Used this method tonight (with a very slight variation for the sauce) - best pork chop I've ever cooked or eaten. My husband didn't even take a breath between bites lol. Ty for cooking lesson :).

Just made a variation of this recipe and it was delicious, I took the pork just over 140 so it rested out to about 145 - 150. I was worried I wouldn't like the mustard sauce very much and even though I forgot the butter at the end, it came out fantastic.
A thick beautiful bone in pork chop just happened to be sitting in my refrigerator. BBQ? Reverse sear? Bake? I ran across this recipe and pulled out the ingredients and the trusty cast iron. Absolutely delicious. This turned a tasty pork chop and transformed it to a wonderful meal. Awesome. Thanks

I just wish I would have had this for his sister my aunt I took care of for 13 years she loved your show and personality. Being a person with a TBI it makes it all the more rewarding when there cooked so well. I wish I had a 10th of your talent that would be cool to cook like your shows and you do.
I came here to find out how to pan-fry these pork chops (never eat pork chops) that I bought for dinner tonight - no way this is what will become of them. I should probably just order a pizza... This looks AMAZING!
Personally i would add a small splash of applecidervinegar to the sauce. Cream sauces needs some acidity to make it less heavy. For those who don't have calvados, you can use cognac or whiskey(if it's flavor isn't smokey). You won't get the apple flavor, but it's still very nice. For those who don't wanna use alcohol at all. Applejuice and a splash of applecidervineggar to counter the sugar in the juice will work great.

Did he ever mention the second seasoning of the pork from the beginning and was the sauce what he was talking about? Never saw him add any more spices directly to the pork.
Dang. This is delicious! My ingredients and outcome was similar as best I could with what I had on hand. Seared Pork. Beautiful. Creamed potatoes. Amazing. Cabbage. Brilliant. Apples on fire. Weeeeeeeeeeee.
no wonder my pork lacks seasoning sometimes. gotta add twice if I don't add enough first time. I feel like I add alot and I barely taste any seasoning. I like to season with salt, garlic powder and a bit of cayenne pepper. I like the heat from the cayenne pepper on winter times

Thank you for your reply, but I do not put wine or acidics in my cast iron pan. They discolor, so I wondered Gordon has some special cast iron. They look different from mine.
I put wine and alcohol in mine all the time… Never no problem… I guess if you’re putting wine in there and boiling it off alone it might be a problem but there’s all kinds of fat in the wine sauce with the pork fat, butter & cream so no problem... all I use is regular cast iron pans from Lodge, never used porcelain coated

Always use cast iron to sear meats, especially pork chops or steaks.. not only will they give you the best sear because of how well they hold heat, but they can also be thrown into the oven if you’re cooking a big piece of meat and need to finish cooking the inside after a hard sear. 😉
No... Just the regular cast iron pan you can get from Walmart… I recommend *Lodge* cast iron pans in USA -I see his brand of pan that he is using is “Boyle”... probably manufactured in the UK… But “Lodge” is the US brand

I oven cook my chops. Much easier. If you want a sauce then you can just concentrate on doing that.

It’s enameled cast iron. With this one you can put wine/acidics in. You’re right, not with regular cast iron.
