I suggest to use a large serving spoon to scoop out insides instead of a knife. A knife would be pointless unless your cutting the pumpkin in half after or prior to scooping.
Thank you Heather for your way of roasting pumpkin seeds. I had been trowing all the pumpkin seeds(except a few to grow pumpkins next season)on the compost pile. I saw other lady baking them in the oven without boiling them first. I'll give both a try.

About six minutes into my air frying, the seeds are bouncing around in there. Is that normal, perhaps from them starting to dry out and become lighter? Thanks ✌🏻
I don't think olive oil actually does anything other than making the seeds more calorie-heavy. besides, you should put liquid oil in any form in your air fryer, as it will gradually damage the device and will possibly cause the motor to die way faster...
I just did a giant batch in my NINJA Foodi model AG301EU, and I didn't have to spread them evenly in a thin layer over the bottom. I just kept stirring them every 5 minutes, and adding a tiny spray of olive oil + sprinkle of salt. They turned out fine.

A lady in another video left a good tip on her video. She said put them under the basket so they won't fly around while cooking. ...Game changer!

This is an air fryer...you don't use parchment paper in an air fryer. In an oven on a flat baking sheet...you would.
I use parchment paper all the time in ours.

Unless you're going to carve the pumpkin afterward for Halloween, the seeds are easier to remove if you just quarter the pumpkin.
