BOK CHOY AND GINGER STIR FRY RECIPE
1 tbsp. coconut oil
2 cloves garlic, chopped
1 tsp. grated ginger
1 tbsp. low sodium soy sauce
1 lb. bok choy
toasted sesame seeds
salt and pepper to taste
Wash the bok choy user cold water and chop it up, separating the stems from the leaves.
Heat olive oil in a large non stick sauce pan and toss in the garlic and ginger. Cook for just a about a minute or until fragrant. Add bok choy stems, soy sauce and a splash of water and cook for 5 minutes.
Once the stems are becoming tender, toss in the bok choy leaves and cook until they have wilted down.
Season with salt and pepper and finish with a sprinkle of toasted sesame seeds. Enjoy!

CRUNCHY BOK CHOY SALAD RECIPE
3 baby bok choy, halved and thinly sliced (5 cups)
3 scallions, thinly sliced
1/4 cup sliced almonds
1/4 cup sunflower seeds
1 tbsp. extra virgin olive oil
1 tbsp. toasted sesame oil
1 tbsp. honey
1 tbsp. low sodium soy sauce
1 tbsp. red wine vinegar
Combine bok choy, scallions, almonds, and sunflower seeds in a large bowl. Set aside.
In a small bowl combine extra virgin olive oil, sesame oil, honey, soy sauce and red wine vinegar. Whisk together.
Drizzle the dressing over the salad, toss and enjoy!

15 MINUTE BOK CHOY SOUP RECIPE
1 tbsp extra virgin olive oil
1 lb. baby bok choy (about 3 bulbs)
4 cloves garlic, thinly sliced
1/2 tsp. dried turmeric
3 cups cold water
squish of fresh lemon juice
salt and pepper to taste
Separate the bok choy leaves from the stems and slice.
Heat oil in a medium pot over a medium-high heat. Once the oil is hot, add in the garlic and turmeric, stir and cook for just a couple of minutes or until the garlic is fragrant.
Add in the bok choy stems and season with salt and pepper. Once the stems begin to soften, stir in the leaves and the water. Turn up the heat and bring everything to a boil.
Once boiling, the soup is done. Shut off the heat and finish the soup with a big squish of fresh lemon juice. Serve and enjoy.

Slice some garlics, cut some mushrooms, get dried chilli peppers, salt and a bit of soy sauce. Turn on high heat and keep stove on high heat the entire time. Warm pan till hot, add oil, add garlics and chilli peppers, when you can smell the fragrance, add in your mushrooms first, stir until almost cooked, add in book choy, add salt and soy sauce to your taste. Stir. Don't wait too long, turn off the heat while the bok choy is still crunchy. There you have a full dish of delicious veggies, all you need is some rice to pair with.

One of my favourite side dishes is stir-fried bok choy and brocollini with soy sauce and garlic. Its so simple but so delicious.

Dani I just love your matter of fact approach to cooking. You’re a lovely lady both inside and out. I came here looking to see what to do with the bok choy I bought on sale and as usual you were a big help:) I have never worked with it before but have always enjoyed its mild goodness whenever having Asian cuisine. I have a very picky palate when it comes to veggies and so this is a real winner for me.
I’m going to make the salad tonight. I bought the mature bok choy so hoping it will be good. My husband loves cashews, so I’m goin to put some chopped cashews in our salad. Going to pair it with some grilled chicken thighs for dinner. Yum!! 😋

I always try to grow something different every year in my garden. One of the items I grew was baby bok choy. Lots of it! Will probably try the stir fry, but will add chicken. Some will go in the freezer for the soup. I hate to waste food so your recipes will get me started. Thank you!

Virtually all fruits and vegetables are perfectly safe and delicious when eaten raw. Though kidney beans must be cooked at a high temperature for at least 10 minutes because they contain a toxin (phytohemagglutinin), which is why they should be boiled first if you want to cook them in a slow-cooker because they don't get hot enough to destroy the toxin.

I am not a big veggie person, but this was so fast and easy to make. Lots of flavor. I personally added chicken broth instead of water. Added salt and pepper in my own bowl
