Daddy was the family pickler he liked it chunky. He must have spent a lot of time in the kitchen with his grandmother back in New Mexico. Wished I had asked him more questions when he was alive, and we would sit at the kitchen table at 5 a.m. just he and I everybody else was still asleep.

I'm descendant of German Russians. they used to make watermelon syrup that's watermelon juice. And then the meat of the melon they made Jam. And the third purpose for watermelon what's the rhyme. So they preserve it three different ways. And they had no sugar. I guess the watermelon was sweet enough. Great video and God bless you all.

My mom's cousin gave me their grandma's recipe for pickled watermelon rinds and another for rind preserves, but I lost them. I hadn't gotten around to making them. I'm sure this came from a waste nothing era. Someone said its such a waste throwing all this rind away what can we do with it.

We have been on Keto for a year and a half and there is no going back for us, we love it. Thank you for all your awesome recipes, I will be doing your relish this week. OK, I made a larger, second batch, yielded 7 half-pints. I used a whole watermelon this time. For 12 cups diced rinds, I used 5 3/4 cups sugar, and the juice of a whole lemon. With my first batch, I forgot to add the cinnamon but I liked it really well. For this batch I used the 1 teaspoon cinnamon it calls for but I think I may cut it back to 1/2 teaspoon. Just a personal preference. And I used the candy thermometer on the pot as it was cooking down, took it to 220° and it is perfect! I have to say thank you for this recipe, I have had the most fun with it as you can imagine, making two batches inside of three days.

My goodness, I haven't thought of making these for years! My kids loved watermelon rind preserves, and also pickles, when they were young. Think I will try your recipe this week. Thank you again for another top notch video. :)
