    My Husband's Mother made these every month for all her kids. Great recipe! I am making them for Christmas this year in her honor since she passed away this year.

    My family is from Syracuse and my aunts would always bring the dozens of Italian cookies for the cookie tray for every wedding. The bride and groom would walk around with the tray and offer cookies to each and every guest, giving the bride and groom a chance to thank each guest for coming to their wedding. We still do this!!

    joe's biscotti
    3 cups flour
    1.5 cups sugar
    pinch of salt
    1 teaspoon of vanilla extract
    1 teaspoon of almond extract
    1 teaspoon of baking power
    4 whole eggs and 1 egg yolk
    egg whites for egg wash
    2 cups of roasted whole non-salted almonds
    • put oven at 350°F
    • in a bowl, disolve sugar into beaten eggs, add extracts and mix well
    • in another bowl, add flour, salt, and baking powder
    • add wet to dry and then mix in nuts
    • turn out onto a well floured surface and shape into two long logs and brush with egg wash
    • bake for 20 - 30 minutes until the tops are brown and a little crisp
    • take out of the oven and cool for 10 minutes
    • cut into 3/4" slices and place back onto baking sheet to bake for an additional 15 minutes
    • let cool completely and sprinkle with some powdered sugar if desired
    • enjoy with a cup of coffee or tea!

    Hi Joe, I just wanted to let you know that you are making my most favorite cookie. My grandma and grandpa were born in Italy and they both passed away within two years of each other when I was around 6 years old. Knowing them was the best memories of my life. I am now 67 years old. Anyway, my grandma and I would sit down at the kitchen table and enjoy almond Biscotti and hot tea together. I have kept up with the tradition though I changed to coffee and I have never done any dipping. I never knew any of her recipes so I have to contend with store boughten Biscottis. Now, thanks to you I can make a true biscotti. Thank you for your wonderful recipes!!!

    Thanks for this! I've been searching for an authentic biscotti recipe so I can bake some for an Italian patient I have who has Alzheimer's. She talks about baking biscotti when she was a kid so I wanted to make her some.

    Thanks Joe, excellent video, my dad was very Italian and my mom she cooked Biscotti cookies with vanilla and anise extract in pure form with walnuts and that was DELICIOUS.
    I'll have to try your recipe too, I was looking online and some Italians use vanilla and clementine juice. I appreciate your video very much because it helps me to remember how my mom did it very similar. Thanks! Also, nice music!

    Hi Joe, thanks for your great recipe ! I like the fact that it has no oil or butter and use whole eggs unlike other recipes only use the whites and I have nothing to use with the yolk left over, seems like a waste to throw them away. It is also very easy with cups as measurement. I made your recipe a few times and it always turn out great so want to yell out a big thank you from the land of Downunder !

    I didn't have almond extract, so in the middle of making these, I went and got it (good thing we have a grocery store 5 mins away) and I think that it made them better. I also dipped the bottom in chocolate

    Made today and very good, but very hard and need coffee or liquor to go with them! Layered them on the bottom of a bowl with coffee and decaf and they were delicious!

    I make biscotti for Christmas. My mom never made them, but her mom made them. I had my grandma's recipe, but it was like: 2 cups flour, cup sugar, salt, eggs, vanilla. No instructions lol. She was from Sicily. I was making Giada's recipe, but tweaking it. Hers breaks apart too easy so I will try yours. Do you make struffoli? I make them every year for xmas. Thanks for the recipe!     I grew up in Brooklyn NY , And biscotti was always on the table one time or another.
    I came to California , my Grand Children are teething . My Daughter in law , is giving my grandson . This medicine , That medicine . I tell her
    " Loria , for god sakes where's the Biscotti ? " So I gotta go to the Delli , I come back , give the kid a Biscotti . OMG , Grandpa for life . I'm a subscriber now , SALUTE !!

    I was introduced to these delicious treats at work by a native San Franciscan of Italian heritage.
    He brought them in from the little corner bakery in the neighborhood that he grew up in.

    These were softer ones than the ones that are more commonly known.
    The walnut, the almond and the anise ones were absolutely DEE-licious!
    Maybe it's good fortune for my health that they retired and closed the bakery, otherwise I might be two hundred and eighty pounds instead of one hundred and eighty pounds.
    I suppose one could make the softer ones by adding more egg yolk and or shortening and butter?

    Any idea what would cause the biscotti to go completely flat? We’ve been making your recipe for years and the only thing we did different was do two loafs to a baking pan.

      Less flour sometimes large eggs need more flour than the giving recipe

      @@Ayati-ic3qd I think that's what happened with my first attempt. The tops of my two logs are all visibly bumpy because of the nuts hidden inside and the dough spread a lot. Thanks for your advice ... I will add more flour next time.

    Love that there is no oil or butter that I am seeing in other biscotti recipes. Makes it a little heathier :-) Question... can you use brown sugar instead of white?

    I followed Joe's directions and they came out really good. The only problem I had was the cooking time. Either my flour was the wrong kind making the log somehow different than Joe's, or my oven at 350 was not enough heat to do it in 20-30 min. I had to cook the logs for closer to 50 min to get them golden brown and they still were softer as opposed to crispy. I sliced them and returned them to the oven for another 20 min and then flipped the slices and baked them for 10 more min. The only other factor is I am using the "Copper Pan" that we see on TV all the time now. Maybe that somehow changed the process. Regardless, by carefully watching them during log process and carefully watching them again through the slice process, I achieved the expected results . . . just took me more time. Thanks Joe!

    I love biscottis. We buy them at the bakery section at our local supermarket, which are better than the boxed biscottis. But no matter, I love them! They seem simple to make. Thank you for your tutorial!💕💕💕

    Loved this recipe, I made them and all my family loved it. Only one thing I've noticed, when dip it in coffee it becomes very soft! Any ideas why?!

    HI JOe and merry XMass..... company here had some....and liked them.... Joe I used to go almost every weekend to a place in Santa Fe to a place called Borders which was a book store and pastry and breakfast joint inside... customers used to go in and relax and take their news papers , computers or read books... and music would be played lightly over the system.... It was a great place.... unfortunate they closed down several years back and there are no more places in SF like that... I sure wish that I had a way of opening up an Italian pastry shop with coffee served and various books to read and internet Wifi... but one would have to make overhead in SF ...to pay employees and rental and what not...
    I've seen to many establishments come and go for 20 years in SF. I used to drive Taxi, then Propane , Gasoline quarter state, then last Concrete..

    Hi Joe. I always crack my eggs separately too for the same reason, and I also mix my eggs up first in any recipe I'm using: makes sense to me. I found the music distracting because I'm trying to listen to you. Had to laugh seeing you mix the dough by hand only because its hard work. If it was hard for you, its going to be harder for women, especially me as I'm a senior now and I don't mean senior as in high school. Love my Kitchen Aid, though I think I'd prefer a Bosch stand mixer from what I have recently researched. Yes sir, if the mixture smells great and the dough tastes great, then you know your biscotti is going to be delicious! I like to break my biscotti ends over ice cream! I make mine slightly differently, but there is more than one way to make or do anything. Enjoyed the video!

    Hi Joe. I did the recipe as stated on the website, but the loaves didn't flatten out much and the top split open. I used 4 eggs plus the extra yoke. I guess too dry. Any suggestions?
