Pickled Watermelon Rind! (Sweet, Spicy, and Crunchy)
Cut the end caps off a small watermelon then stand it up on end.
Cut slices straight down about 2 inches wide. Remove the red watermelon from each slice leaving a 1/8 inch of red on the rind.
Take a potato peeler and cut off all the outer green skin.
Cut the strips in to 1/2 inch cubes and put them in a sterilized
quart or pint jars leaving a good inch head space at the top.
Make the brine below....
Brine:
1 cup of water
1 & 1/2 cups of (white) or (apple cider) vinegar
1 & 1/2 cups of white sugar (maybe 2 cups)
1 tsp. whole black peppercorns
1/2 tsp. red pepper flakes
3 tbsp. Kosher salt
(You can also add 2 tsp. coriander seeds) (I forgot)
(Apple Cider Vinegar has a bit more bite and the white vinegar
is a bit smoother... especially when you use 2 cups of sugar.)
Mix and bring to a boil and simmer for one minute...
Remove from the heat and let cool for a couple minutes
then add 1 cup of ice cubes and stir until they are gone.
I only used 1 cup of water at the top of the recipe because
this one cup of ice will melt down to 1/2 water and help cool
the brine to warm.
Pour the still very warm (not hot) brine over the cubed rind
and twist the lids on pretty snug.
Now turn the jars upside down and store in the refrigerator for
1 to 4 days.... how ever long you can stand it... but they are really good starting the next day.
Keep them in the refrigerator but... because of the salt and vinegar
they will last 3 or 4 weeks easy! (They will be gone before that!)
Enjoy!
P.S. I just made a new batch with 1 & 1/4 cup white vinegar
and only 1/4 cup of apple cider vinegar, 2 cups of sugar and
1 tbsp. of good old pickling spice. It was really good as well.
Not quite the bite of all apple cider vinegar ... try them both! - Навчання та стиль

Cooking with Shotgun Red is this Miss Sheila commenting?
I would say it is because Steve passed away in Dec of 2018. He is greatly missed, he truly cared about everyone who took the time to watch his videos
This was the first video of y'alls that I've ever watched just a few minutes ago. I fell in love with his passion and with his love for his Sheila. As I scroll though the comments to see what everyone thought of this video, I sadly learned that he has passed away. 😳😢 and I'm heartbroken. God bless you Sheila.
Thanks for watching!!! We all miss him. :(
yeah.. he is so lovely.. ♥️sorry for your lost sheila.. 😢
Omg!my first time as well !damn! RIP.
Wow.me too..very nice vid.RIP🙏✨
I’m glad I just found this channel - I’m standing in front of a watermelon right now - trying to figure out how to not waste it-knowing my hubby & I can’t finish it before it goes bad… THANK YOU Shiela for managing this channel now. God bless y’all !! (I’m sure this adorable man is watching from heaven - enjoying the sweet fruit there. 🥰🙏😊)
You’re very welcome! We are glad you found this us also! When Steve passed away he had made 307 recipes for this channel.
🍉I grew up eating pickled watermelon rind. We made it with boiled sugar water, touch vinegar, whole cloves, allspice berries and cinnamon sticks. Then we processed the jars. They were ready when the rinds were translucent and had a green cast to them. We also scraped all the red off. We either ate them right out of the jar or with cheddar cheese and crackers. 😋😋😋
Food memories are great!
I made this and it's fantastic! So you can quickly figure out if you have all the ingredients for the brine, they are: 1-1/2 cups (each) of water, apple cider vinegar, and sugar; 1/2 teaspoon red pepper flakes, 1 teaspoon black peppercorns, and 3 tablespoons Kosher salt. These measurements gave me exactly enough brine for 2 quarts with about half an inch of headspace. I'm planning a "picnic for 2" for the 4th of July and we will very much enjoy these watermelon pickles. Much love and honor to the memory of Mr. Shotgun Red!
Thank you for sharing!! :)
Thank you!
I love how natural he is ❤ Sad to discover that he has passed away 😞 . I hope he is resting peacefully and cooking and eating wherever he is. And much love to his beloved Sheila ❤

I just read the comments and I would like to send Sheila my sympathy and condolences for your loss, Steve looked like a great guy. Be strong.

