Great vid as always 👍 During lockdown I watched one of your vids and bought a spice tin and filled it up with the necessary spices. I have a cupboard full now! I followed the recipe to the best of my ability and cooked my first curry. I now cook a curry 3 times a week with no instructions, sometimes experimenting by adding various other ingredients . Pretty easy once you get the hang of it and always a hit when we have guests. Many thanks 👍👍👍

I made this last night, but for a milder curry so no madras chilli in it - it turned out absolutely beautiful. I didn't know the trick about mashing the onions up and that seemed to be the key, I also kept adding lots of water. So thanks man - you've got a new subscriber, can't wait to try some of your others

My dad was from Bangladesh and we use to live in the east end in the 60’s He use to make amazing curries and he tried to teach all of us his children how to make them. We have been able to make them but they never taste the same as my dad’s so I’m so grateful to Allah for guiding me to your videos because now I can share them with my own children and the rest of the family. May Allah reward you for making all the instruction so easy especially the ratio of spice. I have subscribe and will continue to like. My father use to make pilchard and also a boiled egg curry the egg skin use to go so dark I have tried so many times to make it brother but it never come out the same

I would just like to say since I found your channel I have not needed to get a takeaway I follow your recipes and they are 100 percent better than any takeaway I have ever had. I took the risk and bought all the pans and spices that you recommended made the base gravy the ginger garlic paste and the tomato puree and the mint sauce following your tutorials and wow thankyou I admit its a bit of an expense to start with but once you have all the spices and equipment each curry is much cheaper than a takeaway and so much better a wonderful channel a godsend for a curry lover

I've been cooking British curries for years having been shown by a restaurateur many years ago. I make my own spice mixes and roast them when necessary. I agree with you about chicken thighs - much more flavoursome! My onion bhajis are to die for - at least those who eat them say so: 30 people got through 200 of them which i made for a party a year ago. I will try your version which of course condenses the onion/garlic puree and base gravy in one go. I usually make a big batch and freeze. Well done for sharing.

Back again and the curry has now infused and the flavours mellowed! Is it good - no it is better than that - so it must get a massive WOW! Definitely to equal my local takeaway but only when they get it just spot on which happens about 3 times a year!

Looks delicious, good to see a base gravy free recipe, I have made base gravy a number of times but sometimes I just want something quick and easy and don't want to have to deal with making up base gravy so this is good
Make it in a large stockpot and freeze it. It works really well. As does to onion/garlic puree. Buy proper spices and roast the whole ones when making garam masalla and it not only tastes better than you get in most restaurants but improves with keeping. Save your old jam jars for storage and all those plastic containers for freezing.
Hi latif, this is a great channel, I made this madras for my family last week and it went down a storm, so much so my daughter has just asked me to make it again for her and her friends this Friday for a birthday. We are in remote spain so a lot of her friend have never had a curry. How would I make a larger version in terms of spice volumes? It the principle of to double the recipe you add 1.5 times the volume of aromatics and spices? Thanks and keep up the great work. Latif thank you! This recipe is amazing I managed to make a Chicken Madras in less than an hour and without any faff. I have made chicken madras both ways first using a base gravy and mix powder and now this way. Both taste equally as good but your method is much less faff. My mum tried the madras tonight and commented on its authenticity.

I made this madras curry and it was great. Just the right level of spice heat, the same level I like for dhansak too. I hadn’t used Kashmiri chilli powder before, now added to my spice box. Thanks for the recipe, my madras curry has improved.
Been watching you since I moved to Japan in 2019. Was so hard to find good curry over there. Unfortunately you mainly had restaurant style curry videos but you're doing one pot curries now and it's been so awesome! Much more relatable. Please keep it up!
Latif, i should also add, that i really like the way in which you put your "own spin" on your curries, sauces, etc;. I'm the same, i don't copy with exact precision, other people's recipes. I love experimenting & making changes, with the exception of your wonderful curries! That edition of fresh lemon, i do love too. I love all things lemon & use it quite a bit. Also, i think one of the best things about cooking or learning to cook, is to buy your own fresh ingredients, then start creating step by step, what you & your loved ones are yearning to eat. Watching the cooking process comin together is just wonderful/fun. IMPO, it's really an artistic process. The finished dish, even if it isn't 100% should bring much pride, with the full knowing that "you" cooked it & nonetheless, get to enjoy it. That's priceless & sure beats buying take away/fast food. And i say to my kids, my niece & nephew, that with practice, you'll get better & better & even quicker @ what you do. Just keep on trying & never give up. Good to teach em young too!

I made this on Saturday. Me! I can't make anything. I went round to my tiny local co-op and they had every single ingredient! (Except Kasoori Methi and the particular chilli powders - I just used bog standard powder.) It was easy, and enjoyable to do. Didn't take long. And it was great. I will be making it again. And again.
