See you in March in NYC: I can’t wait
Who else didn't realize Matteo was a miniature Arnold Schwarzenegger??!! Holy moly!!
ua-cam.com/video/BivfxrSpy54/v-deo.html
The Alfredo Prince is extremely handsome
Loved when the guy said "No chicken and shrimps please"
Hahaha so funny
Funny seeing you here Vinny 😂
@@NOTANOTHERCOOKINGSHOW Why not? Vincenzo is the savior of Italian culinary traditions. He’s much better than either Elizabeth Minchilli or that mess, The Pasta Queen, are. In fact, Matteo is also better than both of them. And let’s not forget those tragic interlopers, Pasta Grammar, who look like they’re in it for a free meal.
Vincenzo has real respect for Italian food. So does Matteo.
@@lizbay6625 I agree with everything you write. Vincenzo is the king. The Pasta Queen is an embarrassment. She dresses like a streetwalker. Minchilli’s blog is filled with spelling and grammatical errors. I don’t even read it any more. She repeats a lot of information. And the way she’s trying to make her not-too-bright daughter a food star is absurd. As for Pasta Grammar, they look desperate to figure out a thematic hook. The woman looks old enough to be the guy’s mother.
Roman guy here. I think one of the reasons why Fettucine Alfredo never became popular around here could be the fact we do eat that kind of dish, but we just call it "pasta burro e parmigiano" (pasta - any kind, usually penne or rigatoni - with butter and parmesan), that is the typical thing you make when you're fridge is empty. Or when you're 12, you're parents left you home alone and you think about the easiest thing possible haha
@@WinstonSmithGPT haha wonderful
So, what I read, is that Romans have their own Mac and Cheese variant x) (ni judgement, we also have here in Wallis Switzerland where we use just raclette cheese melted in the pasta and it's also the "don't have anything in the pantry/home alone and lazy" x) I don't think you can make a lazier variant than ours, tho)
@@NWolfsson I don't fully agree with your "variant" definition, but yeah, you can call it like that. If you get the same ingredients in different dishes, doesn't mean they're all variants. It really depends on too many things (cooking method, the state of the ingredient, etc.). In "pasta burro e parmigiano" the parmesan is grated on top, it's not melted, so it does taste different, it's not just the look. But I get you can think of it just as an italian over-categorization haha
@@AmicoCinghiale It was more meant as a tongue-in-cheek observation, sorry I wasn't too clear about that x)
Ciao Cinghià pure io so romano de Roma!
I absolutely love that you turned the joke controversy into a teaching moment-so interesting! ❤️
Really here for the sexual tension between Matteo and this adorable scion of the OG Alfredo.
Is Tommaso, you know?
@@lizbay6625 God, we can only hope.
👍🏼💓
What an absolutely adorable young man!
Y’all are weird
The tomasso guy is cute asffff and he was passionate abt explaining the whole thing too lmao i love him
I'm now craving for some Tommaso, I mean Fettuccine Alfredo.
Yeeessss! Forget the cheese pasta! I'm going to Italy for Tomaso! 😍
I thought I was the only one picturing his legs behind his ears…
@@peryole I think he Tops.... 😜
There’s serious irony to you wearing a NASCAR shirt while doing this. 😂
He had to bring some of America with him!
Tommaso is GORGEOUS.
That’s what I was thinking 🙌🏼
This is hall of fame video making on every level. Tommaso is wonderful. Your appreciation and respect for him, Matteo, is written all over your wonderfully expressive face. Bravo to all involved.
i too would “appreciate” and “respect” the fuck out of tommaso

I came hungry for fettuccine Alfredo, I left hungry for Tomasso
That *GASP* when he said KETCHUP.
The gay gasp...
Its so beautiful how they honoured you by insisting you eat the dish with the golden untentils. That was such an amazing moment. I wish I could visit Italy but I don't think I will ever be able to travel.
Holy crap that guy giving you the fettuccine lesson was so hot.
😩
the gold spoon and fork!! amazing
"Please stop with this. I beg you!"
When Tomasso talked about the ketchup, my face was the exact same as Matteo's and his friend's
I come from a family that puts ketchup on _everything_ and even *I* was shocked when he said it! The audacity! The nerve!
I am lactose and I'm telling you, I'd risk my ass and toilet just to have some of that Fettuccine Alfredo
In truth, you could switch out the cow’s milk Parmigiano for the sheep’s milk Pecorino Romano. It would still be cheese and butter, and the creaminess would still be present. Also, true Italian parmigiano, the 24 or 36-month kind, would have much less lactose because it’s a hard cheese. Hard, aged cheeses like Swiss, parmesan, and cheddars are lower in lactose. Sheep and goat milk cheeses are a completely different kind of cheese and you should be able to eat them.