Greetings from Hungary! I love pickled grinds, The way we do it here, is to boil salted water, (1 liter - 1 tbs salt), cool it down. Put fresh dill, 2 cloves of garlic, couple of black peppercorns and some mustard seeds in the jar, put the cleaned grinds in (I usually leave them in long stripes, resembling cucumber stripes) and leave them in a cool, dark place to ferment (usually 2-3 days). You have to let the gases out from time to time by unscrewing the top, maybe once a day. Then it goes to the fridge, lasts for about 2 weeks, unless it's consumed earlier! :-) I will definitely try this version, too. Thank you!
Sounds great!!!
blondecat666 that’s sounds sooo good, I’m thinking yours is wayyyy better. Please show your version on UA-cam
I will make your recipee for sure
Do you have a channel? I would love to learn some Hungarian cooking recipes .. canned foods especially.. like pickles or chutneys etc jellies .. things we don’t already know.
@blondecat666 That sounds delicious - what do you typically eat them with? And by grinds, do you mean same as used here, watermelon rinds?
I just found this channel and I love him and Sheila! So sad to hear that he has passed on. I tried the recipe and it's a keeper! I'm originally from Hawaii and they remind me of the pickled mangoes we used to make.
Thanks Nadine! :)

OMG! I didn't even know this was a thing! Ingenious way to reduce waste....Will definately try x Thanks from Australia x
Glad it was helpful!
Our family adds cinnamon in place of the pepper. Use it on holidays.
Also add a drop of red food coloring.
@@vonnaanderson4036 Thank you!! Cinnamon stick was the ingredient I was struggling to remember that my Grandma used in these. Allspice berries, too, I think. No hot pepper.....but that would be an add-on I would surely enjoy.
Thank you Sheila for keeping this channel going! I will be sharing these! God bless you!😇🙏❤
You are so welcome Robert! Thanks for sharing!

NOooooo!!! I’m so sad to hear this! I just found him by accident. He has such a kind, gentle spirit. I watched his “Cucumber Salad” video on repeat while I made it. I am so sorry to hear that he is not with us in the same way. He obviously cares about Shiela. She has been blessed to have him. What a sweetheart, and someone that is so good on camera. He is so charismatic. Sending love to those who are hurting from his loss.
I’ve been following your channel for a while and I’m not sure how I missed this video! This is one of my favorite snacks. We lost the recipe when My Grandmother passed. So thank you for this recipe! We will be fixing some very soon!

I picked up a baby watermelon yesterday. Cut it up and made a batch up last night. Just rewatched the video this morning and couldn't resist. Opened the cute Miss Shelia sized jar : ] this recipe was easy pleasy and came out really good. The jar sealed. They were crunchy and the taste is superb...the rest will be ready for the 4th and I can hardly wait. Thanks to all at Cooking with Shotgun Red and I hope you girls keep this page going.
RIP Steve
great recipe!
I have tried other recipes for this and they were horrible. THIS one on the other hand is SPOT ON! Thanks so much Red for the great recipe! Say hi to Sheila for me, seems like a sweetheart
You are so welcome! This is Sheila! Hello to you! Thanks for watching!
Thank you for this. I plan to a batch in honor of my grandma who died on this day years ago when I was 19. It's on of the things I couldn't wait to dig into when visiting grandma, along with her cucumber pickles. It always seemed to surprise her that my two brothers and I would eat so meany in one sitting!! She was overcome by cancer way too young in her late 50's. I didn't get a chance to get her recipes before she passed on, so this helps me to relive the good times and help me reconnect with her. God bless you and your family.
Glad this recipe helps. Food memories are the best!
Thank you for the recipe!
I am sad to learn of Steve’s passing. I had no idea of all the things you guys have done. I am glad that you are still doing the show. I chose to comment on this video because this is the first recipe of many that I made when I discovered this UA-cam channel. And it led me to pickle all kinds of stuff after. Thank you all for sharing your talents with me.
Your so welcome Jason!

I have made this recipe three times now, can’t get enough of them. I am making them now as we are coming to the end of the season. Thanks.
Glad you like them!
This looks like a recipe that I have always hoped to find. I like watermelon and have always hated throwing the largest portion of the fruit to the garbage. I like to try new foods and this pickle is now going onto my menu.
Hope you enjoy
The reason why this works so well is because watermelons are closely related to cucumbers, with both being in the same family Cucurbitaceae.
Shelia, so happy I found this wonderful video!!! Love hearing the two of you! I’m am excited to keep this as a longtime family recipe to pass on to my kids and there’s!!! Shotgun Red’s Rinds!!! XOXO
I'm glad you found it too Paula! We did have a'lot of fun making the video's. Hope you hang in here with us from now on.
I can’t wait to try this. Thank you for sharing.

What a lovely guy. A real gem. I had never watched a cooking session in my life by anyone, and by chance, in looking for something else, I came across this video. Suffice it to say that I found Steve's personality to be unbelievably endearing. He was absolutely hilarious and super friendly and explained everything so clearly. I'm not a cook by any stretch of the imagination, but I WILL be following his recipe for pickled watermelon as soon as I buy my next watermelon. As for his passing, which I found out by reading the comments below, it really touched me, despite having just "met" him 30 minutes earlier. What an injustice. A wonderful human being like that, who gave so much pleasure to all around him, to die way too early in life, when there are so many evil people in this world who live to a ripe old age, and do nothing but make other people's lives miserable, and revel in it. RIP Steve. David from Montreal, Canada.
Your so kind David! Thanks for a great comment! :)
@@CookingwithShotgunRed My pleasure! How could I not! Such a wonderful fellow.
