutes
    Remove from water bath, cover with towel, let sit over night or about 12 hours to cool completely and seal.
    Any that do not seal, place in fridge and eat within 1-2 weeks.

    Thank you so much for sharing this recipe. The old time recipes are getting harder and harder to find, soon they will disappear into oblivion. I can not ever see my daughter carrying on with my old time recipes and traditions.
    I could not decide if I wanted to make pickles, or candy out of my watermelon rind. I didn't even know a recipe for watermelon rind jam existed. I know now what I am going to make! Thanks again.

    My grandmother made those with added lemon peel and no cinnamon or blender. Really good on a buttered biscuit. Thanks for posting this oldie but goodie recipe!

    I've heard of preserving watermelon rind but I've never tried it. I love that Steven is there helping.

    Those are my favorite from back in the 50s, when I was a little girls helping grandma make them. I'm 71 and I've not missed a year making them. The only difference is I don't grind mine up and we never added cinnamon. My favorite way to eat them is with a fork, straight from the jar 😊

    We made finger sized water melon pickles, approx 1/2 rind, and 2 inch red. We always ate most of the red internal core lol. These pickles are a great appetiser prior to meals, and a great 'degreaser' after a rich meal. Interesting use of watermelons that I haven't seen. Thank you!

      I made these!! It came out amazing. It's like making something out of nothing!! I'm so thrilled and will never toss the rinds out again. (I also made watermelon rind pickles and they're a hit too!)

    I was just getting ready to pickle some watermelon rinds until I saw your video! Do you have any alternative suggestions for an herb or spice to sub out the cinnamon? Love this video and recipe btw. 😍 👩🏾‍🍳👩🏾‍🌾🌱😋🍉👍🏽

      Maybe a nutmeg or cloves? You don't have to use any spice like that if you don't want to. It's not necessary.

    Watermelon reduces an incredible amount, so in order to make it worth the effort, it's best to prepare a 5-gallon bucket full of 1/2-squares of Watermelon rinds, or at leased the rinds of 2 or 3 of the biggest Watermelons you can find 😋

    I have a question, probably a dumb question but I'm new to canning. If I use smaller Jam jars will I still water bath for 15 minutes?

    I made watermelon rinds preserves yesterday. I had the correct fire and time, but they are a semi hard candy the I can’t put a spoon into it well. It isn’t rock hard, but pretty firm. Can salvage it? I thought of boiling some water to add and see if I can loosen it up so I don’t loose them. They aren’t stuck as in slot he’d or anything.

      Not sure as I have never had that happen. However, you could try adding water or extra watermelon and juice. Just remember every pot/stove cooks differently so you can't go exactly by time and temp. Please let us know how it turns out and what you try so we can relay it to anyone else in the future.

    Do watermelon grow good in Tennessee we just put our house up for sale so hopefully will be out in Dover Tennessee soon

    I have read all the comments, and except for one, no one has said anything about the taste. How does watermelon rind preserves taste? What does it taste like? Does it have the taste of watermelon? Or just the sweet sugary taste of generic jam?
    I love the taste of watermelon, but if the jam only tastes like sugar and cinnamon, I would rather make pickles out of the rinds

      Your stove probably cooked hotter than mine then, you don't have to cook it that long if the temp is running hotter and it sets faster than the time allotted. Hopefully you can save it!

    What’s a water bath?

      A deep pot with a rack or towel in the bottom of it to put your jars in to "process". The jars cannot sit on the bottom of the pot because the direct heat will make the bust or crack while in the pot. Does that answer your question? It's a way to process acidic foods for canning, whereas pressure canning is for non-acidic foods.

      @@ImTheChoice1 it's supposed to boil...but if you were taught to let it self seal, then you do you. I'm not the canning police nor a stickler for rules so you do whatever works for you and what you think is safe for your family. Federal Guidelines say to boil so that's what I teach.

    I made this and it had no taste except the cinnamon and set up hard in my jars. I had to throw it out. I wasted a whole Sunday. So disappointed. I was gonna try again but there was no flavor so no point .

      Oh wow! I'm so sorry something went wrong! It's our favorite!!! I wonder what happened? Have you had covid? It might altered your taste. My husband said he didn't even know it had cinnamon in it 😂 every batch I make is a hit. My friends ask for it. Something must have been off with it. It is definitely not flavorless, cinnamon added or not. It's great by itself. Someone else commented last week and said theirs caramelized. I wonder if it had something to do with the weather? That's the only trouble I have ever heard of people having.
