Dear Vito, I spent several cruises working on Costa back in 2009/10, Bari was on the way right after sailing from Venice. I used to visit a small pizza place outside the Port of Bari....in the middle of summer, very hot. What called my attention was the flavor of the pizza and the crusty crust, delicious! Now I understand that's Bari's style pizza. Bravo Vito for a wonderful content on every video, hopefully someday I will be able to come back to Bari Italy and meet you in person, share a great pizza and enjoy Italia for one last time 😇 Ciao Bello! Hey Vito! Thanks for your videos! Your tips and instructions are very helpfull. I used your poolish recipe recently and the dough came out pretty nice. I am happy to be able to find in your channel some authentic italian pizza recipes. I would like to comment though that... I know that you are used to refer to the sea as "the ocean" since you were living in the USA but I think is more proper now to get used to refer to the sea as the Mediterenean or the Adriatic sea if you prefer. :) hahaha. Any jewelers / high precision scales. 0.01g accuracy ideally.

No no different flour
So do you use a flour for lower temperatures, but also long fermentation? Would Caputo A Metro or Tony Gemignani California Artisan be suitable? Both are available in US, along with most other Caputo flours.

🍕🍕🍕🍕🍕🍕🍕 Vito you are my pizza teacher. I was pizzerman in Pizzeria in Ayia Napa (Cyprus), (Fire oven Pizza di Napa) now i build own pizza oven in Poland, and want to open Pizzeria in Poland. I make realy nice pizza from italian imported ingredients, and learning all the time :) THX [I work near pizzeria, and in COVID time they have a lot of work - orders with delivery).
I also put fresh wild oregano from Crete to finished pizza, taste nice.

So the oven was worm from the day before around 150/200c then we put the wood 3hours before
