  • This bok choy recipe is one of my favorites. Bok choy is a type of cabbage, and quite versatile. It's easily found in markets and sold in several shapes and sizes under the name bok choy ranging from dinky baby bok choy to larger size "white cabbages" that I like to use in soup.     Bok Choy Recipe Ingredients:
    1 large BOK CHOY (rough chopped)
    2 medium SWEET POTATOES (cubed)
    1 medium ONION (chopped)
    CHILI PEPPERS (to taste)
    2 Tbsp GINGER (sliced, minced)
    5-7 cloves GARLIC (chopped)
    1 Tbsp CORIANDER POWDER
    1 tsp MANGO POWDER
    1 tsp LEMONGRASS POWDER (or sub. fresh lemongrass)
    1 can COCONUT MILK
    ½ cup fresh BASIL (chopped)
    SALT and PEPPER to taste
    WATER enough to cover ingredients
    Bok Choy Recipe Directions:
    In a soup pot, heat oil on medium high heat and add the ginger, garlic, chili peppers (or jalepenos, or whatever your favorite heat is--or no heat if you wanna skip the bite), and onion.
    Saute for a minute or two and then add in the corriander, mango powder, and lemongrass powder (if using fresh lemongrass, add in with onions). Mix well and saute for another minute.
    Add in sweet potatoes, skinned and cubed into ½ inch peices.
    Add one 13.5 oz can of coconut milk and 1 can of water.
    Bring pot to a boil, then reduce to a simmer and let cook for 5-6 minutes.
    While pot simmers, separate the bok choy stalks from the leaves and wash well.
    When the 5-6 minutes are up, add in the bok choy stalk bottoms and mix well. Add more water if needed. The water should be just enough to cover the soup ingredients, add sparingly.
    Bring pot back to a simmer, cover and let cook for another 2 minutes.
    Add salt and pepper to taste.
    Stir in the bok choy leaves and cook for 1 minute.
    Stir in the fresh chopped basil and remove from the heat.
    And that's it.
    Eat it when you wanna eat it.
    Soup is a great opportunity to clean out the fridge, so experiment with adding other veggies. I often add carrots and bell pepper.

    Oh my god yummm!! I am making this right now!!!
    Edited to say: I made it and it was fabulous! However, I used lemon zest and cilantro instead of lemon grass because I did not have any. I used a handful of coconut chips that I powdered in a blender and I mixed it with about 15 oz of soy milk and shook it up because I didn't have coconut milk. And, I added a curry leaf just for flavor :)

    I took your advise and added 2 c pork broth from ribs last weekend and broccoli flowerets, one thin sliced carrot. 3 tbs brown sugar. It was wonderful. Thank you so much

    My mom made this soup and gave me a small container of it. I grilled salmon with sesame seed oil and different spices. I added it on top of the soup and oh my goodness it was so good! I had to call for the recipe thank you so much

    Very, very informative. I'm going to making it with everything except the spices. I think the ginger, garlic, hot pepper (a big jalapeno without its seeds) and basil should carry it for me.

    LOVE bok choy and its cheap! When I eat Chinese, I get chicken and bok choy instead of chicken and veggies. Will try this delicious-looking soup.

    Just tried it. This is such a hearty meal. My husband and I loved it. 😄 I added some baby spinach and carrot as well, and no bell peppers coz I didn’t have that in my fridge 😅

    A recipe can never have too much ginger, onion, or garlic. Bok choy bottoms would be a great punk rock band name too.

    This is my go to video for book choy soup. It is delicious and I sometimes improvise with what I have on hand or add 2 cans of coconut milk. I love it! I also love watching you and listening to your wife. She has the best giggle! Thanks for sharing.

    This is kinda like 'sayur masak lemak putih (white creamy vegetable soup)'. wow..Feel like kelantanese malaysia home. I thought it is your family recipe or western style recipe.Feel familiar but when you said it is influence from Thai food,no wonder.Kelantan state,Malaysia is neighbour with Narathiwat,Thailand. For thickier soup,add shredded/pound boiled fish flesh. Good job for sharing this.Yummy..

    Delicious, soothing and healthy, too! The only change I made was using a monstrosity of a bok choy that I bought at a farm. Since it’s still hot here in November, it was 5x bigger than yours. No joke. 😳 It weighed like 17 pounds, or close to it. So I doubled your recipe. Oh, and instead of water, I used beef broth because I had some that needed to be used and so technically, I followed your instructions. I used tamarind paste instead of mango powder because I couldn’t find it locally. And I cooked it a lot longer. Y’all must like the bottoms crunchy. But in the end, this recipe is going in my favorites. But with a regular sized bok choy because prep was a gd production! Lawd Hammercy! Thank you for the recipe and the entertainment. Your sense of humor and wit…A+! You and camera girl are cuties.

