Also completely surprised that you could eat the shell too, cause traditionally here they're simply roasted and the shell discarded.
I am growing food pumpkins. This year was the experiment and next year will be in ernest. My goal is 100 food pumpkins. I will have to add the seed roasting for an added treat. It will be a great thing to do outside as I like to cook over a fire.

So I boil seeds for 10 min adding salt, garlic, and Everglades seasoning. Then I melt some butter adding in more garlic, Everglades, and some Tony Chachere's. Then I bathe the seeds in a bowl. After oven is preheated to 400 degrees, I transfer seeds to baking pan lined with foil and spray on olive oil, so seeds don't stick. After that I cook them about 25 minutes. Turning them half way thru.
Recipe! Ingredients: Seeds from 1 medium (10-pound) pumpkin (about 1 cup) 1 tablespoon vegetable oil 2 teaspoons brown sugar 2 teaspoons minced fresh rosemary 1/2 teaspoon kosher or sea salt, or to taste Directions: Preheat the oven to 400°. Line a baking pan with parchment paper. Bring a pot of salted water to a boil. Add the seeds and boil for 10 minutes. Drain. Pat the pumpkin seeds dry on paper towels. In a bowl, toss the pumpkin seeds with the vegetable oil, brown sugar, and rosemary. Season with salt to taste. Spread the coated seeds evenly on the lined baking pan. Roast for 20-25 minutes, turning the seeds every 10 minutes. Remove the seeds from the oven when they are crispy. Allow to cool to room temperature and serve.
I didn’t see or hear where you mentioned what temperature the oven should be at and whether you should have the heat coming from the top or the bottom?
If you just boiled them longer to fully cook then let them air dry wouldn't they be crispy? My oven is problematic. Looking for another solution to prep pumpkin seeds. Microwave?
I baked my pumpkin 🎃 seeds without boiling them! They came out tasty but the shell was a bit chewy and woody so I had to spit out a lot of the woody shell! Will boiling them prevent this chewy woody texture??
Will the effect of boiling the seeds still be the same if you've already dried them out over night? Also can you bake them in a glass pan?? Thankyou!!(:
I think it would still be fine as it would re absorb the water during boiling, but then youd have to let them dry out again. & i'd say metal pan would be best for roasting, glass seems to kind a dull heat transferrance due to its density and makeup, whereas the metal pan would entirely be the same temp as the oven's setting very soon.
@@foodandwine This is the #1 thing you need to remember to do in your videos. Nothing turns me off to a cooking channel quicker than the person not saying what temperature the oven is on. People aren't going to go look at your recipe on your website if you intentionally leave it out the will just look at another video.

So don’t toss the pumpkin after removing the seeeds if you have deer. Set the halves out where you see tracks and check every couple days. Deer love them as do other animals.
I'm almost 60, never ever have we ever boiled pumpkin seeds, like ever. Not necessary, keep it simple. Preheat oven 375° Oil/salt to taste 25 ish minutes, stir, amend time Enjoy
This is a month late but for anyone who is reading comments: If you want to season with any wet ingredients like tamari, soy, or miso, add that part into the oil.
I roasted my pumpkin seeds about 18 minutes at 400 degrees and they were very bitter and off-tasting. My oven tends to be on the cool side, so I can't blame my oven for over-toasting them. But the results were less than stellar. What went wrong? Shall I roast them for 15 minutes, or lower the oven temp?
Bitter seeds sounds like the pumpkin itself was either not ripe or was going bad. Not aware of any cooking method that could make a seed bitter. Maybe attempt again with another pumpkin or try doing it with friends to see if you forgot a step.
Thank you again for this video but next time I would offer 2 to say how much much salt how much ex sugar and so on and so forth like a spoon or a 1/2 of a cup, and I would also add what temperature you had set the oven for,
Notes: Add Sea salt. Herbs. Sugar. Oil. Put on baking sheet. Bake at 400 15-25 minutes.

I tried a bit different and they were SO GOOODDDDD I Roasted on 350 degrees for about 10-20 min or until they look good

Use a canning lid (flat) to scrape out the pulp lol. It's a lot faster and doesn't gauge into the pumpkin flesh.
