In this video very instructional I will explain you detail by details, how to make to how to cook, the real Neapolitan pizzas, also I show you how to make it in the wood burning oven.
▪️Tip n1 : take all the pizza dough balls all in the same time
▪️Tip n2 :stretch all the pizzas that you need to make
▪️Tip n3 :Before stretching the pizzas have all the ingredients ready for the use
▪️Tip n4 :put a piece of wood in the oven, because you need to cook the pizzas with high flame
▪️Tip n5: start to put the pizzas from the front of the oven to the end
▪️Tip n6: use the frontal base of the oven to turn the pizzas when are cooking

This video took me back to my oven job at the local pizza parlor when I was in school working the evening shift. I was the baker. Wild times, when orders came in and I had 7 to 10 pizzas going at once. Looking back I am surprised I was able to do such feats of dexterity. I couldn't and wouldn't attempt that now. Now, I may bake a couple of pizzas at a time if I am pressed and feeling fiesty. Thanks fror the trip down memory lane.

Working a woodburning oven is tough work. I ran 2 of them (in NYC) and could cook 4 in one and ten in the other. We were using American style dough and the pizzas cooked in about 6-8 minutes. Used to get a headache mid shift until a few hours afterward. Went to the Philippines to train some staff and they had a giant gas burning oven with really impure gas. I had to rotate the Trainers to 2 shifts on the oven each week. They could fit about 26 pizzas in those ovens. Gnarly.

I hope you are fine. Thank you for infecting me with the pizza virus. It makes my life so much happier. I am now thinking of buying an Ooni Koda 16. Can you please give me an advice for that. I want to bake normal pizza, but also pizzas from the tin, like you showed with the guy from “malati di pizza”. My baking sheet measures are 15.75 "x 11.8" (40x30cm). I think it would fit, but I'm not sure if it does have enough space to produce a good baking result. I would be very grateful to hear your opinion. Kind regards

Yes, will cool down a little consider that pizza is hot like hell thus impossible to eat right away
Edit: crunchy and hot? Lower oven temperature around 320/350 Celsius
and half precook the crust

Ho mangiato pizze a Napoli e in tutta Italia ma non ho mai trovato il parmigiano se non in poche pizze ma mai nella margherita (la pizza da voi mostrata). Ho anche delle perplessità sull'uso della farina di riso che è completamente estranea alla tradizione. Il vostro tutorial può andare bene per gli americani o per non Italiani.

Hey Vito, I let my dough rest for 24 hours in the fridge and then another 4 hours out of the fridge, but when I try to do the stretch, it stretches unevenly, and eventually tears before I even get to around 10" in diameter. What am I doing wrong?!