This might be criminal but u can swap the lactose here. butter with vegan butter/margarine and the parmigiano with pecorino. Though you must know the flavor profile will be different and quite noticeable as margarine is usually very sweet and has distinct aroma. But you combined it with pecorino anyway which is a whole different world than parmigiano
Aged cheeses have very little lactose
Take an enzyme pill and go nuts!
💪
Tommaso is so handsome that I couldn't believe he's just a random guy in Rome.
Loving these Italian food videos Matteo!
Thank you!!
I am loving these cooking / Italian videos! I am from Peoria IL! My Grandma was made in Italy and born in America! My grandmother loved Fettuccine Alfredo and Fettuccine Alberto!
I love how Matteo goes into Italian mode, and even his gestures change. "Prince" Tomaso is an absolute fox. And how wonderful, those gold utensils (probably real gold) from Douglas Fairbanks!
You’re using « fox » wrong I think …
@@gabrielleroux2333 No, a Fox can be a cute sexy young guy who is not butch, or worked out, enough to be a "hunk." Mateo's actor friend is a hunk!
@@brucetidwell7715 for most people “fox” imply older …. But yes he’s a fuckin hunk :p
The gay gasp at 6:55 I felt in my soul. Ketchup?! I agree, GTFO. I'm surprised he wasn't shot. This was such a love letter to pasta and Roman culture. I learned AND I laughed. And I wanna go to Italy REALLY! A LOT! RIGHT NOW. Thanks for another one! 💗✨
lmao
On the plus side, now I know how to get out of paying the bill.
When he got the golden utensils 🥹
I love the diplomacy of "it's associated with the Olive Garden" translation "it's inauthentic tasteless trash!!!"
Im so hungry for that pasta and the way they schmeared the butter is key. Matteo love your food videos!!!!
Love it!
We gotta cook together
I keep getting distracted by the gun show... dammit!!
Quite possibly the most delicious way to be proven wrong!
Thank you so much for this video! I went last week and can’t way too go back today! It’s amazing!
Outstanding. Very relaxed and informative. The videography is excellent.
Ok tomato is gorgeous. He Is worth a trip to Rome.
Tomato 💀
More food videos! This was wonderful!
A beautifully photographed and edited video. So much wonderful information.
"May I have ketchup, please?" *shocked in Italian*
This reminds me a lot of American vs authentic Carbonara. Non-authentic Italian recipes tend to cheat and add cream bc it takes more skill to get the fat (butter, cheese, egg yok, whatever) to emulsify with the pasta water and create the proper creamy texture like in real pasta dishes.
It’s really not that hard to get the emulsion right, I think ppl are intimated by it for no reason
Prince Fettucceni is incredibly beautiful 👀
Loved this video. So cool learning the history
Aaahh! Matteo this is brilliant. Loved getting to see the real thing and know that it isn’t anything like the American version. To say nothing of the handsome Prince of Alfredo’s! *swoons And the sketch of (Maria?) at the end?? *chef’s kiss
What a fabulous story behind this dish! Thx for sharing
What a great video! I loved hearing the stories of its creation!
The dale Jr shirt really ties this video up in a nice bow
Love this surprisingly wholesome content!
Its the dale shirt that really brings the whole video together
Heard that on the podcast. I enjoyed this video so much!
It’s clear that the secret hero in this dish is the pasta water, which helps make it so creamy.
You have the best videos. 🥰
Love this restaurant and looking forward to going back in October when we visit. Great video!
I want to see Tomaso more. A LOT more.
They really do speak with their hands. Haha.
Wonderful video!!
I was so delighted to see your cooking videos after finding your comedy! Do I worked at EPCOT in “Italy” and was told that Alfredo’s there was condoned, blessed by the original Alfredo. Could have been a rumor. I love that it’s only butter, Parmesan’s reggiano and technique!
Matteo giving Itallian Joe Dirt in this shirt. Lol
Love it! Werkin the Gold fork and spoon, new Grindr profile pice? 😭❤️🔥
Hahahah yes
I love everything about this video right down to the sleeveless Dale Earnhardt Jr. tshirt.
That pasta made me go full johnny bravo "oh mama"
Lmfaoooo Matteo gestures even more around actual Italians
The ketchup reaction… 🤣🤣🤣
So funny! Now we all know the authentic way to make it, how great!
My favorite video on UA-cam, I watch it over and over again. Unfortunately, until I can get to Rome, I’ll be stuck with Fettuccine Alfredo at fukkin Olive Garden until I can get the authentic Alfredo.
