My mother shared this recipe with me and I've since shared it with many friends. I just made a version with mashed overripe pear instead of applesauce, flax egg, diced pear, mini choc chips, nutmeg and vanilla. They are delicious and moist! Great for a treat, and I still love the original recipe for its low sugar content. Great that these can be made gluten free without expensive specialty flours.
I made these...they were dense, naturally sweet and very much like your morning oatmeal in muffin form. I follow a vegan diet with no sugar or oil and I used almond milk, Bob's Mill egg replace and 3 stevia packets. Perfect! Thank you for the recipe.
Made these. Nice change from wheat muffins. I was worried it would’ve stick together, but it did. I also took out cinnamon, the second time I made them, and added cranberries, lemon rind and nuts. Wonderfully refreshing. Thank you for this recipe!
Omg ur recipe is the best I added 1 cup oats I grounded up chill, cayenne ,garlic parsley toped it off with olives & jalapeños pepers thank you so much best bread.
I love this recipe, I have made it several times. However, I had to make unplanned adjustments that turned out really great: While multi tasking this morning, I accidentally poured in 2 cups of milk, instead of 1, so undeterred I plopped about another cup of rolled oats, omitted the applesauce, added more cinnamon, chopped 2 smaller Granny Smith apples, added 1/4 c of craisins with the raisins. I let it sit for 10-15 minutes hoping the rolled oats would absorb more of the liquid. I also added a few broken pecans to batter. That was after discovering I had no walnuts left, I broke up pecans and added to brown sugar/cinnamon topping. I baked about 35 minutes using toothpick test. Well, with all my mistakes and adjustments it turned out really good. Muffins were fully cooked inside and pecans added different yummy flavour. So thanks for a pretty good base recipe that will allow for major mistakes!! :) :)
Never have gotten reply from Danny… do you happen to know net carbs per muffin pleeeease and thank you … now I don’t care that much to make them again…when I saw the carbs per cup…. 😁👍🏻‼️
@@mountaingirl1797 net carbs are easy to figure. The nutritional info is in the description. Subtract fiber from carbs to get net carbs for anything. 20.9 carbs less 2.8g fiber is 18.1 carbs. All oats are fairly high in carbs. If you are doing a low carb diet, you don't want to be looking at recipes based on oats.
I have some in the oven right now! I used fresh blackberries instead of raisins though, blackberries are a UK thing and we LOVE blackberry and apple together :)

Lol :) They are invasive and grow almost everywhere in the world, some countries 'ban' them though because they become a 'p i t a' quite quickly to remove if you dont control them. Abandoned lots are typically taken over by blackberries in no time. Farmers especially in UK still use them as natural fence to keep unwanted wanderers like badgers and hares out of their vegetable plots. Bramblehedges are undeniable a typical UK thing too. At least its one of the things coming up in my mind thinking of UK. And when I visited, oh I would LIVE on blackberries during my hikes. Together with the many robins following me in the bramblehedges providing protection and food.

Made your oatmeal/pumpkin/dried fruit muffin cups and they were delicious. Grabbed a couple going out the door every morning. At first I was missing the "sweetness" of sugar but soon got over that. I'm making the oatmeal/apple muffins this weekend (I've eaten all of the pumpkin ones). They freeze very well and are especially nice if heated up for a few seconds. My co-worker walked into our lunchroom this week as I was just taking 2 out of the microwave after heating and she commented at how nice they smelled. I told her they taste very nice as well. Just made these delicious, filling, healthy muffins! I’m lactose intolerant so I used lactose free milk, turned out perfect! Next time I will turn my oven down a little and I’ll add pumpkin seeds. Thank you for sharing!

As you might notice in my comment to Dani I said I added “a tad” (and I use organic unrefined) There are many conflicting studies on coconut oil use and health benefits. Please let me know if you would like some helpful links on the subject. Also, I do believe Dani uses organic unrefined coconut oil in some of her recipes. Moderation is always key😉

This is an older video but I want to thank you for these. I've just been diagnosed with Type 2 diabetes, hypertension and have high cholesterol. I didn't have raisins but these are perfect to help me get those little snacks I need without sugar or salt or oil. And they are tasty. Looks like you have tons of recipes that will help me beat these conditions and have fun in my kitchen.
I made these... also made blueberry lemon. I used dried cranberries. On some I used slivered almonds. I also made some with a fresh peach and dried cherries. All are delicious. I bought a mini muffin pan and mini loaf pan to make some in.

I came across this recipe today, and decided to try it out right away. I can't believe that the muffins have a 'cakey' consistency, although there is no flour in them. They are very good, and really easy to make. Although I could do with a bit of added sweetness - I do not like overly sweet cakes, but next time I'll add a small amount of brown sugar.

