Hello Gordon, By the way, the technique of creating slices around the fat of the pork chops so that they don't curl & so that they cook evenly is exactly what I needed to see. Simply put, I've been having to use the same technique with my steaks. But now, instead of using my shears whenever and wherever I see the protein start to curl, I'll just use my chef's knife to make a series of cuts prior to cooking process! Thank you! 👍

Ribs look fantastic. And as he says, it can all be prepared beforehand, refrigerated and heated when ready. Chops don't look bad either, but I would add potatoes of some sort and maybe some apple sauce or similar to my taste.
