    I had a boyfriend from Iran and he cooked this dish with zucchini too but not dry limes....it was so delicious, we broke up since many years ago but I still remember this dish and cook it very often.....thank you

      Hi, my Persian husband loves dried limes in Persian stews. Some stews only need lime juice but we use dried limes most of the time

    I am of Indian Heritage and This is my favourite Iranian dish, that I learnt from my Iranian friend.
    All my Indian friends love this. Your is a little different. I guess everyone's cooking is different.

      Every town and every family have their own way of preparing almost all dishes. I am of Danish heritage and have been with my husbond for almost 37 years - he is of Persian heritage. This is my favourite meal even though I like most persian dishes.

    RED MEAT is NOT good for me much, so i eat it every few weeks, well i am in my mid 50s now, have to watch ..I made it with Chicken , added chopped Garlic to onions , Zafran & some Goorah sour grapes, had some in my Freezer , came out really good Thanks

      You are welcome. Yes, you can definitely use chicken. When i was in Iran, the family would use chicken coz they can't have much red meat and i really love it with chicken as well.

    Looks yummy but I want it make this strictly vegetarian.
    Can I just sauté the onions with all the other ingredients, allow the mixture to simmer and thicken, then add the fried eggplants and tomatoes? Thinking it will be the same ends product except no meat 😀

      Thank you. I never tried it this way but I am sure that it will comes out delicious. Sometimes, i would just fry and eat eggplants, and it's delicious how much more if it have this sauce.

      You can find online at Amazon, any Middle Eastern stores that sells one or you can just use fresh squeeze lime juice

    Poor eggplant looks so naked without their skin. I've made a lot of eggplant dishes and have never peeled their skin. You're missing out.

      I also leave the skin on most of the time when i cook eggplants. We do as well in the Philippines. But in this Persian stew, skin is peeled
