The problem you are having is you need to boil this first to softened not to add suger and then try to mash it later. This was you completely lost the texture. Not sure what you made there. All the best.
That is not the right watermelon the right watermelon only grow in South Africa and the hole watermelon is yellow inside not red like a normal watermelon

Just finished making it! Delicious!! Do you think I could reduce the sugar and still get the “jam” consistency?
Maybe add a little more apple dices to compensate. The apples contain the pectin which acts a s a thickner
The rind of a watermelon is extremely healthy for you and often overlooked!!!! It's great sweet pickled with spices as well.