Hi!! I didn't want to use an egg so I used a flax egg and added a big teaspoon of organic peanut butter (without any additives) and it worked out perfectly - I was worried they might crumble because of a lack of a binder but they are like ordinary oatmeal cups. Thanks for the recipe :)

Love this oatmeal in a muffin! Just purchased coconut sugar. It’s golden color adds eye appeal and it’s not overwhelming in sweetness. Love the “board” method of cutting the apples-so easy💕
I wanted to make these but didn’t have everything. So I added a teaspoon of vinegar to the regular milk ( which is what makes a mock buttermilk ) I used the instant plain oats and unsweetened regular applesauce. I just used raw sugar on top. These are so good. Great way to eat apples and oatmeal 😍
Yes! Made my own apple sauce with cinnamon in tiny jars from my fruit trees last season and have a lot of oatmeal. Want to save my remaining flour for bread so love that there isn't any flour in this and surprised they bind together without it. Will do the streusel topping because I have a slight sweet tooth. Never liked raisins though, so will do without those. Thanks for the demo.
I made this but instead of muffins I spread it out on a big parchment paper covered cookie sheet and baked until it was kind of crispy. Delicious cereal!!! Also shaped some of it into cookies.
I like this receipe but was thinking of grinding up 1 of the cups of oats to flour. And add to the mix, I think it will give more texture resembling a muffin cake consistency along with the old fashioned oats and apples and raisins.
@@mangot589 If you look at some Scottish recipes that use oat flour, it works especially if you get gluten free oats and grind you can sub. Won't be exactly like regular AP flour but it does work.

I don’t like raisins so left them out, and felt mine were too bland. Next time would add maple syrup or honey to sweeten a bit. I travel for work and packed them on my last trip. I liked having a healthy breakfast I could eat in my hotel room. I did add almond butter on top! ☺️✈️👍🏻⭐️
Absolutely love these and even if you don't like raisins maybe try cranberries or some fruit similar that's in season because if you don't use the extra walnut, and sugar, and cinnamon mix it's not sweet even with lots of apples. These were quick and lasted a week of snacks and breakfast on the go. With a busy lifestyle these are perfect!
Love these, altered the recipe a little, added Swerve Brown and they taste better, more like a muffin. My granddaughter doesn’t raisins but loves craisins so that’s what I used for hers and she loved them. Thanks.

Love this oatmeal in a muffin! Just purchased coconut sugar. It’s golden color adds eye appeal and it’s not overwhelming in sweetness. Love the “board” method of cutting the apples-so easy💕
I really enjoy all the muffin cups. I eat them every day.
I wanted to make these but didn’t have everything. So I added a teaspoon of vinegar to the regular milk ( which is what makes a mock buttermilk ) I used the instant plain oats and unsweetened regular applesauce. I just used raw sugar on top. These are so good. Great way to eat apples and oatmeal 😍

Yes! Made my own apple sauce with cinnamon in tiny jars from my fruit trees last season and have a lot of oatmeal. Want to save my remaining flour for bread so love that there isn't any flour in this and surprised they bind together without it. Will do the streusel topping because I have a slight sweet tooth. Never liked raisins though, so will do without those. Thanks for the demo.
The eggs bind the ingredients.
Try replacing the raisins with dried cranberries or chop up other dried fruit, maybe apricots.
I made this but instead of muffins I spread it out on a big parchment paper covered cookie sheet and baked until it was kind of crispy. Delicious cereal!!! Also shaped some of it into cookies.
I like this receipe but was thinking of grinding up 1 of the cups of oats to flour. And add to the mix, I think it will give more texture resembling a muffin cake consistency along with the old fashioned oats and apples and raisins.
I’m not sure that will work. Flour is completely different. But keep us posted.

@@mangot589 If you look at some Scottish recipes that use oat flour, it works especially if you get gluten free oats and grind you can sub. Won't be exactly like regular AP flour but it does work.

I don’t like raisins so left them out, and felt mine were too bland. Next time would add maple syrup or honey to sweeten a bit. I travel for work and packed them on my last trip. I liked having a healthy breakfast I could eat in my hotel room. I did add almond butter on top! ☺️✈️👍🏻⭐️
The honey or maple syrup is a great suggestion. I don't care for raisins, so I used craisins - I think they are a better compliment to apple as well.

Absolutely love these and even if you don't like raisins maybe try cranberries or some fruit similar that's in season because if you don't use the extra walnut, and sugar, and cinnamon mix it's not sweet even with lots of apples. These were quick and lasted a week of snacks and breakfast on the go. With a busy lifestyle these are perfect!
Love these, altered the recipe a little, added Swerve Brown and they taste better, more like a muffin. My granddaughter doesn’t raisins but loves craisins so that’s what I used for hers and she loved them. Thanks.