Or ... Make it at home? Seriously it is sooo simple.
There used to be a restaurant in Toronto on Yonge Street across from the Eaton Centre called Pastaficcio's. They were famous in the late 70's and early 80's, at least in Toronto. I had my first alfredo there and loved it. I believe it had ham in it.
Purists serve a purpose, and that is ultimately to free the rest of us to enjoy food of our own choosing.
What an eye-opener!...
You are awesome!
Is the staff ready for a significant surge in gay customers this summer?
And, is Tommaso a member of the club?
@@kadenduiffard2388 I hope so.
Matteo, Love all your 😋 Pasta vids & your hilarious comedy full vids*, (*which makes me keep using your UA-cam shorts for my a.m BOOST😆😂🤩 when I'm getting ready for my day!). U are such a JOY to watch and listen to. U crack me up! I have a Playlist of you for my commute since I know them by heart, I'm not tempted to look away from the road! Well... I do sneak a peek @ your sassy cuteness @ traffic lights, I'm human!
Ps plz never stop singing 🎶 TYFBAF, EVERY TIME u use your Golden Girls mug to shop pasta water😘🤗💛
Ok. Please do more Italian food videos. I adore pasta but now I must also venture out into the world to try authentic Alfredo’s!! 😮💨🤤
Dawg butter and parmigiano is all I need in my life
That is so magnificent and funny. Truly dolce vida! Grazie
I love the Dale, Jr. shirt. 😆
I think a Cacio e Pepe and Alfredo mashup would be a synthesis that is better than its two parts.
So great! Now I need to find this in San Francisco!
Fabulous!
It doesn't get more real than that! Wow!
Can’t wait to go!
Italians are the best. “Stop with the shrimps and chicken”
Wow! I could listen to him talk about pasta all day. (I rarely eat carbs.) 😍
The Olive Garden association is either based on ignorance, or lies. I’ve eaten the dish in the US way before I even heard about the Olive Garden. I remember going to the Olive Garden and saying, “Oh, they have Fettuccini Alfredo?”
I like the simplicity of south Italian dished and the high quality of the ingrediences at the same time.
This combination is unbeatable.
But, to be honest I myself would try to slightly combine some parsley, ham or roasted walnut just to get a little optical kick and crunch in it.
Arms!! 🤩
I feel exactly the same way about Olive Garden.
I love it! Can’t eat it just to many Carbs…. Maybe my Christmas gift to myself a plate of this🙌
mi piace che francesco ha tipo sta faccia preoccupata per tutto il tempo poverino ahahahaha
Grande Francesco
Buooooniiiiiii! Sto modo elegante di prepararli…da adottare 😻
Being the entire time in front of a picture of "Max Mariola" is an experience in and of itself.
So cute. Here on the West Coast, we don't hear Italian accents! And the one guy looks so American, that I would never guess that he was Italian.
Oh shit! The Prince of Alfredo!
The accent is so gorgeous
You are so cute! I love your comedy! Started following you today. Saw you first with Chealsey Handler on Jimmy Kimmel!🥰😍🤩🤪😘
So interesting about the Mary Pickford, Douglas Fairbanks connection. By the way, it looked delicious. When I see Olive Garden commercials, I think of skim milk and cornstarch.
… so this is one time, Matteo, that one can eat one’s words … and enjoy eating..🤣🥰
Damn I'm literally trying to make this , looks so good. The Rome guy too❤
Well, for sure you found the perfect guide in Rome, Mr. De Carlo (ciao Francé!). I have been at Alfredo's in Rome but chose to try out the classic carbonara instead. The Fettuccine Alfredo are very choreographic, but as an Italian, I find this dish too simple. That's the typical dish we would prepare at home when there's nothing more than cheese (Parmigiano, which you will find in every Italian home) and butter in the refrigerator, so... Yeah, that's the reason why Fettuccine Alfredo never became so popular amongst the Italians, I guess. Way too simple.
KISS
Fettuccine Alfredo: it's real, and it's spectacular.
The More you Know!
🤣🤣🤣 I love this!
that's what a portion should be, dear american
I would love to try authentic Fettuccine Alfredo. I always loved "American Fettuccine Alfredo" but as with everything you know that traditional is typically better. When they brought that plate out to Matteo I literally gasped. It was beautiful and so very simple.
Wow wow wow you got to use the real utensils from Mary Pickford and Douglas Fairbanks??!! What a treat!!!
I will never make Fettuccine Alfredo with cream again. That looked delicious 😊
Good for you, it’s worth leaving it out.
Why not, if you enjoy that? Both can have a place if you want them to.
