Almond Biscotti (Cantucci) Italy's Classic Dunking Cookie (e30)

  • Buon giorno a tutti! In this 30th episode, Nonna Mia, la nonna di tutti (everyone's grandma), solves her craving for something sweet, with her almond biscotti. These crunchy treats get their crispiness from being twice-baked, in fact, biscotti simply translated is 'bis' - twice and 'cotti' = baked. However, in Italy, this cookie is referred to as Cantucci (Toscani), as opposed to the term biscotti, which generally means cookies - in plural.
    The Recipe:
    The fun thing with biscotti, is that there are loads of different ingredients you can add to suit your preferences. Some people dip them in chocolate or add chocolate into the dough itself. Others add dried fruit or vary the type of nuts. Anise is another commonly used and delicious flavour. Your options are endless, so feel free to be creative. This version is a classic almond biscotti.
    First, Nonna roasts up 2 cups of almonds at about 325 for approximately 12-15 min. She then chops up half and leaves the rest whole. Nonna uses almonds with the skin on, though some prefer blanched almonds - both are great, use whatever you prefer.
    In a bowl, Nonna mixes up the dry ingredients:
    - 4 cups of flour
    - 2 teaspoons of baking powder
    - 1 teaspoon of salt
    She used a whisk to blend it together and then sets it aside.
    Wet Ingredients:
    Then in another bowl, Nonna adds
    - 3/4 cup of olive oil
    - 1.5 cups of sugar
    - 4 eggs at room temperature
    - 4 T Amaretto Liqueur
    - 1 T vanilla extract
    Nonna creams the oil and sugar first and adds in the eggs, one at a time. Of course, you can use a mixer, but Nonna prefers the exercise of doing it by hand. She then adds in the Amaretto and vanilla.
    Slowly she incorporates the flour mixture, adding last the roasted almonds.
    She portions the dough into 4 and with a floured surface and some flour sprinkled on top, she fashions each portion into a log, placing two on each parchment covered cookie sheet.
    She then bakes the logs for 25 minutes at 350. Once cooled about 15 minutes, Nonna uses a serrated knife and slices them into about 1/2 inch thick, diagonal slices. She then returns them to the oven, at 325F for 10 min each side. If you prefer your biscotti extra crispy, you might cook them longer - it really is up to you.
    These twice-baked cookies are best enjoyed dipped into espresso or a cappuccino. Or if you prefer the traditional way, pour yourself a glass of Vin Santo - a sweet dessert wine. Enjoy!

    For a couple of months now I’ve been on the hunt for a really good biscotti recipe and I’ve found it! Texture is perfect, flavor subtle yet shows through, and recipe itself is easy to follow for any level of baker and results in a substantial amount of biscuits.     I made these yesterday and they're delicious! I've made many biscotti recipes but this one is probably the best I've made! Really nice texture. Not too hard that you'll break your teeth on and also not soft. Just a perfect delicate crunch!

    Hi Nonna, my husband and I made these twice. The dough seems very wet and drippy so we added, a lot more flour so the consistency doesn’t drip. Do you add a lot more flour as you go? Any suggestions? Other than that they are delicious!!

      @@nonnamia7890 I am so excited about seeing your S cookie recipe. The Italian bakery my parents used to go to years ago, like 50+ years make the cookies, they have the best Italian baked goods, including the sesame cookies. They are similar to a S cookie but more shaped like a football and covered in sesame seeds. The name of the bakery is Bommarito in St. Clair Shoes, Michigan, oh I just have the best memories of that place. Unfortunately it is an hour and a half away and I don’t get to that area often, I am always looking for recipes that bring back wonderful memories.       60 ml .. it’s a small cup and perhaps deceiving but yes, 4 tablespoons of Amaretto.

      Not a stupid question at all … if you use EVOO (extra virgin), yes, too strong. But regular olive oil works well. You are welcome to use butter. I just prefer to use olive oil.

    Hi Nonna - thank you for sharing your wealth of baking knowledge with us. Before watching your video, I baked two batches of cookies. After allowing them to cool for 10 minutes, I sliced them using a serrated knife but the cookies started to crumble - I placed them back in the oven for an additional 10 minutes only. Any idea why they would be so crumbly. Your video said 10 minutes each side but I only did 10 minutes. They taste fine but they look crumbly. Any suggestions or recommendations as to why you think they were crumbly? Thank you in advance - now that I found your paged I did subscribe.

      Hmmm.. I wonder if you allowed them to cool enough to cut because that can happen when they are too warm? Did they stiffen up after? Sorry for not replying sooner and thank you so much for following me! xx

    Cam you skip the Alchohol and also substitute the suger with natural sweetener?

      No problem skipping the alcohol. Unfortunately I’m not experienced with sweetener … it has a different consistency so you will need to do some trial and error.

      Buon giorno cara. I like to use both but I definitely use olive oil a lot more - it is healthier. But both are fine. Which do you prefer?

      Grazie. Sorry. It’s not clearly written. “First, Nonna roasts up 2 cups of almonds at about 325 for approximately 12-15 min. She then chops up half and leaves the rest whole. Nonna uses almonds with the skin on, though some prefer blanched almonds - both are great, use whatever you prefer.”

      They’ll definitely work out .. not to worry cara. EVOO just has a stronger flavour, especially depending on the quality of the oil.
