Thank you for this delicious recipe and wonderful video Nonna Mia! I made these yesterday, first time ever trying to make cannoli from scratch and they came out great! The only thing I kind of had to guess at was the temperature of the oil (I didn't see it in mentioned in your video or the comments). I tried 350-360 and it worked for me. I miss my Nonna but love your videos!

Thank you so much. To be honest, I have never done that, but when I googled, I got this: Simple plain white grape juice also works as a Marsala Wine substitute. However, the best non-alcoholic Masala wine substitute is a combination of ¼ cup white grape juice, 2 tablespoons of sherry vinegar, and 1 tablespoon of vanilla extract.
This reminds me of being in the kitchen with my grandma as a very little girl who I can’t see very often anymore, but she was an amazing chef for many years. The resemblance is so similar 😭 looks so delicious too

Grazie Mille. And thanks bunches for writing me. I use bamboo. We cut them but we recently bought stainless steel ones online. I prefer bamboo but the stainless steel work great. I make my own ricotta. I hv a video for that. It’s sooo easy and makes your cannoli even better!! 😍

Thank you bella - you're sweet! Lard is the most traditional, yes. I'm unfamiliar with vinegar? But I am thinking the Marsala (a fortified wine) may act in a somewhat similar fashion, but with a lovely flavour. xox
Buon giorno e mille grazie! I use bamboo, but you can buy them on line, in stainless steel - I just like the old-fashioned way. We made our own - just cut the bamboo 4 to 5 inches long and the tubes are about 3/4 of an inch in diameter. I hope you enjoy making them and especially EATING them. If you can, make your own ricotta - it is so easy and you can control the firmness more. Most of all, I find it tastes more delicious. A presto!! xx

Hi bella .. grazie! The molds my husband cut from bamboo many, many years ago, but you can buy stainless steel ones on the internet. My daughter did - but I prefer my bamboo ones. I think the wood of my board is plywood (fir). I'm not sure about the pin. My husband has Alzheimer's unfortunately, and is unable to speak now.

Loved your video. What can we use instead of Marsala also it has to be something none alcoholic.
Thank you so much. To be honest, I have never done that, but when I googled, I got this: Simple plain white grape juice also works as a Marsala Wine substitute. However, the best non-alcoholic Masala wine substitute is a combination of ¼ cup white grape juice, 2 tablespoons of sherry vinegar, and 1 tablespoon of vanilla extract.
This reminds me of being in the kitchen with my grandma as a very little girl who I can’t see very often anymore, but she was an amazing chef for many years. The resemblance is so similar 😭 looks so delicious too

I have cut dried bamboo to make the cannoli shells. Can you tell me if they are ready to use or if I need to do something to it first like fry them alone or boil them in water maybe ?

Sorry Cara. I’m not sure I understand. When you rolled your dough - it was lumpy? That’s unusual. But when you fry them they become bubbly.

Grazie Mille. And thanks bunches for writing me. I use bamboo. We cut them but we recently bought stainless steel ones online. I prefer bamboo but the stainless steel work great. I make my own ricotta. I hv a video for that. It’s sooo easy and makes your cannoli even better!! 😍

Thank you bella - you're sweet! Lard is the most traditional, yes. I'm unfamiliar with vinegar? But I am thinking the Marsala (a fortified wine) may act in a somewhat similar fashion, but with a lovely flavour. xox

Buon giorno e mille grazie! I use bamboo, but you can buy them on line, in stainless steel - I just like the old-fashioned way. We made our own - just cut the bamboo 4 to 5 inches long and the tubes are about 3/4 of an inch in diameter. I hope you enjoy making them and especially EATING them. If you can, make your own ricotta - it is so easy and you can control the firmness more. Most of all, I find it tastes more delicious. A presto!! xx

Hi bella .. grazie! The molds my husband cut from bamboo many, many years ago, but you can buy stainless steel ones on the internet. My daughter did - but I prefer my bamboo ones. I think the wood of my board is plywood (fir). I'm not sure about the pin. My husband has Alzheimer's unfortunately, and is unable to speak now.
