- INGREDIENTS LIST:
500G CHICKEN THIGH CUT INTO CUBES
4 TBSP VEGETABLE OIL, 1 TBSP PURE BUTTER GHEE
1 BAY LEAF (TEZ PATA), 2 CARDIMON, 1 CINNAMON STICK (CASSIA BARK)
220G ONION, 25G GARLIC, 15G GINGER
1 TSP SALT
SPICE MIX:
2 TSP CURRY POWDER, 2 TSP CORIANDER POWDER, 1 TSP CUMIN POWDER, 1/2 TSP TURMERIC POWDER, 1.5 TSP KASHMIRI CHILLI POWDER
2 PINCH KASOORI METHI, 2 PINCH GARAM MASALA
220G TOMATO PUREE
1/2 LIME OR LEMON (2 WEDGES)
1 TBSP SUGAR
FRESH CORIANDER LEAVES (HANDFUL)
BOILING WATER AS DIRECTED IN THE VIDEO.

I gave up making base gravy currys because the freezer had no room left for anything else. Your one pot recipes are ideal. Good to hear you mention the spice brand and noting some weights and measures on the video.

Tried this last night and was blown away, turned out great and would easily think it was a restaurant curry ! Did not have Ghee so used butter and subbed paprika for the Kashmir Chilli. Keep it up mate, great easy to follow and nonsense recipes.

I'm in Australia, don't think I've EVER heard of Pathia but it looks really delicious. I'm a sook when it comes to chili but will be looking at our local Indian shop to see if I can buy & try some of the Kashmiri Chilli powder. I think my very favourite Indian dish is Mughlai Chicken - the one with almonds, cream, so rich and delicious. I first had it years ago as Mughlai Lamb and it was amazing. Love your videos.

Amazing. I made this tonight it was quality and great not having to make base etc. Previously all my curries had too many spices just thrown in, so following your recipe made it a real science and it tasted amazing!

Always cooked curry this way without base and its so delicious 😋 I use base now an again these days but you can't beat this way in my opinion.

The Pathia is the most popular dish that I do and always goes down well and I’m usually cooking one of your recipes at most weekends because we have friends around regularly for a curry and karaoke evening 😃🎤 … Thanks to you and following your recipes closely my wife thinks that my curries are the best… even better than most of the Indian restaurants we have visited 😃 she always tries to heap praise on me and I always correct her and say thank Latif not me… I’m just following his recipes 😂 The Rogan Josh, the Chicken Jaal and the Chickpea Curries are also favourites in this household … Thanks again for all your hard work and for the education 😊🤗
I cooked this last night and it was divine. Thanks for your recipes Latif, they really are fantastic. I added red and green peppers at the spice stage and it was lovely, chopped up really small. I used a whole tin of chopped italian toms too as had no fresh toms in the fridge and worked well, missus loves a saucy number.

Made a Saag Paneer today using your potato masher onion base technique and blitzed home grown spinach and tomatoes, turned out great. Thanks for the great lessons, Latif. Thx for everything, Latif. I’ve cooked several of your recipes so far (first time Indian cooking) and each one is great. Your butter chicken recipe was fantastic, but all really good. Lol, I finally have collected all the spices so it gives me great pleasure now to read the ingredients. Today your chicken Parthia and Sag Paneer. I made my own paneer and recommend trying it. It’s pretty easy. Also made ghee, naan and your base gravy (for the sag paneer). Everything super easy the way you show it. Bismallah, you’re doing a great thing for the Indian food loving community.