    I liked it. and using your advise here and making this now. I don't have some of the ingredients but using what i have . Main ingredients bok choy, sweet potatoes and coconut but adding fish and shrimp. Because I have it. love all your videos good job.

    hey Buck, this looks like a great colorful soup, or stew. Those are nice soup bowls you have as they are wide on the edges so you can add crackers and stuff on the side.

    I always wash my bok choy in soapy water and rinse well. This includes romaine lettuce. I love your recipe! I'll try it.

      SouR Kawaii I need someone to teach me first!--I've never made Stromboli before...I've eaten them out on occasion, but rarely. I think I've had bad luck in the Stromboli department...the ones I've had have always been doughy and under-cooked inside

    I grow bok choi in the spring. I had a bumper crop this year and froze some that I blanched. I think I'll try this with that. Got any suggestions to make this work?

      Robert Peters that's an excellent idea for a creamier dish--I've never tried it with more coconut milk, which surprises the hell out of me, since I love coconut and make almost everything maximum creamy; when I'm in a bok choy mood, I'm usually trying to take a break from some of the heavier dishes I cook at home (although I made biscuits again today, so it wasn't much of a break)

    Loved the video! I made Bok Choy soup yesterday with mushrooms, carrots, garlic and some seasoning but it felt like it was missing something. I like the idea of the coconut milk, giving this a try tomorrow for dinner!! Thanks for sharing!

      Angel Alicon Asian markets are your best bet for buying those ingredients--and usually the best price for bok choy; but if you can't find those ingredients, substitute a little fresh lemon juice and zest for the lemongrass, and for the mango powder, just add a Tbsp of rice vinegar...the mango powder sounds sweet, but it's actually kinda tart.

    I’ve made this a couple times. A consistent wiener. I never seem to find lemon grass powder at the store so then I have to do a lemon dance that never quite cuts it. Will use a butternut squash from the garden in place of sweet potato. I got CG coconut milk and I’m gonna use two cans. Or toucans. Think I’ve got mango and coriander. Garlic from the garden, and dried Thai basil. Wish I had a pepper in the fridge. I’ve got dried ghost peppers that are lethal, but Jen won’t allow it. So we’ll see. A fire going in the wood stove on a 38deg, rainy night in northern VT. This soup will be perfect. Shame they never discovered bread in Thailand.

      Of course, or acorn or buttercup or hubbard squash. All are orange in color and the taste is similar.

    Hey Chef Buck ! Love your vids and I have a question. I'm a (new) fan of Indian food and I cook it at home myself. Mango powder, and pulp, are seasonings I have heard of but have never tried. What does it taste like, and does it really add another flavor level to the dish ? Would vinegar not be similar ? Thanx for your consideration, and keep up the good work. Not a meat-eater so I appreciate all your vegetarian recipes.

      D.L. Sosnik mango powder is tangy, and vinegar is tangy, so I think that's a very good comparison; I use mango powder in Asian/Indian curries and soups--it's not an ingredient I use often--which is one of the reasons I like to have it around the house...it does give dishes a different flavor, keeps things interesting...it's far from essential in my cabinet, but I like having it there (next to the fenugreek and anise)

      Howdy Chef, and thanx for your timely reply. I will probably continue using the vinegar rather than mango powder, but "never say never", right ? And I want to mention, the pulp I was referring to is actually Tamarind pulp, and as I am in a rather small southern town, I will probably never have a chance to purchase that either.       we primarily use olive oil and coconut oil in our cooking

    One thing about Bok Choy especially the big version like in the video, is that most people don't know what to do with it and its also dirt cheap in the Grocery Store for such a big vegetable. Im not sure exactly why its so cheap exactly. But for a vegetable in the grocery store its almost the cheapest one there is and Bok Choy has great flavor. You can't go wrong buying it for a green vegetable to use to Saute, Steam or Cook with in a Soup for the cost.

      Ardent Dfender I love to buy produce at Asian markets, 'cause it's usually the best deal around--especially the bok choy. I love the big ones for soup 'cause it is a great deal --and one with a couple of sweet potatoes is plenty

    That looks really good, except for the chiles (I'm a wuss when it comes to heat). What is mango powder, though, and where do you get it?

      Jessica Cejnar it's a powder made from dried mango--unripe mango--so it's a tart and tangy taste. International markets will have it, or maybe your local big-box grocery--it's becoming more readily available as Asian and Indian foods become more popular. I've seen it sold as mango powder, and also as amchur powder, which is the same thing, just another name--substitute lemon juice if you like!

    I've tried real hard to enjoy sweet potato, but it just ain't happening. Anything I could sub for that, other than regular old potato? Would that be good?

      mango powder is an interesting ingredient to experiment with...adds more of a tartness than a sweetness, if you don't have any on hand, just substitute a little lime or lemon juice

    Hmmmmm…..the Chinese Chef started with 6 cups of water and a can of Chicken broth. I guess they feel more comfort with broth more than vegetables. I think I’ll go with this one.

      CauldronShow The bok choy stalk is similar to celery, but it's not as dense, and without the stringyness of celery; bok choy is an akaline, but to a lesser degree than celery
