Just made a quick stir-fry with mushrooms, green onion, baby peppers, ginger and bok choy - with little yellow tomatoes thrown on top at the end. I love bok choy = one of my very favorite veggies. Yours looks so fresh and crunchy. Thank you! You did a great job - Oliver was great also!
Just made this and it was awesome! A couple things to note... 1 if you make this in a regular pan nonstick dont fear the brown charring at the bottom, it does not mean the choy is overcooked, so dont freak out and lower the heat. Get a real stir fry wok if you want to avoid this. 2. Tongs may be easier to use to flip the choy to prevent burning instead of a spatula if you are using a conventional pan without the higher sides of a wok. 3. Avoid salt until the end if u have not made this before as the bullion and sauce may provide enough salt. 4. I used double the amount of garlic and substituted high quality (asian grocery store only) fish sauce instead of oyster, as i did not have it on hand and it turned out great.
ginger+garlic (finely chopped) makes a great base for stir fry. BC bok choy/suy choy absorbs liquid quickly use very little moisture in the wok to ensure the choy still has abit of resistance to it. Deglaze your wok (very high heat!) with a quarter ring of Fish sauce to infuse that nice salty flavour into your Veg. Sesame oil has a very low burning point and when ignited adds a beautiful sesame taste. Im a professional wok chef and This video is great for those wanting to learn stir fry. well done sir!

Yes, it is better to put the oyster sauce after it is cooked because you could burn the oyster sauce and it is not as tasty. I love, love this as baby bok choy is my favorite vegetable , my friends tease me that it is my blood type & many of them are Asian. I hope I will want to try to grow them & try my hand at this. I would never be willing to share this with any critters, even though I am vegetarian. Oyster sauce is so good as well as a really good toasted sesame see oil. I also love a very spicy black bean sauce in a jar with an older looking woman on the label, but I can not translate the info. It is so addictive. Thank you Chef Eddie.

Hi! Your recipe of stir fry bok choy is so simple! Someone said you did not stir fry the garlic first before you added the bok choy. I agree because garlic gives a very delicious taste of anything you stir fry. But that's fine if that's your style. After cooking the bok choy I gradually add the sauce that can also give moist of the stir fried bok choy. Thanks for sharing. God bless.

For the people asking about the oyster sauce, in the description they explain they forgot to record that part. What you're supposed to do with the oyster sauce for is a drizzle on top of the dish & be wary of using too much.
Perfectly done. Making my first bok choy dish on Sunday. about to do a 10 day green smoothie cleanse. I will have a smoothie for breakfast and one for lunch with a healthy dinner. I've always enjoyed the little bok choy in my Chinese noodles now I get to eat an entire dish of it can't wait.

OK. 1. If you wash the bok choy and don't dry it there will be residual water on the leaves, So you ARE adding water. 2. The salt draws more water from the veg. So you're steaming the veg as much as stir-frying it. Not a problem but perhaps worth mentioning. Thanks for the demo!
Wow...I tried this with garlic...but I used Walnut oil 'cos our peanut oil comes in plastic transparent bottles with a notice on them: DO NOT STORE IN LIGHT...and then they put it on the shelf...in the light?!! Walnut oil was in a DARK bottle!! Much better, eh?! Did it with bok choy; gives you a good run for your money, too! Reckon it would be super with stir-fry chicken!! Hey, I didn't really need the oyster sauce anyway; just sprinkled a little sea salt plus some black pepper...and hey presto - magic food! I decided to cut the leaves up a little bit before cooking as it made it easier to eat!
Hi Eddie, I just found your channel now as am trying to find what is a good pan to make veggie stir fry in. I went to a huge Asian market for the first time(!) in my life, in Quincy Massachusetts (I was transported to a whole new world! Now I don’t need to go on vacations, I can get the same feeling at these markets!), I had so much fun looking at all the new (for me) veggies,etc. Some nice regulars there showed me something’s about the lemongrass. I got ingredients to make lemongrass chicken myself so that I don’t have to rely on restaurants for yummy foods! But the tiny bok choy I bought there (smaller than what you used in this video), looked sooo good that I made that first! OMG I love bokchoy! Now, I just finished making lemongrass veg stir-fry with snow peas,red and green bell peppers and Thai chili’s in peanut oil (with garlic,onion,shallots,) it tastes good but I used a regular, though high-sided frying pan and I couldn’t stir it around or it would fall out- so I added water and kept it covered. I cooked it about 5 min too long for my liking. Anyway, I see from your video that an open wok might be best and I will get one! I will watch more videos first! Thankyou for a succinct video that doesn’t waste any time! Good screen presence too! Good fortune to you!

With the supply chain weirdness during the pandemic, I can't get my usual frozen stir fry veg mix, so I'm have to roll my stir fry from scratch. Wasn't sure how to prep bok choy - this was quite helpful.
Good video, all of the important points were covered! I like to braise mine with a little chicken stock. When I plate it I lift the veggies out with a spatula as there is usually a little grit from the cabbage in the bottom of the pan. I pour the sauce over the veggies but I make sure not to pour in the last bit of liquid. I also like to drizzle a little sesame seed oil over it just before serving.

I am so HAPPY you notice the big difference Peanut Oil makes. Peanut oil is to Chinese cooking like Olive oil is to Italian cooking.

I went to a huge Asian market for the first time(!) in my life, in Quincy Massachusetts (I was transported to a whole new world! Now I don’t need to go on vacations, I can get the same feeling at these markets!), I had so much fun looking at all the new (for me) veggies,etc. Some nice regulars there showed me something’s about the lemongrass. I got ingredients to make lemongrass chicken myself so that I don’t have to rely on restaurants for yummy foods! But the tiny bok choy I bought there (smaller than what you used in this video), looked sooo good that I made that first! OMG I love bokchoy!
Now, I just finished making lemongrass veg stir-fry with snow peas,red and green bell peppers and Thai chili’s in peanut oil (with garlic,onion,shallots,) it tastes good but I used a regular, though high-sided frying pan and I couldn’t stir it around or it would fall out- so I added water and kept it covered. I cooked it about 5 min too long for my liking.
Anyway, I see from your video that an open wok might be best and I will get one! I will watch more videos first! Thankyou for a succinct video that doesn’t waste any time! Good screen presence too! Good fortune to you!

With the supply chain weirdness during the pandemic, I can't get my usual frozen stir fry veg mix, so I'm have to roll my stir fry from scratch.

I like to braise mine with a little chicken stock. When I plate it I lift the veggies out with a spatula as there is usually a little grit from the cabbage in the bottom of the pan. I pour the sauce over the veggies but I make sure not to pour in the last bit of liquid.
I also like to drizzle a little sesame seed oil over it just before serving.
